Mashed Cauliflower is essentially a creamy cauliflower puree that makes a delicious low-carb or Keto alternative to mashed potatoes.

Steam or boil cauliflower and garlic until soft.

Drain the cauliflower, then add buttermilk, butter, salt, pepper and purée with an immersion blender. (If you don&#x27;t own a hand blender, you should consider getting one. It is one of my most used gadgets in my kitchen, you&#x27;ll wonder how you ever lived without it!) A regular blender would work fine as well.

Instant Pot Mashed Cauliflower is a delicious low-calorie and low-carb side that will substitute perfectly wherever you usually serve potatoes. They&#x27;re so good, you might just prefer them over their starchy counterparts!

Instant Pot Mashed Cauliflower

chicken broth (or vegetable broth, no sodium added)

garlic (smashed)

Parmesan cheese (freshly grated)

Greek yogurt

salt (or

Add the chicken broth and garlic to your Instant Pot. Place the trivet inside the Instant Pot and the cauliflower on top of the trivet. Place the lid on the instant pot and set the valve to seal.

Cook for 15 minutes on the Steam setting. When the timer goes off, turn the instant pot off. Quick release the pressure from the pot.

Carefully transfer the cauliflower to your food processor, break it up in pieces as necessary. Do not add the liquid. Let the cauliflower rest for 10 minutes so it cools off a bit.

Add the Parmesan cheese, yogurt, salt and pepper to the food processor and pulse until smooth or until you&#x27;ve achieved the desired consistency.

Place cauliflower in a steamer over a large pot of boiling water. Steam for 15 minutes until tender. Alternatively, boil cauliflower in salted water for 10 minutes or until fork tender. Remove and drain. Cover with a lid and set aside.

In the same pot, heat the butter over medium high heat. Sauté garlic until fragrant (about 1 minute).

Blend cauliflower and garlic in a food processor on high setting until smooth. You may need to do this in batches of two or three, depending on the size of your processor.

Transfer blended cauliflower into the pot with the garlic. Stir in the Parmesan cheese, sour cream and season with salt and pepper.

Creamy Mashed Cauliflower

kg / 2lb cauliflower florets ((Note 1))

garlic (, peeled, whole)

tbsp (30 grams) unsalted butter

(25 grams) parmesan cheese (, shredded)

(55 grams) sour cream (, optional)

- 3 tbsp cooking water

Salt and pepper (,

Melted butter, parsley, pepper

Cut the larger florets in half or quarter so they're all about the same size.

Add cauliflower and garlic into a large pot of boiling water and cook for 10 minutes until very soft.

Scoop out a mug of cooking water.

Drain well, then transfer to food processor.

Add remaining ingredients, starting with no water, blitz until smooth. (Use handheld blender stick if you don&#x27;t have food processor) 

Use reserved cooking water to adjust consistency to taste and help puree smooth.

Adjust salt and pepper to taste

Transfer to serving bowl, drizzle with melted butter and garnish with parsley if desired.

Serve as a side with anything that you'd usually serve with mashed potato!

This side dish is easy, healthy, and incredibly delicious!  Creamy cauliflower blended with zesty leeks and garlic will have you craving your veggies!

Cauliflower Leek Purée

Tbsp butter

leek (thinly sliced (at least 1 1/2 cups))

garlic (chopped)

butter

plain Greek yogurt

tsp salt

tsp pepper

Rinse off the cauliflower and dry with a paper towel.  Place cauliflower on a cutting board and remove any &quot;stems&quot; and leaves.  Place both heads of cauliflower in a large pot with enough water to cover an inch above the vegetables.  Boil on medium-high heat until cauliflower is tender, about 15 minutes.

Remove cauliflower from pot and allow to drain and cool to the touch.  Remove all white &quot;heads&quot; from the cauliflower and place them in a bowl.  Discard the stem.

While cauliflower is cooking, rinse and slice the leeks then peel and chop the garlic.  In a sauté pan over medium/high heat, melt 3 tablespoons butter.  Reduce heat to medium then add sliced leeks and chopped garlic, cooking until leeks are tender, about 10 minutes.

Using a food processor, purée cooked cauliflower and sautéd leeks and garlic in batches.  Place purée mixture in a large mixing bowl.  Add 2 tablespoons melted butter and stir until well blended.  Add the yogurt and blend until purée is creamy.  Add salt and pepper and taste for seasonings.  Top with chopped chives.

If you have an older oven it may take several minutes more. A larger than average cauliflower will also take longer. Check often if you are new to this method. A few scorched spots on the cauliflower is not a big deal.

Parmesan Mashed Cauliflower

parmesan (grated)

Fill a large sauce pan with water. Bring it to a boil over high heat.

Remove the stalks and leaves from the cauliflower heads, leaving only the florets. Put the florets into the boiling water and boil until very tender, about 15 minutes.

Drain the florets and return to the empty pan or a mixing bowl. Use a hand mixer to blend up the cauliflower until smooth. You can also use a potato masher, or a food processor.

Add in the parmesan, olive oil and mix thoroughly. Garnish with chives. Serve hot.

Various seasonings of your choice

Pile all of your cauliflower florets onto a large baking sheet and drizzle liberally with about 2 to 3 tablespoons of olive oil, flaky kosher salt, and black pepper. Don’t add any additional seasonings here because they will burn and become bitter. Wait until it’s time to mash before you add other flavorings. 

Toss the cauliflower, olive oil, salt and pepper together until the cauliflower is nicely coated, but not swimming in oil. There should be a nice sheen to each piece, and if you see any dry patches, add a little more oil. 

Arrange the cauliflower in an even flat layer on the baking sheet. Roast for 20-25 minutes, or until the tips and bottoms of the florets are spotty-brown and the cauliflower is tender. They shouldn’t be burnt, so  keep an eye on it.  Browning will vary depending on which baking sheet you’re using, and how hot your oven gets. If you use a dark-coated baking sheet, they will brown much faster and potentially burn. 

When the cauliflower is done, transfer to a high-powered blender, or food processor. Alternately, you could put them into a pot and use an immersion blender to puree them to your desired consistency. 

Now, listen to me closely…every head of cauliflower is different in size. Therefore, the amount of heavy cream needed will vary. Start with about 1/4 cup then move up to 1/3 cup if needed. And if you need more, just add more. Don’t add it all at once because you may use too much and have runny cauliflower. It should be creamy, but substantial at the same time. Give it a taste to see how it feels in your mouth. Adjust seasoning at this point, adding more salt, pepper, or other seasonings. Also, toss your desired add-ins if using. 

If at any point you need to reheat your cauliflower mash, transfer to a small pot and warm it over medium-low heat until heated through.

Just tried this recipe, my texture was off but the TASTE was on point!! The roasting did give it a nice taste smelled wonderful and tasted better! I used my vita mix and that didn’t get it smooth like yours so I have to figure it out next time, I have a handheld blender but thought vitamix would be easier. Creamy Garlic Mashed Cauliflower

Bring a large cooking pot of salted water to boil. Add the cauliflower florets and turn the heat down to medium. Cook covered for 15 minutes until cauliflower is soft and tender. When the cauliflower is ready, remove from heat and drain.

While the cauliflower is cooking, melt butter in a frying pan over medium heat. Sauté the garlic for about 2 minutes until fragrant and soft. Remove from heat and set aside.

In a food processor, add the cooked cauliflower, sautéed garlic with the butter it was cooked in, milk, Parmesan cheese, salt and pepper. Puree on high until smooth, about 1 minute.

Serve hot and sprinkle some fresh herbs (such as parsley, chives or rosemary) and freshly cracked black pepper on top.

I love this recipe. I cook my cauliflower in the microwave for better control and it keeps more of the vitamins plus the more stem you can cut off of the flower the drier it is that's why I don't buy the rice, a cheese grater makes the best rice.

Outstanding ... great substitute for mashed potatoes.  We served it with grilled skirt steak, chimichurri sauce and grilled tomatoes.  5 STAR!!!

The best way to make creamy and delicious low-carb option instead of mashed potatoes. 

Easy Mashed Cauliflower

Cut cauliflower into florets, discard core and leaves.

Place florets in a pot, cover with water, add salt.

Cook on medium heat until florets are soft.

Drain cauliflower over a colander, return florets into the pot.

Set pot over medium-low heat, mash with a fork or potato masher and cook, stirring constantly, for at least 3 minutes, to get any remaining moisture out.

Add sour cream (2 tablespoons at a time), salt and pepper, butter and mash until desired consistency is reached.

Serve garnished with chopped parsley or chives.

Prep the cauliflower. Trim the leaves off the cauliflower and cut off the florets. Rinse the florets under water.

Steam the cauliflower. Heat 1 inch of water in a pot on medium heat and bring to a boil. Place a steamer insert in the pot and add the cauliflower florets. Steam for 6 to 8 minutes.

Cook the garlic. While the cauliflower is steaming, heat the olive oil in a small pan on medium heat. Add the minced garlic and cook for 30 seconds, then remove from the heat.

Add everything to the pot. Remove the steamed cauliflower from the pot, drain the water, and add the cauliflower back in. Then, add the olive oil, garlic, chopped herbs, and any optional ingredients.

Mash. Use a potato masher or stick blender to mash the cauliflower.

Serve. Season with salt and pepper, garnish with fresh herbs and serve immediately.
