DD#3 loves cantaloupe...this one was for her.  Make sure to use a ripe cantaloupe for the best flavor. I always just mix in a tall glass with my stick blender.

Cantaloupe Smoothie

Place the juice, fruit and honey in a blender. 

DIDN'T HAVE ORANGE JUICE SO USED POM POMAGRANITE JUICE, 2 STRAWBERRIES AND A SPOONFUL OF YOGURT! WOW. I'D MAKE THIS A REGULAR.

This combination of cantaloupe, fresh herbs, and salty pistachios is light, elegant, and perfect for hot summer days.

Melon and Herb Salad with Pistachios

roasted, salted, shelled pistachios

lime

extra virgin olive oil, divided

urfa biber chile flakes

Coarsely chop fresh tender herbs until you have 1/3 cup. Refrigerate until ready serve. Coarsely chop 1/4 cup shelled pistachios.

Scoop out the seeds from 1/2 cantaloupe. Position cut-side down on a cutting board. Cut the skin and pith from the melon with a knife: start at the top of the melon and cut down to the edges, rotating the melon until completely peeled.

Cut the melon into thin ribbons: Start by cutting the melon into 2-inch wide strips (if using a vegetable peeler to cut into ribbons, cut the melon to slightly less than the width of the peeler). Using a mandoline or vegetable peeler, very thinly slice the melon lengthwise into ribbons. The ribbons should be thin and pliable. If they aren’t, slice thinner.

Arrange half the ribbons decoratively on a platter. Finely grate the zest from half a medium lime all over the ribbons. Drizzle with by 1 of the tablespoon olive oil. Sprinkle with 1/4 teaspoon of the flaky salt, half of the pistachios, and half the herbs.

Decoratively arrange the remaining melon ribbons on top. Zest the other half of the lime over the ribbons. Cut the lime into wedges and squeeze the juice all over. Drizzle with the remaining 1 tablespoon olive oil. Sprinkle with the remaining 1/4 teaspoon flaky salt, 1/4 teaspoon urfa biber, remaining pistachios, and  remaining herbs.

A cool summer treat for the kids, It looks like wedges of watermelon when done. You will need either popsicle molds OR 24 3oz paper cups, and 24 wooden popsicle sticks.

Watermelon Popsicles

Scoop out and measure 10 cups watermelon pulp. Puree watermelon and sugar in batches in blender until smooth.

Push puree through mesh strainer into a large bowl. Cover and freeze until puree is slushy but not solid, about 3 hours.

Remove from freezer, stir in chocolate chips. Place 24 3oz disposable cups in 2 shallow baking pans (spoon puree into cups to within 1/2&quot; of rim). Place pans in freezer until puree is solid but not rick hard, about 2 hours.

spread softened sherbet on top of each portion of puree so that it comes up to edge of cup. smooth top off with the edge of a butter knife. Cover each cup with plastic wrap and cut small slit in center. Insert popsicle stick into each cup so it reaches the bottom. Freeze until solid, about 6 hours and up to 2 days.

To unmold: Let pops sit at room temperature for about 1 minute. then gently pull out from cups. Or you can peel away the cups from the pops.

Place all ingredients into a blender.  Blend and serve.

Great frosty!!  I used a frozen banana as well as the frozen watermelon so needed to add extra water to get it blended.  Was nice and refreshing and not too sweet.  Made for Everyday Holiday.

I'm posting this in answer to a request. I haven't made it myself. It was on a site called The Ice Cream Parlor. An ice cream maker is necessary. Times do not include chilling or freezing, and are guesses.

Watermelon Sorbet

Cook the sugar, water and lemon juice together, stirring occasionally until the sugar is dissolved.

Cut up the watermelon and remove all seeds.

Freeze in an ice-cream maker according to the manufacturer's instructions.

Pack into an airtight container and store in the freezer.

I have made this sorbet at least three times.  It was very good as written, but the lemon did add a bit too much tang for me.  Now when I make this I add the juice from one half of a LIME, omitting the lemon... to me, the flavor is now closer to fresh watermelon.
DELICIOUS, especially on those hot summer days.

Refreshing and different lemonade for your next backyard bbq or potluck function. Easily doubled or tripled for larger groups.

Watermelon Lemonade

(12 ounce) cans frozen lemonade concentrate

Place watermelon in a blender or food processor.

Cover and blend on medium speed until smooth.

Place lemonade concentrate and water in a large pitcher or punch bowl.

Garnish with additional watermelon if desired.

Made this for the Zaar Cookathon/4th of July BBQ. Wow, this is so refreshing. Also easy to put together. Perfect summertime drink. Big hit with my family/guests. I have made this everyday for the entire week. That ought to tell you how much we liked it. Thanks.

Watermelon Limeade

Cut enough watermelon into 1-inch cubes until you have 8 cups. Transfer half to a blender and blend until smooth.

Fit a fine-mesh strainer over a large bowl. Pour the blended watermelon through the strainer and press on the watermelon solids with a ladle to force more juice through. Discard the contents of the strainer. Repeat blending and straining the remaining watermelon. Rinse the blender out, then pour the strained juice back into the blender. 

Juice 6 to 9 limes until you have 3/4 cup juice. Add the juice and 3/4 cup simple syrup to the blender and blend on low speed until combined. Skim any foam off the top.

Pour into a pitcher and refrigerate until chilled, or serve over ice. Garnish with watermelon slices, lime slices, or fresh mint.

Watermelon gazpacho is light and refreshing — and you can blend it up in minutes. Here&#x27;s how to make this perfect no-cook summer lunch.

How To Make Watermelon Gazpacho

Roma or plum tomatoes (about 4)

English cucumber,

red bell pepper,

jalapeño pepper,

garlic

sherry vinegar

Prepare the fruit and vegetables. Prepare the following ingredients, adding each to a blender as you complete them: Dice 1 pound seedless watermelon (about 3 cups). Quarter 1 pound Roma or plum tomatoes, scrape out the seeds with your fingers, and coarsely chop (about 2 1/2 cups). Seed and dice 1/2 English cucumber (about 1 cup), 1/2 medium red bell pepper (about 3/4 cup), and 1/2 medium jalapeño pepper, if desired. Smash 1 clove garlic with the side of a chef’s knife.

Prepare the garnishes. Finely dice the following until you have about 2 tablespoons of each: watermelon, cucumber, and red bell pepper. Arrange in piles on a plate or in a shallow bowl, cover with plastic wrap, and refrigerate until ready to serve.

Add the seasonings. Add 2 tablespoons sherry vinegar, 2 tablespoons olive oil, 2 1/2 teaspoons kosher salt, and 1/4 teaspoon black pepper to the blender.

Purée the soup. Blend on medium-high speed to desired consistency, 30 seconds to 1 minute.

Chill the soup. Refrigerate the soup in the blender until thoroughly chilled, at least 3 hours.

Serve the soup. Stir or blend the soup to recombine if needed. Pour the soup into bowls and garnish with the reserved watermelon, cucumber, and bell pepper.

<p>Tip the cream and sugar into a pan. Bring to the boil, stir until the sugar has dissolved, then turn off the heat. Tip the melon into a food processor with the lemon juice, blitz until smooth, then pour the cream onto the melon and blitz again.</p>

<p>Pour the mix into an ice-cream machine and churn until thick and semi-frozen, then transfer to a freezerproof container and freeze. Serve the ice cream scooped into a bowl with fresh raspberries.</p>

2. Mixez la pulpe de melon, ajoutez le jus de citron et le sirop. Passez ce coulis au chinois pour enlever les morceaux restants.

A co-worker introduced me to this salad. The combination sounds odd, but it all works! The sweetness of the melon, the tanginess of the feta, and the tartness of the lime combine to make an amazing taste sensation!

Watermelon, Feta and Black Olive Salad

red onion,

-3 limes, juice of

feta cheese,

black olive

whole flat leaf parsley

mint

extra virgin olive oil

Place the onion slices in a small bowl, add the juices from the limes; set aside.

In a large bowl, combine the feta cheese cubes with the watermelon cubes, the black olives, parsley, mint, olive oil, and pepper.

Add the onion and lime juice mixture and gently toss to combine.

I wish I could give this more than five stars. This is like a Mediterranean salad from an alternate universe, with watermelon instead of tomato, and it is delicious. The sweetness of the watermelon is offset by the sour, salt, onion flavors. I didn't have fresh herbs, so I used a pinch of dried parsley and a pinch of Greek oregano instead. I also used peppercorn feta crumbles because that is what I had a package of. Also used more olives than were called for, but that's because I love them. This was really surprising and really filling. Try it if you like Greek salads.
