(40 Second!) Ultra Easy Keto Crackers

35 g salted grass-fed butter

almond flour

xanthan gum

baking powder

salt

egg (i.e. 1 1/2 tablespoons)

TJ's Everything But The Bagel Seasoning (to taste)

Melt butter in a small (microwave safe!) bowl until just melted, but not piping hot. Set aside to cool while you mix the flours.&nbsp;

Add the almond flour, xanthan gum, baking powder and salt to a medium bowl and whisk thoroughly. Pour in the butter and mix until evenly distributed (I just use my hands!). Add in your lightly whisked egg (1/2 egg is roughly 1 1/2 tablespoons or 25g) and continue to knead until it forms into a ball. Cover in cling film and place in the freezer for 5 minutes to solidify the butter.&nbsp;

Roll out the dough between two sheets of parchment paper, sprinkle seasoning and lightly roll again to press it in. Trim to desired cracker size and separate gently. The dough is fragile, so I separate the pieces by running a knife underneath.&nbsp;

For medium crackers, cook on high in the parchment paper for 20 seconds, open the microwave and cook for another 15-20 seconds. The crackers will continue to crisp up as they cool, but I suggest you do a trial with a couple to nail down your time!&nbsp;

Note: cooking times can vary a lot depending on your cracker size and microwave, and I found they cook more evenly in batches of 4-6 (as opposed to the whole batch!) and in two bursts. My microwave is 1000 watts. Also be sure to cook your dough right away, as leaving it in the fridge overnight makes the almond flour harder to crisp up (as it has absorbed the liquid and essentially 'blanched').&nbsp;

Note 2: these can be baked too! Just do 8-12 minutes in your oven at 350F/180C until lightly golden (will depend on size and thickness). And to make them extra crisp, feel free to do a double bake biscotti-style (i.e. let them cool, and bake them again for 5 minutes).

These super easy crackers are made with just almond flour and an egg. They are low carb, keto, gluten free and dairy free.

2 Ingredient Almond Crackers

sea salt (optional)

Preheat oven to 350°F. Line two baking sheets with parchment paper.

In a food processor, add almond flour and egg. Mix until egg is completely blended into the almond flour and a dough forms.

Roll out dough between two sheets of parchment paper until dough is 1/16 inches thin.

Cut dough into cracker shapes. I made them 1 1/4 inch squares but you can make rectangles, other shapes and bigger or smaller. Use a chopstick to poke holes into each cracker.

Place crackers onto prepared baking sheets. If using, sprinkle tops of each cracker with sea salt. Bake crackers about 10 minutes or until edges turn golden brown. During the last few minutes of baking, watch the crackers carefully. They can turn dark brown and overbake quickly.

Pour yourself a glass of wine, grab a block of cheese, and bake yourself these keto crackers. They&#039;re salty, crispy, and crunchy.

Low Carb Keto Crackers

Tablespoon Unsalted Butter (melted)

Cup Almond Flour

Teaspoon Kosher Salt

Teaspoon Black Pepper

Teaspoon Xanthan Gum

Everything But the Bagel Seasoning

Herbs (such as garlic powder, rosemary, thyme, onion powder, oregano)

Combine. Melt unsalted butter (2 tablespoons) in a large heat-safe bowl. Stir in almond flour (1 1/2 cup), salt (1/2 teaspoon), black pepper (1/4 teaspoon), xanthan gum (1/2 teaspoon) and water (1/4 cup), and knead until fully combined.

Keto Crackers - Step 1

Keto Crackers - Step 2

Microwave on high for 60 seconds. Flip the crackers and break them apart. Return crackers to the microwave, and microwave on high for 20-second intervals, until you reach your desired crispiness.

Keto Crackers - Step 3

Microwave Method (Crispiest+ Easier):

Prep. Preheat oven to 350 F.

Eveything But The Bagel Seasoning

Cool Ranch: Salt, garlic powder, onion chives

Lemon Dill: Salt, ground california lemon peel, dill weed

Add the almond flour and cheese to your food processor.

Add the water one teaspoon at a time until small balls/clumps of dough start to form in the processor.

Now transfer the clumps of dough to a bowl, and use your hands to form a ball of dough out of them.

Next, you'll want to use a rolling pin and roll out 1/2 of the dough at a time BETWEEN 2 SHEETS OF PARCHMENT PAPER.

Once the dough JUST STARTS TO LOOK TRANSLUCENT that's when you know you've rolled it out enough.

Now use a pizza cutter to cut the dough vertically and horizontally to form the crackers.

Once the crackers are shaped, use a toothpick to form a hole in the center of each cracker.

Use a pair of kitchen scissors to cut away the extra parchment paper from the dough, and then transfer the dough to a plate.

Microwave the crackers in 2, one minute intervals...off-set the plate on the left side for the first interval, and then off-set it on the right side for the second one.

***NOTE*** Microwave times will vary depending on the power of your microwave. My Microwave is 1100 Watts and this is the perfect cook-time for me.

Let the crackers cool for atleast 5-10 minutes after they're done cooking.

They will be soft when the come out of the microwave, but once they have time to cool they crisp up.

Once they do crisp up, you'll want to break them apart into individual crackers, coat them with baking spray, and then add the seasonings of your choice to them.

I made them! They look exactly like yours. So so so delicious! Dipped them in labne drizzled in olive oil and dry mint. I was really surprised with the outcome. They also kept their crunchiness the next day. Will make again for sure! Will try with cream cheese and smoked salmon next time I make them (which most likely will be today).

Why can’t you add the toppings before you cook them so they are baked in?

I got a tortilla press for your tortilla recipe. Is that good to press the cracker dough out? I imagine I’d need to roll anyway after to get it thin enough.

I just did it in the oven. Worked perfectly! I did them for around 8 minutes at 180C. So good!

Awesome crackers! I made these for Thanksgiving and after a few days they became moist, but I put them in the oven on a rack over a cookie sheet at 175 degrees and in a few hours they crisped back up and were just as fresh as the first day I made them. I also made them a lot bigger to eat with cheese and they held up well. Best recipe!

These turned out great.  

I kept these in a jar with lid on tight and they were crisp for over a week.

Just made them! Easy peasy! Had to use a wine bottle to roll them out, hehe. Maybe next Christmas I'll ask for a rolling pin. I did everything bagel seasoning - sprinkled on the uncooked, rolled out and cut dough, pressed it in with the parchment paper. Worked well. :D

Last time that I was on keto, I needed these. I can't believe how good and easy these are.YAY!!!

I just made these.  Divided the 'dough' into 3 lots.  Just before cutting and baking them, I added:
Lot 1:  garlic powder and dill
Lot 2:  onion powder and parsley
Lot 3:  Everything but the bagel seasoning

Then I cut them with a pizza cutter, put the little holes in with a toothpick, and baked.  My microwave was 1000W so I did 65 seconds x2.  Turned out great!  I'll be making these again, and again, and again!!  Thanks for posting!

How long Can you store the dough before actually making the crackers?

This is a game changer!! I added cracked black pepper in half the batch before rolling out and it was ah-meh-zing!  Onion powder &amp; chopped rosemary in other. Thank goodness it is not as salty as Cheez-itz and I am super satisfied. Thank you!!

I LOVE THESE CRACKERS and I have to share a version I made today.

1/2 cup almond flour
1/2 cup sharp cheddar shreds
1/2 teaspoon salt
2 tablespoons hot salsa
1 tablespoon pickled jalapeños (jar)*
1 tablespoon pickled jalapeños, vinegar juice*

1. Put everything food processor. 
2. Place a parchment round on a tortilla press.  Scoop 1/4 of the batter on to a parchment round, top with another parchment round and and squish it flat. 
3. Carefully, peel off top parchment round and gently cut into wedges with either a large knife or pizza cutter.  Place parchment round and "tortilla" on an upside down paper plate.
4. Zap 1 - 1 1/2 minutes in the microwave.  
5. Flip upside down on cooling rack, peel parchment off REPEAT.

This makes 4 tortilla sized crackers.

*I add more liquid because I like them thin and crispy.

Delicious!!! Just one problem...after microwaving t he centers were overdone and slightly brown. What did I do wrong?

Easy and fast to made. Second time I made these, this time I add granulated garlic, dry parsley and salt to the dry ingredients. They came perfect. This is a winner. Love your ideas.

I made this recipe a week ago and then again this week.  I added Hidden Valley Ranch dry seasoning to the dough before it was cooked in the microwave and it turned out great.  I quadrupled the recipe to have more on hand and put them in the fridge.  I also tried a cinnamon and sugar version but with the parmesan cheese added they did not turn out very good.  I've been doing Keto for a couple of years and miss the crunch of crackers.  Thanks!

These crackers are so good!!! I actually like them better than the carb ones I used to eat because I control the salt. I'm really amazed a how light and crunchy they are. Needless to say, I ate half the batch. At only 2 carbs, you can't beat that with a stick!!!

Preheat your oven to 160C/340F.

In a large mixing bowl, add the dry ingredients and mix well.

Add the wet ingredients and mix to a sticky dough.

Roll the dough out between 2 pieces of parchment paper to 5mm/0.25in thick.

Prick with a fork and use a pizza cutter to mark out your cracker squares.

Bake for 15 minutes, then carefully break along the line, and spread the crackers out so they are not touching. You may need another tray to do this.

Bake for another 10-12 minutes. Remove from the oven and leave to cool on the tray.

Once cooled, enjoy or store in an airtight jar.

Shredded parmesan and almond slices bake up for a crunchy keto snack!

(1 Cup) Almond Meal

Cup Everything Bagel Seasoning

Ingredients needed

As a first step, prepare all of the ingredients. Everything bagel seasoning can be made in your house in less than three minutes following our recipe.

Fathead Dough

We start with preparing our fathead dough. Place shredded mozzarella into the pot and start melting on medium heat until all cheese has been melted. Once you see the cheese entirely melted, switch off the stove and add almond meal as well as one egg. Using a wooden spatula, incorporate the egg and almond flour into the mozzarella cheese. Keep mixing until you get everything combined and a fathead dough starts forming.

Rolling

You can preheat the oven to 200 Celsius or 390 Fahrenheit at this step. Place the dough onto parchment paper and start rolling into a really thin sheet.

Egg Wash

Once your fathead dough is rolled out, you can start with the egg wash. Ensure all egg wash is spread on the whole sheet of rolled-out fathead dough.

Cutting

Using a pizza cutter, cut the whole sheet into your preferred shapes: squares, triangles, circles, or rectangles.

Everything Bagel Topping

The last step is sprinkling the whole sheet with everything bagel topping. Place into the oven and bake at 200 Celsius or 390 Fahrenheit for 8 to 10 minutes.

Keto Crackers

(60 grams) ground flax seeds

sesame seeds

Nonstick cooking spray

Sprinkle of coarse salt

Sprinkle of pepper

Preheat Oven

Combine Ingredients

 To a mixing bowl, add all dry ingredients excluding coarse salt and ground pepper and whisk until well combined. Add beaten egg and, using hands, knead together until all ingredients are fully incorporated.

Prepare Parchment Paper To Roll Dough: Spray two pieces of parchment paper with cooking spray. Lay one piece down, cooking spray side up, then place dough in center. Lay the other piece down, spray side down so that it touches the dough, and lightly press down so that the parchment adheres to the dough.

Roll Dough

 Using a rolling pin, roll dough until it is an even layer (the dough should be quite thin). Remove and discard the top piece of parchment paper. Carefully slide a baking sheet beneath the parchment paper with the dough on top.

Cut Dough Into Crackers

Using a pizza cutter or knife, gently cut lines through dough into your desired size of crackers (if using a knife, it seems to work best to press the knife down and bring it back up after each cut, rather than slicing straight through). Sprinkle coarse salt and pepper on top of dough.

Bake

 Bake crackers for 15-18 minutes. Remove crackers from oven and allow to cool completely before breaking apart and eating.

These are fab! I've made 3 batches already! My third batch I added some chia seeds to. I'm going to play arounf with other seeds and flavours.

Also, a huge savings. Low carb store bought crackers are SO expensive.

Great recipe! Nice crunch - a must for me - much better than other keto cracker recipes I've tried. I've made these a few times and most recently substituted dried rosemary for the herbs and also added chia, flax and poppy seeds. I also toasted the sesame seeds to get some extra crunch and flavour. In addition, I added a little bit of hemp seeds for a higher protein content.Pure yum!

I've never made crackers before and I was skeptical that I could do it!  They turned out good and you are right when you say to watch the edges.  The back corner was a little over brown, but the others were OK.  I used Italian seasoning instead of the ones listed. I will definitely do them again.  Thank you!

sunflower seeds (see note)

whole psyllium husks (or flax meal)

sea salt (to taste)

water

coconut oil (or olive oil)

Preheat oven to 350°F.

Blend together almond flour, sunflower seeds, psyllium, and sea salt in bowl or food processor. I like to process together with a food processor to finely chop sunflower seeds.

If using food processor, pulse in water and coconut oil until dough forms. If blending by hand, stir the liquid ingredients into dry ingredients to form dough.

Place dough ball on a sheet of parchment paper and press flat. Cover with another sheet of parchment paper and roll dough to about 1/8 to 1/16 inch thickness.

Put on cutting board, remove top parchment paper, and cut into 1-inch squares using a pizza cutter or knife. Sprinkle sea salt on top if desired.

Place cut dough on a baking sheet and bake in&nbsp;350°F until edges are brown and crisp (about 10-15 minutes). Allow to cool on a rack then separate into squares.

Once you see the mixture has thickened, start spreading it either on a parchment paper baking tray or a dehydrator tray. Using a silicone spatula is the best way to spread the mixture as thin as possible.
