Preheat  the  oven  to  350°F.  Lightly  grease  a  6-cup  muffin  pan  or  use  a  silicone  muffin  pan.&nbsp;&nbsp;

In  a  medium  bowl,  mix  together  the  coconut  flour,  baking  powder  and  Truvia.&nbsp; &nbsp;

Make  a  well  in  the  center.  Crack  the  eggs  into  the  well  and  beat  lightly.&nbsp; &nbsp;

Add  sour  cream  and  make  a  smooth  batter.&nbsp; &nbsp;

Gently  fold  in  blueberries.

Scoop  the  batter  into  the  prepared  muffin  cups,  filling  each  about  3/4 full.

Bake  the  muffins  for  about  20-25  minutes  until  the  tops  have  browned.    Let  them  cool  for  about  5  minutes  in  the  pan,  then  transfer  them  to  a  rack  to  cool.&nbsp;

Preheat oven to 350 degrees F (177 degrees C). Line a muffin pan with 12 parchment or silicone muffin liners.

In a large bowl, stir together the almond flour, baking powder, and sea salt.

Stir in the keto maple syrup, melted butter, eggs, and vanilla and stir until well combined. Gently fold in the strawberries.

Distribute the batter evenly among the muffin cups.

Bake for about 20-25 minutes, until top is golden and an inserted toothpick comes out clean.

Low Carb Vanilla Protein Powder

tbsp Baking Powder

Salt

erythritol (I use confectioners swerve)

butter (for dairy free use Ghee or coconut oil) (softened)

tsp vanilla extract

orange juice (about 1 medium orange)

tbsp orange zest

dark sweet cherries,

Preheat the oven to 350 degrees F and grease a 12 cavity muffin tin, or line with cupcake liners.&nbsp;

In a large bowl, combine the flour, protein powder, baking powder, salt and erythritol. Set aside.&nbsp;

In a separate bowl and using an electric hand mixer, combine the eggs, butter, vanilla orange juice and orange zest.&nbsp; &nbsp;

Slowly add the almond flour mixture in with the wet ingredients and combine until smooth and uniform.&nbsp;

Gently fold the cherries into the batter.&nbsp;

Evenly distribute the batter into the muffin tin and bake for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.&nbsp;

Keto Muffins are a great breakfast that can be made ahead, or just a quickly reheated snack. Our Low Carb Cheddar Cheese &amp; Zucchini Muffins are tasty, moist and very cheesy.

Keto Muffins - Savoury Zucchini Cheese

zucchini (grated (2 packed cups))

Butter (melted)

Pepper

oregano (finely chopped)

Cheddar Cheese (grated)

Preheat oven to 180C/355F.

In a mixing bowl, add the zucchini, butter, salt and pepper and mix well.

Add the eggs, oregano and baking powder and mix well.

Add the coconut flour and mix until the batter becomes thick.

Fold through the cheddar cheese.

Line the holes of a standard muffin tin with silicon cupcake molds and evenly divide the mixture between the holes. Overfill each hole creating little piles of soon to be muffins, the muffins don’t rise very much.

Bake for 25 minutes, until the muffins are golden.

Allow to cool for 5 minutes before enjoying.

Keto Blueberry Muffins

I was craving something different to eat this morning, so I made these. Where has this recipe been since I started keto! I wish I had lemon because I know that would have set it off,  but they still tasted awesome. Will be making these again, soon! Thanks for the recipe.

Yummo!  I did one subsitution that seemed to work well.  I didn't have any kind of milk, so I subsituted an extremely strong ginger tea in place.  I figured the liquid is what was needed.  They are fabulous!  Also, I purchased a silicone mini muffin 'tin'.  It requires no oiling or liners, just bake pop out and easy to clean!  I like the smaller size.  Since, I've been doing low carb I find a mini muffin is a great snack.  Thank you!

These muffins were tasty and delicious. I followed the recipe to the letter. I will use this recipe again.

These were really good! Definitely add the lemon zest!  I sifted all the ingredients and separated the eggs and whipped the egg whites.  I folded the egg whites in at the end with the blueberries and they rose up fluffy and beautiful!  I made a glaze of honey, cream cheese and lemon and drizzled over the top.  Excellent!

These are delicious. They do have a somewhat eggy taste but its not overpowering enough to be an issue. I added extra blueberries to get up to about a cup. This was my first time making these as I am new to the keto diet and unfortunately didn't do enough research and added splenda instead of swerve in fear of taste. I will be making them again and this time with swerve as I now know that splenda isn't keto friendly at all.

Great taste! Used lemon zest & It was lovely. The dough came out a bit crumbly for me, so I had to pack them into the muffin liners. Used 1/2 cup of swerve, but came out just a bit too sweet. Will use a heaping 1/3 cup of swerve next time. Recipe keeper for sure.

I didn't have blueberries so I just used the lemon zest with a little chocolate chips. This is absolutely delicious.

I actually tweaked a little and used coconut sugar and a half cup of whole wheat flour and added an additional third cup of plain yogurt as well as topped it with walnuts. I also noticed 23 minutes didn’t work for my oven and left another 10 it was done but I wanted the walnuts to be roasted so increased the oven temperature to 375 and in 5 minutes or so it was perfect.

This is the best Keto muffin recipe I have ever had! The lemon zest was a Welcome flavor boost and we used Lankato Monkfruit Sugar ! So yummy and fluffy!

So so good! Really satisfies my need for sweet. I substituted coconut dream milk for almond milk and it was delicious.

I was excited to make these, especially as our household is on the Keto diet. I thought they were okay had a chemical taste to it (maybe from an ingredient I used?),  but my husband loved them though. *update: it’s the next morning and these ARE yummy. I microwaved it for about 10 seconds and now I’m sure I had an odd tasting blueberry to make me feel subpar. I originally gave 2 stars, but I’m increasing it to 4! 

After the fact, I plugged it into Carb Manager and was surprised to see they were 11 net carbs EACH. That’s not very keto. So, I’m very disappointed in them. *update, I realized this was because I used Allulose (which is 5carbs p/serving - but it doesn’t have any impact on blood sugar. So, keto people are supposed to count it as carbs, but I don’t because it’s excreted in your urine and doesn’t act like a carb or sugar. So, when I removed this ingredient from Carb Manager, it brought the Net carbs down to 3, which is fantastic!
My advice, is to do your keto math FIRST. Don’t follow the information provided within the comments because your ingredients (mainly almond flour and sweetener) may be different than what someone else used - which can drastically alter your recipes net carbs.

Keto Blueberry Muffins (Gluten Free)

Oat Fiber (see notes)

heavy cream

swerve confectioners

lemon

vanilla extract

Preheat oven to 350F.  Add the flour, baking powder, oat fiber and salt to a bowl and whisk together, then set aside.

In a separate bowl, add of the wet ingredients including the swerve, and mix using a hand mixer or whisk.

Add the dry ingredients into the wet and mix just until combined. Gently fold in the blueberries, then scoop into silicone cupcake liners or paper liners.

Bake for 18-20 minutes or until a toothpick, when inserted, comes out clean. Allow to cool before serving.

Morning Glory Muffins

Swerve Sweetener

unflavoured whey protein powder ((can sub egg white protein))

coconut

walnuts

sunflower seeds

cranberries (chopped)

tbsp baking powder

butter, melted

carrots (loosely packed)

zucchini (loosely packed)

water

Preheat the oven to 350F and line 16 muffins cups with parchment or silicone liners. (If you don&#039;t have two muffin pans you may need to work in batches).

In a large bowl, whisk together the almond flour, sweetener, coconut flour, protein powder, coconut, walnuts, sunflower seeds, cranberries, baking powder, cinnamon, and salt.

Stir in the eggs, melted butter, carrots, zucchini, water, and vanilla extract until well combined.

Divide among the prepared muffins cups and bake 20 to 25 minutes, until golden brown and the tops are firm to the touch. Remove and let cool completely in the pan.

The first time I made these, I kind of gave a side eye to the ingredients because how could such a combo of ingredients be good together. But I was missing bran muffins and decided to give it a try. I was wrong; the ingredients come together to make magic! Now they are some of my favorite muffins!

In a medium bowl, whisk together the almond flour, Swerve, coconut flour, and cinnamon. Drizzle with the melted butter and stir to combine well. Set aside.

Crumb Topping:

Preheat the oven to 325F and line a standard muffin tin with parchment or silicone liners.&nbsp;

In a large bowl, whisk together the almond flour, sweetener, protein powder, coconut flour, baking powder, cinnamon and salt. Stir in the butter, eggs, almond milk and vanilla until well combined.&nbsp;

Divide the batter among the prepared muffins cups. Top each with some of the crumb topping and bake 25 to 35 minutes or until a tester inserted in the centre comes out clean.&nbsp;

Let cool completely in the pans.&nbsp;

Muffins:

Whisk together the sweetener, water, and vanilla. Add more water if the mixture is too thick. Drizzle lightly over the cooled muffins.&nbsp;

Drizzle:

The muffins were delicious!  There was too much water in the drizzle.  I added more Swerve and it was fine, but I didn’t need that much drizzle.

My grandson wanted muffins, but I didn't have time for my nut butter to come to room temp, so I made these instead. I'm so glad I did! The next time I make these I think I will double the topping to add a layer inside the muffins. I may also double the cinnamon and add some nutmeg.

They look good and will definitely try them but why are they called coffee cakes when there’s no coffee in them.

These are sooo good! I've made these twice. On the second batch, I divided the topping. Then when I filled the muffin cups, I poured the batter halfway, sprinkled half of the topping, poured the remainder of the batter, and sprinkled the rest of the topping and pressed it slightly in place. This was the way my mom used to make her sour cream coffee cake. I also added some finely chopped coconut and almonds to the topping, to give it more crunchiness. 
Didn't need the icing, although they would look prettier with it. I gave two to non-keto neighbors and they thought they were delicious. They are now considering going keto themselves!
