Step 1
Combine the shallots, garlic, and vinegar in a small bowl. Let sit for 5 minutes to soften the shallot and garlic. This also mellows out the flavor of the raw onion and garlic. Add the olive oil, Dijon mustard, red pepper flakes, oregano, salt, and pepper to create the vinaigrette.
Step 2
Meanwhile, combine the chickpeas, white beans, parsley, and cilantro. Add the shallots and garlic vinaigrette. Season well with kosher salt and pepper.
Step 3
If there is time, let marinate for one hour in the fridge before serving. Toss in cherry tomatoes before serving.
