Soup recipes are one of my favorite recipes to make...especially low carb soup!  I give tips on thickening keto soups and stews and vegetables that are best for soup.

These are the essentials for any low carb soup!

This Mexican Spiced Instant Pot Cauliflower Soup is easy, comforting and creamy and recipe for weeknight dinners.

Mexican Spiced Instant Pot Cauliflower Soup

olive oil

onion

pepper, deseeded and finely chopped

bay leaf (optional)

garlic puree

1.5 tsp smoked paprika

cumin

Chilli

vegetable stock

Salt

Switch the Instant Pot on to the saute setting and add the oil to the Instant Pot Insert and saute the onions, peppers and bay leaf if using for 4-5 mins until the onion is soft.

Switch off the heat and stir in the garlic, paprika, cumin and chilli.

Mix in the cauliflower florets, vegetable stock and salt.

Cover your Instant Pot, set the vent to 'sealing,' select the manual or pressure cook button (dependent upon IP model), select high pressure and set the timer to 7 mins.

When done allow the pot to NPR for 15 mins before releasing the rest of the steam using quick release.

Let cool for a few mins, before removing bay leaf and pureeing with an immersion blender.

Garnish and serve.&nbsp;

Instant Pot Cauliflower Soup

Saute the onions, peppers and bay leaf in a pot over medium heat until&nbsp;onions are soft.

&nbsp;Stir in the garlic, paprika, cumin and chilli followed by the cauliflower florets, vegetable stock and salt.

&nbsp;Cover and simmer for 20 mins until the cauliflower is cooked through.Step 5. Let cool for a few mins, before removing bay leaf and pureeing with an immersion blender.

No time for cooking? Try this ridiculously easy low carb crock pot Mexican chicken soup recipe. It's made with only 4 ingredients!

Low Carb Crock Pot Chicken Soup

chicken pieces (boneless/skinless, I used thigh meat)

chunky salsa (I used Tostitos)

chicken bone broth

cheese

Place chicken pieces at the bottom of a 6 quart crock pot.

Add remaining ingredients.

Cook on high 3-4 hours or low 6-8 hours.

Remove chicken pieces and shred chicken. Return to crock.

Serve hot.

Crock Pot Mexican Chicken Low Carb Soup - Slow Cooker

Whether you eat keto or not, this zesty queso keto chicken soup is my new favorite for chilly nights. You can make it in the slow cooker or instant pot and it's creamy, slightly spicy and full of flavor.&nbsp;

Zesty Queso Keto Chicken Soup

chicken breast

taco seasoning

petite diced tomatoes (not drained)

salt

chicken broth

salsa verde or green salsa

cream cheese (softened)

avocado and monterrey jack cheese

Place chicken, taco seasoning, tomatoes with juices, salt, chicken broth, and green salsa in Instant Pot. Set to manual mode and cook for 10 minutes at high pressure. Allow pressure to release naturally (about 15 minutes), remove and shred the chicken. Set aside.&nbsp;

Stir softened cream cheese into the soup in the pot and whisk until fully melted into the soup. Return chicken to the soup and serve with diced avocado and monterrey jack cheese.

Instant Pot:

Place all ingredients in the slow cooker and cook on low for 6 hours or until the chicken is tender and shreds easily. Whisk cream cheese into the broth fully if needed after cooking time is up.&nbsp;

Slow Cooker:

This low carb chicken taco soup recipe can be made in a pressure cooker or slow cooker. The broth is bursting with flavor and makes such a tasty soup.

Low Carb Taco Soup

Tiny tasty meatballs in a chicken broth with spinach and egg drop makes this soup hearty and delicious!

Keto Italian Wedding Soup

chicken stock (see my recipe here)

cauliflower rice

beef (I use 85%)

pork

parmesan cheese (grated)

eggs

garlic

parsley (divided)

basil

almond flour

spinach leaves (roughly chopped)

carrots

Salt and pepper

Add the chicken stock to a large pot and bring to a simmer.

Add 1 egg, garlic, almond flour, basil, parsley, salt and pepper to a bowl and mix.  Add in the ground beef and pork and mix just until combined, do not over mix.  Using a small melon baller or small cookie scoop, form the mini meatballs, then drop them into the simmering stock.  

Add in the carrots and parmesan cheese rind (if you have one) simmer for 10 minutes.  Add in the cauliflower rice and spinach, then continue cooking for another 5-7 minutes.

Scramble the 2 remaining eggs and slowly add them into the soup, while stirring the soup.

Cook for a few more minutes and allow to cool slightly before serving with some grated parmesan cheese and a garnish of parsley.

This rich, thick beef stew is packed with beef and veggies making it a hearty dinner on chilly nights.

Heat a large dutch oven over medium-high heat....

Heat a large dutch oven over medium-high heat. Add the oil and heat until shimmering.

Add the beef back to the skillet along with the beef broth, tomato paste, Worcestershire sauce, and bay leaf. Bring to a boil, reduce to a simmer, and cover. Cook over low heat for 1 ½ hours or until beef is tender.

chicken thighs (boneless + skinless)

2, 8 ounce packages shirataki noodles (spaghetti shaped)

garlic (minced)

ginger

shiitake mushrooms

soy sauce

fish sauce

sriracha

baby bok choy (chopped)

green onions

Sesame seeds

cilantro (chopped)

Cook the chicken: Preheat the oven to 425 F. Toss chicken (4) with salt (1 teaspoon), pepper (1/2 teaspoon), and olive oil (1 tablespoon), until evenly coated. Place in a 9x13 baking dish and cook in preheated oven until the center reaches an internal temp of 165 F, about 35 minutes. Once cool enough to handle, slice into bite-sized pieces.

Low Carb Keto Ramen - Step 1

Soft boil the eggs. Bring a medium bowl of water to a boil. Once boiling, add the eggs (6), reduce the heat slightly, and cover with a lid. Cook this way for 6-7 minutes. Once finished cooking, place eggs in an ice bath (a large bowl of cold water and ice). Once cool enough to handle, peel and set aside, slice just before you add them to the ramen.

Keto Ramen - Step 2

Noodles. Rinse shirataki noodles (2, 8 ounce packages) thoroughly. Heat oil in a large stockpot or Dutch oven over medium heat. Add garlic (4 cloves) and ginger (1 tablespoon), and cook until fragrant, about 2 minutes. Add drained noodles and toss to coat in oil. Cook for about 5 minutes.

Keto Ramen - Step 3

Simmer. Add the chicken broth (6 cups), mushrooms (4 ounces), nori (1/4 cup), soy sauce (1/4 cup), fish sauce (1 teaspoon), sriracha (1/2 teaspoon), and bring to a boil. Once boiling, reduce to a simmer and cook until the mushrooms have softened--should be about 10 minutes. Stir in the bok choy (2) and green onions (3), and cook until the bok choy starts to wilt--about 2 minutes. Stir in sliced chicken.

This keto chicken enchilada soup is zesty, creamy, comforting, and brings way more flavor to the table than your average chicken soup recipe.
