Fattoush Salad

pita bread

Early Harvest Extra Virgin Olive Oil

sumac,

Salt and pepper

heart of Romaine lettuce, chopped

cucumber,

Roma tomatoes, chopped

green onions

radishes, stems removed, thinly sliced

parsley

mint leaves (optional)

lime, juice of

Toast the pita bread in your toaster oven until it is crisp but not browned. Heat 3 tbsp of olive oil in a large pan. Break the pita bread into pieces, and place in the heated oil. Fry briefly until browned, tossing frequently. Add salt, pepper and 1/2 tsp of sumac. Remove the pita chips from the heat and place on paper towels to drain.

In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.

To make the dressing, whisk together the lemon or lime juice, olive oil and spices in a small bowl.

Dress the salad with the dressing and toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

Love this salad, especially the dressing. Even my daughter who is not a fan of tomatoes and cucumber can’t get enough of this recipe! 
I read the other comments and am always amused at how people find the need to nitpick ingredients and say it’s not traditional. Home cooks world over put their own spin on recipes according to what is on hand and their own taste. Lighten up people! I put feta on mine and I love how the herbs replace lettuce.
I am going to try it with pomegranate molasses because I love it!

Simply one of our favorite salads ever. We first discovered it at a local Mediterranean restaurant, and their crispy pita is tremendous. But since COVID, we've not ordered in or eaten out,. Was so happy to find this recipe online, together with Suzy's other recipes in the little cookbook. 
But you simply must try this salad. And if you don't have sumac, well rush right out and get some. We ordered it from Williams but your local ethnic grocer is just as likely to have it. The complex flavors of the vinaigrette and the sumac and the olive oil cannot be beaten.

I first had this in Baghdad Iraq at a Lebanese restaurant on Camp Slayer in 2010. I loved it. Then I redeployed and completely forgot the name of it. Flash forward to right now and I come across it on your website. THANK YOU for reintroducing me to this salad. I was looking for a good Salmon recipe and then this popped up with it. Best Greek Salad

olive oil

lemon juice

Tbsp red wine vinegar

tsp minced garlic ((1 large clove))

Tbsp parsley

oregano

tsp honey

Salt, (to taste)

Roma tomatoes, (diced (10 oz))

red onion, (thinly sliced

kalamata

feta cheese ((about 1 cup))

avocado (not too soft), (diced)

Add all of the dressing ingredients to a small mixing bowl and whisk well to blend, season with salt to taste and store in refrigerator until ready to use.

Add tomatoes, cucumber, onion, bell pepper, olives, avocado and feta to a salad bowl.&nbsp;

Drizzle dressing over top and gently toss to evenly coat. Add dressing within a few minutes of serving for best results.

cucumbers (coarsely chopped)

Add the 1 tbsp olive oil to a medium pan over low heat. Then add the cauliflower and stir frequently until cooked through, about 5 minutes. Remove from heat and let cool completely before adding to the salad.

 Combine cucumbers, red onion, and tomatoes in a large bowl and toss until combined.

The Salad Mixture

Combine the olive oil, vinegar, sweetener, lemon juice, oregano, garlic, and salt and pepper in a small bowl and whisk until thoroughly combined.

In a large bowl, combine the riced cauliflower, the salad mixture, and the dressing and toss together. Finally, add the olives and feta cheese and toss until thoroughly incorporated. Store in the fridge until serving. Flavor is best with at least an hour for the salad to marinate before serving.

In a large bowl combine the romaine, tomatoes, cucumbers, red onions, olives and sun-dried&nbsp;tomatoes. Add dressing to taste and toss well. Sprinkle Feta evenly over salad.&nbsp;

Small Batch Mediterranean Quinoa Salad

quinoa

spinach leaves (, finely chopped)

red onions

sun-dried tomatoes (, chopped)

kalamata olives (, sliced)

pine nuts

balsamic vinegar

basil

black pepper

Pour quinoa to a fine mesh strainer, then rinse under cool water for 30 seconds to 1 minute. If you do not have a mesh strainer, add the quinoa to a bowl and cover it with cool water. Move the quinoa around in the bowl, then drain the water and repeat.

To cook the quinoa, bring 1 cup of water to a boil in a 1-quart pot. Add the rinsed quinoa and return to a boil. Cover and reduce heat to medium-low and simmer until water is absorbed, about 10 to 12 minutes. Remove from heat, fluff, cover, and let stand for 10 minutes. Remove the cover and transfer quinoa to a medium-sized bowl to cool.

Cook the quinoa

Add the chopped spinach, onions, sun-dried tomatoes, kalamata olives, feta, and pine nuts to the bowl. Stir to combine.

In a separate small bowl, whisk together the olive oil, balsamic vinegar, dried basil, and pepper. Pour over the spinach and quinoa salad and toss.

The Perfect Greek Salad

romaine lettuce, chopped

grape tomatoes (or cherry tomatoes)

red onion, chopped (roughly 1 small red onion)

green pepper, chopped

whole Kalamata olives

feta cheese, crumbled

extra virgin olive oil

sea salt

black pepper (or more to taste)

In a large bowl, combine the romaine lettuce, cherry tomatoes, red onion, cucumber, olives and feta cheese.

In a small bowl, make the lemon Greek salad dressing by whisking together the olive oil, lemon juice, oregano, salt and pepper.

Pour dressing over the salad and toss to combine. Add more black pepper to taste.

This recipe is so easy to follow and turned out amazing! It tasted like a salad I would have been served at a Greek restaurant.

There's a good recipe in here trying to get out, but there is too much red onion in proportion to the other ingredients; pepper is overkill when there is that much red onion; there is no need for salt because the olives and feta are already salty enough; and there is no need to dirty a second bowl whisking together the dressing when you can just pour the individual ingredients over the vegetables and then toss. Maybe it depends on what kind of kalamata olives you have, but we found whole olives too strong, and I'd cut them at least in two in the future before serving.

Greek Salad with Lettuce

Simple Mediterranean kidney bean salad with garden vegetables, fresh cilantro, and homemade Dijon vinaigrette. See the video and recipe notes for variations.

Kidney Bean and Cilantro Salad with Dijon Vinaigrette

kidney beans, drained and rinsed

cucumbers,

Medium-sized heirloom tomato, chopped

fresh cilantro, stems removed, chopped (about 1 1/4 cup)

red onion, chopped (about 1 cup)

lime

Dijon mustard

garlic paste, garlic

sumac

Salt and pepper,

In a medium sized bowl, combine the kidney beans with the chopped vegetables and cilantro.

To make the vinaigrette, in a separate small bowl, whisk together the lime juice, oil, mustard, fresh garlic, sumac, and pepper.

Pour the vinaigrette over the salad and combine well with a large spoon. Add a dash of salt and pepper if you need to.

Cover and let sit in the fridge for half hour to an hour before serving.

I made this for my lunch today - omg, it’s absolutely delicious! It’s lockdown in the UK but being in the sunshine in my garden and eating this - I can seriously imagine being on holiday if I close my eyes! I’ll 110% make again. Thank you for sharing. X

Not only is this Mediterranean salad yummy and great for you, it’s also so beautiful it can be served at any holiday, whether it’s Hanukkah, Thanksgiving, Christmas, Passover or on any other holiday.

Quick And Easy Mediterranean Salad Recipe

Northern beans

cherry tomatoes, halved tomatoes

- 1 cup olives, sliced

basil ((or 2 tablespoons basil paste))

garlic

nuts ((any nut of choice))

parmesan cheese ((omit if doing the Daniel Fast))

Cook

The only cooking that’s required is cooking the quinoa. Start this first (typically with 2 cups of water per cup of quinoa), and wash, chop and slice your veggies so they&#39;re ready for the cooked quinoa once it’s finished - which has a cook time of only about 20 minutes.

Mix the salad dressing ingredients with an immersion blender or small food processor and mix with salad in a large bowl.

How To Make The Sauce

This easy plant-based chickpea salad has that classic Mediterranean flavor from the red wine vinegar, oregano, and feta cheese, and is a cinch to pull together for fast weekday lunches!

Easy Mediterranean Chickpea Salad

cooked chickpeas (1.5 cups)

grape tomatoes, halved

English cucumber,

feta cheese (3.5 ounces)

baby greens, arugula, or other lettuce

olives

Mince red onion or slice red onion into thin 1/8th-inch wedges. 

In a large bowl, combine dressing ingredients. Whisk until well combined. Marinate onions in dressing to soften their bite. 

Wash and prepare all vegetables. Slice grape tomatoes in half. Quarter the cucumber and slice into 1/2-inch chunks.

Top with feta - crumbled or in a fancy block.

Serve everything together over mixed greens, as is, or with crackers or bread.
