Baked Cod Fish

bread crumbs

Italian flat-leaf parsley (fresh, finely chopped)

garlic

Preheat oven to 400 °F

In a small bowl, combine the bread crumbs, parsley, garlic, oregano, and olive oil. Set aside.

Spray non-stick cooking spray on a baking sheet pan.

Place the fish fillet on sheet pan and season with salt and pepper according to personal preference.

Sprinkle breadcrumb mixture evenly over fish fillets.

Drizzle with about 1 tablespoon of olive oil.

Bake the fish for 12-15 minutes or until fish flakes easily and turns opaque in color (total time depends on the thickness of the fillet).

OPTIONAL: Serve with lemon wedges and a sprinkle of parsley.

Lemon Butter Baked Cod {The Best!}

unsalted butter (softened)

paprika

basil

black pepper

lemon (sliced)

tbsp parsley (finely chopped)

First, preheat your oven to 400 degrees F. Then, in a small bowl, mix butter, garlic, paprika, basil, salt and pepper. Set aside.

Take out 4 (6 ounce) fresh cod fillets and pat the extra moisture off of them using a paper towel. If they are frozen, make sure to thaw them out completely.

Then generously season the top and bottom of each fillet with salt and pepper.

Place the seasoned cod fillets into a small deep baking dish then evenly distribute the butter mixture on top.

Place a slice of lemon on top of each cod fillet and bake in the oven at 400 degrees F for about 14-15 minutes or until the cod is at least 145 degrees F in the center of the fish. A good way to tell your cod is fully cooked is when it is opaque and easily flaked with a fork.

Garnish the baked cod with 2 tablespoons of freshly chopped parsley. Serve with a side of vegetables, pasta, or rice.

Heat oven to 400 degrees. Place cod into a large baking dish.

In a small glass measuring cup combine oil and butter. Pour over cod.

Season cod with coriander, paprika and a large pinch of Kosher salt and fresh cracked pepper.

Then top it with lemon zest, sliced lemon, sliced garlic and capers. 

Bake for 15-20 minutes or until the cod flakes easily with a fork.

Garnish with a squeeze of fresh lemon juice and chopped cilantro.

Elegant enough for a dinner party but simple enough for a weeknight dinner - you are going to LOVE this Mediterranean baked fish.

Rarely cook with any white fish, as I’ve found  they usually turn out bland. This recipe was phenomenally delicious, decadent and SO EASY!! Definitely use the butter called for. Would be great for a guest dinner. Will be adding it to my favourite fish dinner recipes. Thank you

Super delicious, great flavors and so simple! I was wondering if you could do the same thing with chicken but maybe brown it first and bake it a little longer than the fish? Most Greek style chicken recipes have cherry tomatoes and my husband doesn't like them but he loved this. He's not a fish lover either...

I used red snapper fillet and this recipe was absolutely wonderful. The fish was flakey fork tender, tasty and delicious. I paired with cilantro basmati rice, cucumber/tomato salad, and spinach artichoke hummus w/pita triangles. Will definitely be adding this to my recipe book.

Made this using wild caught frozen cod and it turned out delicious. Everyone loved their portion and it was super easy to make. would definitely recommend trying this one.  At the end I decided to sprinkle freshly shredded parmesan cheese on the top only because we love that and broiled it for 2 minutes which looked beautiful including browning the lemon a little. thanks for a great recipe!

This dish was easy to prepare and tasted restaurant quality. My husband loved it and said it was my best fish recipe yet. Will definitely make again. Didn’t change anything, but I did use Corvina which is so mild and buttery, it went great with the other ingredients. Highly recommend!

This is delish. Flavorful and easy. I used less than half of the oil and butter drizzle. I loved the addition of the olives (didn't have capers and knew the kids would pick them off anyway).

This is a good recipe but I'm going to make some tweaks next time! The flavors were great but 15 minutes definitely overcooked what was a pretty thick piece of fresh cod. I'd also use a much smaller baking dish next time and omit the lemon slices, it added a slight bitterness. Thank you for sharing!

I made this tonight with Haddock.  It was super delicious and super easy.  Definitely a keeper!  I made the Quinoa Tabbouleh that you suggested, which my wife and I loved, but our daughter did not. This was so awesome and decadent tasting! My husband and I both enjoyed it immensely! I followed your recipe, but cooked it s little longer as my fillets were partially frozen
 I made homemade flax seed bread, and we sopped up the butter garlic oil with it. Also made sauteed fresh green beans,  mushrooms, garlic and roasted red peppers along with an italian tossed salad to go with it! My husband loved every part of this meal, as did I. One dish meal! Baked cod recipe with lemon butter and vegetables ready in 30 minutes! The cod fillets are tender flaky and oven baked to perfection, plus easy!

Baked Cod With Herb Lemon Butter Sauce

olive oil (divided)

½+ ¼ tsp coarse sea salt

zucchini (dice to rounds, about 2 medium zucchini)

carrots (diced to small cubes)

tbsp unsalted ghee

tbsp tahini (or pure sesame paste)

tsp lemon zest (about 1 whole lemon, save the lemon

parsley leaves (leaves only no stems)

cilantro leaves (leaves only no stems)

tbsp finely chopped chive

¼ tsp coarse sea salt (or

ground black pepper (or to taste)

Preheat

Season

Pat dry the cod and place them in a 12-inch round casserole skillet (or dish) that’s oven safe. Season the fish with 2 tbsp olive oil, ½ tsp salt, and a few rounds of black pepper.

Place the sliced zucchini around and between the fillets. Don’t cover the fillets so the fish can cook evenly. Add the diced carrots. Sprinkle ¼ tsp salt and 1 tbsp oil over the vegetables.

Bake

Send it to the oven, uncovered, in the middle rack for 20 minutes. The fish is cooked when the center internal temperature reaches 145°F (63°C), or until the fish is opaque and flakes easily with a fork.

Make

In the meantime, make the herb butter. Combine all the ingredients from butter to pepper in a small bowl. Use a fork to mash and combine well.

Combine

As soon as the fish is out of the oven, while it's still hot, drizzle with 1 more tbsp of olive oil. Add about 1 tbsp of the herb butter on top of each cod fillet. Cover the pan for 5 minutes to allow the butter to melt.

Serve

Drizzle with lemon juice and serve with sliced lemon wedges on the side. Serve immediately.

Preheat oven to 400 degrees.  Cover a large baking sheet with parchment paper.

Pat the cod fish very dry with paper towels. Place the fish fillets on the baking sheet and brush with olive oil.

Combine the lemon pepper, Cajun seasoning, salt, garlic powder, and onion powder in a small bowl or zipper bag. Sprinkle evenly over the filets.

Bake for 10 minutes or until the fish flakes easily with a fork at it&#8217;s thickest point.

Serve with fresh lemon wedges or spritz with fresh lemon juice

I love fish and this recipe will be perfect for my family.  The cajun spice might be too much for my daughter. 
 Can I delete using the cajun spice and do you have an idea for a substitute?
