Place all ingredients into an Instant Pot in the order listed, EXCEPT for the butter, cream and 1 teaspoon of the garam masala, mixing the sauce well before you place the chicken on top of the sauce. If it's frozen, push it into the sauce a bit so it defrosts better

Close the cooker and set for 10 mins on high, and let it release pressure naturally for 10 minutes. After that, release all remaining pressure.&nbsp;

Open up the pot and remove the chicken carefully and set aside

Blend together all the ingredients, preferably using an immersion blender

Add the cut up butter, cream, cilantro, and garam masala and stir until well incorporated.

It's best to let the sauce cool just a little before adding the butter and the cream. Adding it into the boiling sauce will make your sauce very thin. If that happens, just put it in the fridge for a little and let it thicken up. It should be thick enough to coat the back of a spoon

Take out half the sauce and freeze for later or store in the fridge for 2-3 days

Add the chicken back in and heat through. Break it up into smaller pieces if you need but don't shred it.

Serve over rice, or zucchini noodles

Instant Pot instructions

Use leftover cooked chicken and mix in with the gently heated sauce, let it simmer for a few for the flavors to meld together and there you go. Add some fresh cilantro on top.

You could also use this for Paneer Makhani. Defrost a cup of peas and 1 cup of paneer and mix gently into the heated sauce and let it simmer for a few for the flavors to meld together and there you go.

Do you ever buy veggies pre-chopped and sliced (like sliced mushrooms)?

Good concept bad execution. Pan sear your chicken 5 min per side in olive oil. Bacon grease doesn't matter. Transfer to glass 9x13 (skin side up) and bake for 15-20 minutes basting with butter and juices every 5 min. Dont cook your crispy chicken in the sauce! It makes your crispy skin a flappy nasty pile of whatever and restricts your ability to deal with the all important sauce in the pan... Pre-chop your bacon and sautee til not quite crisp. Add onion. Cook 4-5 min. Add mushrooms. Cook 2-3 min. Add garlic. Cook 1 min. Dont add all sauce ingredients at once!!!!! This results in potential clumping etc. Just dont. Deglaze the pan with white whine (1/4 cup). Cook an additional minute. I skip the broth, double the cream. Add the cream and let it come up to heat slowly so you dont burn it. Low to low-medium heat. When it is lightly bubbling, add cheese in slowly stirring constantly and seasoning to taste. I generally add a bit of chopped spinach to a sauce like this for variety. Take of heat and throw in 2 Tbsp unsalted butter. Let it melt in off heat to provide a little extra richness. Extra keto friendly.

I made this tonite for supper. I cooked the chicken longer(20 min per side) before adding the liquid. I didn’t add the lemon juice. My husband LOVED IT !He’s still talking about it 3 hours later. Definitely will be making again ! Thanks for the recipe. It is a keeper. 👍

I don’t actually follow a Keto diet, but this recipe caught my eye because I love bacon, garlic, and chicken thighs! Try making the recipe as written, the flavor profile is delightful! And it’s a fairly easy recipe, so even if you are a beginner or novice cook, this will surely knock the socks off of your dinner guests, and will impress! I’ve made it quite a few times now, sometimes subbing French shallots for the red onion, sometimes using leg quarters. I do like to serve on a bed of spinach or kale. Occasionally over a risotto. Presentation is amazing if you get a good sear on your chicken skins! And since I’m not Keto, I often add a chunk of crusty bread to soak up that delicious sauce! So good! It was great, I would recommend cooking the chicken longer than it calls for.

Made this for my fire station (there are 12 of us so I did it in two large cast iron skillets) and it was a hit. For the non-keto guys I served egg noodles to go under.

I thought it was great!  I added a little Worcester sauce and omitted the bacon. I’d probably seat the chicken a bit more. Served over riced cauliflower and it was delectable!

I followed this, just doubling.  Added the garlic that is not in the recipe.  It was ok.  Certainly not worth the added effort over putting chicken in the slow cooker or in the oven and baking.  I was very disappointed.  Yes we ate it, but will not make it again.

Saute bacon

Bring Instant pot to SAUTE mode. When it turns hot, add chopped bacon. Cook bacon until crisp and brown. 

Remove bacon and any extra fat. 

Add Chicken and cook

Add chicken, chicken stock, ranch seasoning, garlic, and Sriracha(if using).

Set IP to MANUAL mode. Set time to 7 minutes. It will cook on high. Then do natural pressure release for 10 minutes followed by a quick release. The time depends on the size of the chicken and if it&#039;s frozen. For frozen chicken refer to the Notes.

Shred chicken

Once the pressure is completely released,&nbsp;take out the chicken breast. Using two forks shred&nbsp;it.&nbsp;

If you feel the amount of liquid is more, then reserve 1/2 cup of liquid from the pot and keep aside.&nbsp;&nbsp;

Saute and mix cheese

Switch IP to SAUTE mode again. Stir in cream cheese, cheddar until mixed well. 

Mix shredded chicken

Add shredded chicken back to the pot. Mix well. If the chicken looks too dry, then add back the reserved liquid in the previous step as required.&nbsp;

Switch off the IP. 

Garnish

Top crack chicken with crispy bacon and green onion while serving.&nbsp;

Heat a large skillet over medium heat. Add one tablespoon of avocado oil. Cook the onion and celery until edges are slightly soft and the vegetables are starting to soften. Stir in thyme.

Transfer onion mixture to the crockpot. Set skillet aside to use for the chicken.

Add the glucomannan, sea salt, and black pepper to a large plastic bag (or a large bowl). Mix together well.

Place the chicken breasts in the bag and close it tightly. Shake chicken to coat with the mixture. If using a bowl, use your hands to coat the breasts.

Heat one tablespoon of the avocado oil in a large skillet over medium heat. In batches, brown the chicken breasts, making sure they do not touch. Do not cook the chicken breast through through the center.

Transfer the chicken breasts to the crockpot.

Add red wine vinegar to the pan. Stir, scraping up bits on the bottom of the pan. When vinegar has thickened, add the chicken stock and continue to scrape up browned bits. Bring mixture to a simmer, then pour into the crockpot over chicken breasts.

Cover the crockpot and cook mixture 4-6 hours on high, or 6-8 hours on low. Serve with sauce spooned over or shred chicken and use in other recipes.
