This is a delicious recipe! Everybody loved it. I used butternut squash instead of sweet potatoes, as per the video. The apple cider I used was lightly alcoholic (2.8%). It gives an extra cachet to the taste. Thank you!

Made this last night for the first day of fall. To use what I had on hand I substituted split chicken breast for thighs cutting the breasts in half before cooking. I followed the rest of the recipe exactly as written. It’s a delicious recipe that is simple and quick with very little clean up. I cooked in my cast iron skillet and it only needed an additional 5 minutes due to thicker chicken. I will definitely make this again using either cut of chicken.

This was VERY good. I used dijon mustard instead.

This recipe was mediocre at best. The chicken was juicy and tender, but everyone in my family felt the same way: it was flavorless. 
I won’t make it again.

Follow the recipe as written (not the video) - it's so delicious! The sauce is to die for, especially if you like your savoury food to be a little on the sweet side sometimes. Will definitely be added to our fall faves list.

Cooked this last night and it was absolutely DELICIOUS! I used sweet potato and apple cider to cook with  (I know the video contracts the written ingredients) I left the chicken in the over longer than 20mins. Not sure if my chicken was to thick or my oven isn’t as powerful but 20mins was not enough time. I paired it with a light salad so the plate didn’t look so empty. Definitely getting added to the dinner rotation

I just made it last night and my family loved it!  I think next time I'll add more chicken and another apple because we gobbled it all down so fast!

(We subbed dijon mustard for grainy mustard and seasoned the chicken with additional salt and pepper.)

SO good. I cooked the chicken a bit longer than recommended, and also brined it for about half a day before cooking. I’d recommend gradually adding the vinaigrette; it’s a decent-sized portion, so you may not use it all. Definitely making this again!

Delicious meal!  I cut recipe in half & we still had a serving leftover. I will share recipe with my adult kids who need healthy quick to prepare meals.

Do you prefer chicken breasts or chicken thighs?

Added a little fresh rosemary while roasting and seasoned the veggies as described in the recipe with the addition of garlic powder. it was delicious and a big hit! I’m ecstatic about a simple meal that’s also tasty. We prefer really seared chicken hence the darkness. I cooked the chicken for 15 minutes as recommended, but took it out half way and added the seasoned veggies on the stovetop and then placed back in the oven and it was perfect. I hate overcooked veggies so I was concerned about a 15 minute cook time.  Next time I’ll add another zucchini but it was delish.

I used boneless chicken breasts and it was excellent! The fresh basil and Parmesan at the end put it over the top. Easy, quick and delicious.

Made it tonight and it was delicious! Highly recommend the parmesan and basil garnish. Nice flavors.

I make this once a week! I usually have to cook the chicken at least 5 mins longer and need to be careful not to leave too much oil in the pan or the zucchini gets soggy, but it’s super yummy and great for leftovers.

Great recipe! I would personally use a little less oil and use chicken breasts instead of thighs, and do a couple more vegetables, but this is one of the best chicken recipes (even without these suggested changes) that I have ever tried! Thanks for posting this.

Inspired by the classic Italian pasta sauce, chicken thighs and new potatoes are flavoured with bacon and tomato in this easy one-pan meal.

Heat oven to 200C/180C fan/gas 6. Find a large roasting tin that will hold the chicken thighs and potatoes in a single layer. Halve the chilli, scrape out and discard the seeds if you don’t like it too hot, and remove the stalk. Put in a small food processor or mini chopper with the tomato purée, olive oil and garlic. Whizz to a paste, then spread over the chicken. Add the chicken and potatoes to the tin with a good grinding of black pepper and some salt, then mix everything together well with your hands. Add the thyme and roast for 30 mins.

Stir in the pancetta and roast for 15 mins more, then add the tomatoes and roast for another 15 mins until the tomatoes have softened and the chicken is cooked. Serve straight from the pan and eat with a green salad and some bread, if you like, for mopping up the juices.

Chicken thighs are flavored with fresh sage and cooked with a delicious sage butter orzo to create this One Pan Sage Butter Chicken and Orzo recipe.

One-Pan Sage Butter Chicken and Orzo

1.25 lb pack of boneless skinless chicken thighs

sage leaves

lemon (sliced)

Salt & black pepper (to taste)

garlic powder

poultry seasoning

smoked paprika

olive oil (extra virgin)

butter (unsalted)

½ large shallot (chopped)

orzo pasta

chicken broth

Place chicken thighs in a large bowl and add enough water to cover the chicken by about one inch. Add 2 tablespoons of salt, lemon slices, and sage leaves to the water and gently stir everything with a large spoon. Cover the bowl and place it in the fridge for at least 30 minutes, up to an hour.

Remove the bowl from the refrigerator and remove each piece of chicken and pat dry with paper towels. Discard the brining liquid but be sure to reserve the sage leaves.

Season chicken thighs on each side with salt &amp; pepper, garlic powder, poultry seasoning, and smoked paprika. Heat olive oil over medium-high heat in a large, heavy-bottomed skillet and place chicken thighs in skillet, smooth side down.

Cook chicken for 3-4 minutes, until a golden crust forms, then flip and cook an additional 3-4 minutes on the other side. Use tongs to transfer chicken to a paper-towel-lined plate.

Add butter to the same skillet that you cooked the chicken in. Once the butter has melted, add shallot, sage leaves, and garlic and cook for about a minute.

Add orzo to the skillet and cook for another minute or two, stirring constantly, to lightly toast orzo. Be careful not to scorch the sage leaves. Add chicken stock to the skillet and give everything a good stir with a wooden spoon, scraping up any browned bits from the bottom of the pan.

Bring orzo to a boil, then reduce heat to medium. Season with more salt and pepper to taste. Add chicken thighs back to the skillet with the orzo, smooth side facing up. Simmer orzo and chicken, uncovered for 10-12 minutes until the liquid has been absorbed and orzo is al dente.

Remove pan from heat and allow the dish to cool for 5-10 minutes. Garnish with fresh sage leaves and herbs. Enjoy!

Preheat oven to 400 degrees Fahrenheit. Whisk eggs and almond milk together and set aside.

Pour grapeseed oil into a 10 ½-inch oven-safe cast-iron skillet over medium heat. Once the oil is shimmering, stir in onion and cook 4 minutes, or until translucent. Stir in mushrooms, garlic, thyme, and salt, and cook 4 additional minutes, or until mushrooms soften and darken in color. Stir in spinach and cook 3 minutes, or until thawed (if frozen) and wilted.

Reduce the heat to low and pour the egg and milk mixture over the vegetables in the skillet. Stir in crumbled goat cheese, and cook 4 minutes, or until the eggs just begin to set.

Transfer the skillet to the oven and bake 8 minutes or until the center is no longer jiggly. When you insert a knife into the center, you should not see any raw egg.

Once cooked, remove the skillet from the oven and allow the frittata to rest for at least 5 minutes before slicing it into pieces and serving. To remove the frittata from the pan, you can either flip it over onto a dish or use a silicone spatula to transfer. Serve with fresh herbs, cherry tomatoes, and cracked pepper if desired.
