Preserved lemons recipe.  Many Moroccan and Middle Eastern recipes call for preserved lemons, lemons that have been pickled in salt and their own juices.

How to Make Preserved Lemons

8-10 lemons (Meyer if you have them)

cup to 1 cup of kosher salt

Extra fresh squeezed lemon juice, if needed

2 tablespoons of kosher salt at the bottom of your canning jar.

and scrub clean the lemons. With each lemon, cut off any stems. Cut off 1/4-inch from the tip of the lemons. Cut the lemons lengthwise in half, but keep the lemon attached at the base, do not cut all the way through. Then make another cut the same way, as if you were cutting the lemons into quarters, but not all the way through.

Gently pull open the lemons and sprinkle well with kosher salt, inside and out.

Put the prepared lemons in your canning jar and press them down so that their juices come out and rise to the top. Pack the jar with lemons, making sure that they are covered with juice. Add more juice if needed, and add a couple more tablespoons of kosher salt to the top.

Close the lid to the jar and let it sit at room temperature on the counter for a few days. Turn the jar upside down every so often. After a few days put the jar of lemons in the refrigerator for at least 3 weeks, until the rinds of the lemons soften. Turn the jar upside down occasionally while storing in the refrigerator.

To use preserved lemons in cooking, remove one from the jar and rinse it to remove the salt. Discard any seeds. Remove the pulp. Thinly slice or chop the preserved lemon rind to use in a recipe.
Preserved lemons can be stored in the refrigerator for up to 6 months.

Experiment with adding spices to the preserved lemons—cardamom, vanilla, cloves, coriander seeds, cinnamon stick, bay leaf, peppercorns.

Fresh Lemon Syrup Recipe

(1 cup; 200 grams) sugar

Cut each lemon into a few chunks and toss with sugar in a large glass, ceramic, or stainless steel mixing bowl. Cover tightly and let stand at room temperature, stirring once every 45 minutes or so, until sugar has completely dissolved, about 3 hours (or up to 12 if timing is an issue).

Using a cheesecloth-lined or fine-mesh stainless steel strainer set over a nonreactive bowl, strain syrup. Working in batches, transfer rinds to a stainless steel potato ricer and squeeze to release any extra syrup, allowing it to pass through strainer into bowl; discard rinds. Refrigerate syrup for up to 3 months in a glass bottle or pint jar.

Perfect Lemonade

white, granulated sugar (can reduce to 3/4 cup)

Make "simple syrup":  Place the sugar and water in a small saucepan and bring to a simmer. Stir so that the sugar dissolves completely and remove from heat.

Juice the lemons: While the water is heating for the simple syrup, juice your lemons. Depending on the size of the lemons, 4 to 6 of them should be enough for one cup of juice.

Combine lemon juice, simple syrup, water: Pour the juice and the simple syrup sugar water into a serving pitcher. Add 2 to 3 cups of cold water and taste. Add more water if you would like it to be more diluted (though note that when you add ice, it will melt and naturally dilute the lemonade).
If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

Chill: Refrigerate 30 to 40 minutes.
Serve with ice, sliced lemons.

Prepare grill for medium-high. Whisk lemon zest, Meyer lemon zest, lemon juice, Meyer lemon juice, mustard, and ¼ cup oil in a medium bowl to combine; season dressing with salt and pepper (if you don’t have Meyer lemons, use regular lemons in their place).

Braised Chicken With Lemon and Olives

Pat chicken thighs dry with paper towels. Season well with salt and pepper and place in an earthenware baking dish in one layer, skin side up. Sprinkle with red pepper, garlic, fennel and rosemary and drizzle with olive oil. Rub seasoning into thighs on all sides. Tuck lemon wedges here and there. Let marinate for 15 minutes. Heat oven to 375 degrees.

Put baking dish in oven, uncovered, and roast until skin browns lightly, about 20 minutes. Scatter olives evenly over chicken and add broth. Cover tightly and bake for 1 hour, until meat is very tender when probed with a skewer.

The Meyer lemon has always been something of a California secret, and every year when its brief growing season begins there, eager cooks sigh with relief. The Meyer is not as assertive as the common supermarket varieties, but it offers so much more in nuanced flavor that it is unforgettable. And these days, the Meyer's secret is finally out. A Meyer lemon contains about four times the sugar of a regular lemon, but it can be used almost interchangeably with the traditional varieties, adding a rounder edge to both sweet and savory dishes. And you can use the whole thing – from pulp to peel. This gorgeous tart is the ideal way to showcase its seductive fragrance and flavor. (Regular lemons will work well in this recipe too, but you'll likely want to add a bit more sugar.)

Meyer Lemon Tart

Make the crust: in the bowl of a mixer, cream together butter and sugar. Add egg yolk and the milk, and beat to combine. In a medium bowl, combine the flour with salt. Slowly add the flour to the butter mixture, stirring until completely blended. Gather dough into two balls. Freeze one for future use, chill the other for at least 1 hour.

Heavily butter a 10-inch tart pan with a removable bottom. Press the dough into the pan and trim the edges. Prick the bottom with a fork, and place the shell in the freezer for 30 minutes.

While shell is in freezer, prepare lemon curd. Grate zest of lemons. Squeeze lemons to extract 1 cup of juice. In a medium nonreactive saucepan, combine juice and zest. Add remaining sugar, butter and salt. Place over medium heat, stirring once or twice, until sugar is dissolved and the butter is melted.

In bowl of a mixer, combine eggs and egg yolks until blended. Slowly add hot lemon mixture to eggs until blended. Return mixture to saucepan, and place over low heat. Whisk constantly until mixture thickens to a pudding-like consistency; do not allow it to boil. Remove from heat, and continue to stir to stop the cooking. Strain lemon curd into a bowl. Adjust sugar to taste; the curd should be tart, but may need additional sugar if the lemons were unripe. Cover with plastic wrap, pressing it right against the surface of the curd. Allow to cool.

Heat oven to 375 degrees. Remove tart shell from freezer, and bake until lightly golden, 20 to 25 minutes. Remove from heat and allow to cool slightly. Spoon lemon curd into tart shell, and smooth the top. Bake until filling has puffed around the edges, about 30 minutes. Cover edges with foil, if necessary, to prevent over-browning. Cool to room temperature before serving.

Meyer Lemon Marmalade

I’ve never made any kind of jam or marmalade before, but I had a huge amount of Meyer lemons and didn’t want to waste them.  The whole time I was making this I thought it was going to fail.  Didn’t feel like I got much pectin, boiled over the pot, never passed the “wrinkle test,” so just kept boiling until it started to get kinda dark. Against all odds, it set up beautifully and it is DELICIOUS!! Thanks so much!"

Scrub the lemons clean. Discard any that are moldy or damaged.

Prepare the lemons: Cut 1/4 inch off from the ends of the lemons. Working one at a time, stand a lemon on end. Cut the lemon in half lengthwise. Cut each lemon half into several segments, lengthwise.
 
As you cut the lemons into segments, if you can, pull off any exposed membranes. Just get the ones that are easy to get to, ignore the rest. When you've cut down to the final segment, cut away the pithy core. Remove all seeds from the segments. Reserve the seeds and any removed membrane or pith. You will need them to make pectin.
Cut each lemon segment crosswise into even pieces to make little triangles of lemon peel and pulp.

Put seeds, membranes, pith into cheesecloth or muslin bag: Put all of the seeds, membranes and pith you removed from the lemons into a bag fashioned out of two layers of cheesecloth or a muslin jelly bag.

Preparing the fruit

Place the lemon segments and water into a large, wide pot.

Secure pectin bag: Place the pectin bag in the pot with the fruit pulp and secure to the pot handle.

Boil until peels are soft: Bring mixture to a strong boil on high heat. Let boil, uncovered, for about 25-35 minutes, until the peels are soft and cooked through. (If too much of the water evaporates from the boil and the peels start sticking to the bottom of the pan, add a little more water back in.)

Test one of the lemon peel pieces by eating it. It should be very soft. If it is still chewy, keep cooking until soft.
Remove from heat.

Remove the pectin bag, place the pectin bag in a bowl and let cool until it is comfortable to touch.

First stage of cooking

Squeeze pectin from pectin bag: Once your pectin bag has cooled to the point you can handle it, if you want, squeeze it like play-doh to extract any extra pectin. This is not necessary but will help ensure a good set. (I like to wear latex-type gloves for this part.) You should be able to get a teaspoon or two more from the bag. It has the consistency of sour cream. Return this pectin to the pan with the lemon mixture.

Add sugar: Measure out your sugar and add it to the pan with the lemon mixture.

Add the pectin and sugar

Boil and check temperature: Heat the jelly mixture on medium high and bring it to a rapid boil, stirring occasionally, making sure nothing is sticking to the bottom of the pan.
After the jelly first comes to a boil, it will foam up considerably. this is why you need need to use a large pot, and make sure you pay attention and keep your eyes on the whole process. Stir with a wooden spoon to bring the foam back down. If it gets too high, lower the temperature to keep it from overflowing the pot.
 
Secure a candy thermometer to the side of the pan, or check the jelly temperature with an instant read thermometer. The marmalade may take anywhere from 20 to 35 minutes or so to be ready to pour out. After about 15 minutes, start checking the temperature frequently.

Test to see if the marmalade is at set point: There are two ways to test that the marmalade is ready to pour out into jars: the mixture reaching a temperature of 218-220°F (6-8°F above the boiling point at your altitude) OR putting a bit of it on a chilled plate "wrinkling up" when you push it with your finger tip. I steer off of the wrinkle test. If the sample of jelly wrinkles, it's ready. I use a thermometer just to help me gauge when to do the wrinkle test.
For the wrinkle test, place a small plate into the freezer. As the jelly temperature reaches 217°F, start testing it by placing a small amount of the hot jelly on the chilled plate. If the jelly spreads out and thins immediately, it isn't ready. If it holds its shape a bit, like an egg yolk, that's a good sign. Push up against it with your finger tip. If the jelly sample wrinkles at all, it is time to take the jelly off the heat and pour it out into jars.

When you use a candy thermometer or an insta-read thermometer to test the temperature of your mixture, make sure the probe is NOT touching the bottom of the pan. Make sure that the indentation on the probe (with modern candy thermometers this is about an inch and a half from the bottom of the probe) is actually surrounded by the mixture. This may mean that you have to tilt the pan to one side, to cover the probe sufficiently to get a good reading.

Second stage of cooking

Sterilize canning jars: While the marmalade is in its second cooking stage, rinse out your canning jars, dry them, and place them, without lids, in a 200°F oven. They should be in the oven at least 10 minutes before using them. This not only sterilizes the jars, but it helps to keep them from cracking from the temperature differential when you add the hot jelly mixture to them.

Sterilize lids: As the time approaches for the marmalade to be done, boil some water in a tea pot. Put the jar lids in a glass or ceramic bowl and pour the boiling water over them to sterilize.

Ladle marmalade into sterilized jars: Once the jelly has reached 218-220°F or its "wrinkly" stage, remove the jelly pot from the heat. Carefully ladle the jelly into the jars, leaving 1/4 inch head space at the top of the jars for a vacuum seal.

Clean rims, secure with lids and jar ring: Wipe the rim clean with a clean, wet paper towel. Place the lid on the jar, securing with a jar ring. Work quickly.

Allow jars to cool and seal: Allow the jars to sit overnight. You will hear them make a popping sound as a vacuum seal is created.
Even if the jelly is not firm as it goes into the jar (it shouldn't be), it should firm up as it cools.

My Meyer Lemon Pudding is amazingly simple to make, with no fussy steps at all.  The pudding is tart, creamy, and pure lemon bliss, served warm or chilled.

Meyer Lemon Pudding

Tbsp corn starch

Set a large mesh strainer over a large heat proof bowl and set aside.

Put all the ingredients into a medium saucepan and give it a good whisk to combine and break up the yolks.  Let the mixture sit for 5 minutes, then stir again to make sure the cornstarch is dissolved.  Don&#x27;t worry about tiny lumps, they&#x27;ll dissolve as the pudding cooks.

Cook over medium heat, stirring almost constantly with a whisk at first, then switching to a silicone spoonula as it thickens.  You want to avoid the pudding scorching on the bottom or sides of the pan, so modulate the heat and keep stirring.

Just as the pudding comes to a boil, it should be thick and glossy.  Remove from the burner just as the first large bubbles surface, don&#x27;t let it continue to boil.

Immediately pour the pudding through the strainer, pushing everything through with the back of your silicone spoonula.  Only the zest and a few lumps will reamain.

At this point you can serve warm, or chill for later.  Chill the pudding in the large bowl, or spoon it into individual bowls or cups.  If you decide to keep it in the large bowl, place a piece of plastic wrap over the surface before refrigerating to prevent a skin from forming.

Serve the pudding with whipped cream, if you like.

Lemony Fregola with Cockles and Herbs

If using rhubarb, dissolve ¼ tsp. salt in 1 cup warm water in a small bowl. Add rhubarb and let soak 5 minutes (doing this will mellow the rhubarb’s acidity). Drain and pat dry. Place in a small bowl with chopped lemon and toss to combine. Let sit until ready to serve pasta.

Cook fregola in a large pot of boiling lightly salted water, stirring occasionally, until very al dente, 6–8 minutes. Drain, reserving 1 cup pasta cooking liquid.

Meanwhile, heat ¼ cup oil in a large skillet over medium. Cook garlic, swirling around in pan often, until just golden, about 1 minute. Add wine; bring to a boil. Reduce heat and simmer until reduced by half, about 3 minutes. Add cockles, cover skillet, and cook until they open, about 4 minutes. Transfer cockles to a bowl, discarding any that don’t open.

Add fregola, ½ cup pasta cooking liquid, and butter to skillet. Cook, tossing often, until fregola is tender and sauce is slightly thickened, about 3 minutes. Mix in basil, chives, and parsley and cook until basil has just wilted, about 20 seconds. Return cockles to pot and cook until warmed through.

Divide fregola and cockles among bowls. Drizzle with oil; top with rhubarb-lemon mixture (or just chopped lemon if not using rhubarb) and red pepper flakes.

(60 g) powdered sugar

Tbsp (7 g) unsalted butter, melted

For the sponge, heat milk in a microwave-safe measuring cup for 45 seconds to 1 minute, until very warm (120-130°F). Whisk together warm milk, sugar, yeast, and flour in a medium bowl; cover loosely with plastic wrap and let stand 15 minutes.

For the dough, combine sugar, cream cheese, butter, salt, vanilla, egg, and sponge in a large mixer bowl; beat at medium speed for 1 minute until combined. Add 2 cups (280 g) flour and mix in at low speed until a soft dough forms, about 2 to 3 minutes. Switch out the flat beater for a dough hook, and knead dough for 4 minutes until smooth and elastic, adding remaining 1/4 cup (35 g) of flour 1 tablespoon at a time to prevent dough from sticking. The dough is ready when it feels tacky but doesn&#8217;t stick to your fingers.

Place dough in a large bowl coated with nonstick spray and cover with plastic. Let the dough rise in a warm place until doubled in size, about 50 to 60 minutes. To check if dough has doubled, lightly flour two fingers and press them down into center of dough. If indentations remain, dough has risen enough.

While the dough rises, prepare the filling. Combine cream cheese, sugar, salt, Meyer lemon juice, and vanilla in a food processor and process until smooth. Line a large rimmed baking sheet with parchment paper and dust lightly with flour. Gently punch down dough and roll out into a 12 x 15-inch rectangle on prepared baking sheet. Use an offset spatula to spread cream cheese mixture down the center of the dough, leaving a 4-inch border on each side and a 1-inch border at the top and bottom. Spread Meyer lemon curd over the cream cheese filling. Use a sharp knife or kitchen shears to cut 15 1-inch strips on both sides of dough (be careful not to cut parchment paper).

Remove the four corner strips and fold top border down over filling. Work from top to bottom and fold strips over filling, alternating strips diagonally (begin by folding over the top left strip, then fold the top right strip, then a left strip, and so on). When all the strips are folded over filling, fold up the bottom border and press to seal. Cover braid loosely with plastic and let rise 25 minutes. (Prepare ahead: After braid rests, cover and refrigerate overnight. Bring to room temperature before baking).

Preheat oven to 375°F. Bake braid until golden, about 25 minutes. Let cool on a wire rack for 15 minutes before glazing. For the glaze, whisk together powdered sugar, salt, melted butter, Meyer lemon zest, and juice in a small bowl. Drizzle glaze over braid and let set before serving.

I made this and it turned out great! I tripled both the lemon curd and the cream cheese filling. It wasn't overly sweet and had a great flavor. The recipe was very easy to follow even as a beginner baker. I really appreciated having the gram measurements since I like to be precise. The dough was very easy to work with and had a wonderful soft texture. Even with a few mistakes everything turned out great. I can't recommend this recipe enough!

Preheat oven to 350°F and spray a 9 x 5-inch loaf pan with nonstick spray. Whisk together flour, baking powder, baking soda, salt, and poppy seeds in a medium bowl.

Place sugar and Meyer lemon zest in a food processor and pulse for 1 minute. Beat butter and Meyer lemon-sugar in a large mixer bowl at medium speed until light and fluffy. Reduce speed to low and add eggs one at a time. Beat in vanilla. Combine yogurt and buttermilk in a small bowl. Beat in flour mixture in three additions, alternating with buttermilk mixture (begin and end with flour mixture), just until incorporated.

Pour batter into prepared pan; smooth top with an offset spatula and tap sharply to reduce air bubbles.

Bake for 52 to 56 minutes, until cake springs back to the touch and a toothpick inserted in the center comes out with a few crumbs attached.

In the last five minutes of baking, make the lemon syrup. Combine Meyer lemon juice and sugar in a small saucepan over medium heat. Simmer, stirring occasionally, until sugar dissolves and syrup thickens, about 4 minutes. Remove cake from the oven and immediately brush the top with lemon syrup. Cool in pan on a wire rack for 10 minutes; carefully remove cake from pan and cool completely.

For the glaze, whisk together melted butter, salt, Meyer lemon zest, juice, and powdered sugar in a small bowl. Drizzle glaze over cake and and let set before serving.
