Garlic Baked Whiting

whiting Online

Kosher salt

Â¼ tsp red pepper flakes

Preheat oven to 400Â°. Season whiting with salt and pepper and place on a small baking sheet.

Mix together butter, garlic, red pepper flakes, lemon juice, and zest then pour over whiting fillets.Â Place lemon rounds on top and around fillets.

Bake whiting for 10-12 minutes or until fish is fork tender.

Bay Scallop Alfredo

lb Bay scallops

fettuccine noodles

Tbsp butter

shallots,

dry white Vermouth

heavy cream

Parmesan cheese, shredded, reserve Â½ cup for garnish

parsley,

nutmeg

Salt and Pepper to taste

Prepare pasta according to package instructions.

In a large sautÃ© pan, over medium heat, sautÃ© shallots with butter until tender. Increase heat to high. Add wine and cream and bring to a gentle boil for 2 minutes. Reduce heat and slowly add cheese, stirring constantly until well blended. Add Bay Scallops, cooking only until heated through, 4 to 6 minutes. Season with nutmeg, salt and freshly ground black pepper.

Toss hot pasta with sauce and garnish with fresh chopped parsley and reserved Parmesan cheese.

Fried Oysters

lb (16 oz) oyster meat

White Flour

Milk

Panko breading (or your favorite breading)

Canola oil

Drain liquor from the oysters and pat dry

Put flour in a dish with salt and pepper. (Add garlic or ginger powder to your taste).

Mix enough egg and milk to dip your oysters, and scramble well.

Dip oyster first in flour; dredge in the egg and milk and last coat with the Panko.

Put about Â½ inch of oil (a spoonful of butter if you like) in a frying pan and turn to medium high. Make sure pan is hot before placing oysters in it.

Place oysters in the hot pan and cook 45 to 60 seconds per side or until breading is golden brown.

After cooking, place the oyster on paper towels to drain excess oil. Serve immediately.

Sauteed Sablefish with Ginger-Soy Glaze

(5- to 6-ounce) sablefish (black cod) fillets

Tbsp honey

Combine first 7 ingredients in an 11 x 7-inch baking dish. Add sablefish, turning to coat. Cover and marinate in the refrigerator for 20 minutes, turning after 10 minutes.

Remove fish from dish and reserve marinade. Sprinkle fish evenly with salt and pepper. Heat a large nonstick skillet or sautÃ© pan over medium-high heat. Add canola oil and lay fish in pan, skin side up. Cook 5 minutes on each side or until lightly browned and to desired degree of doneness.

While fish cooks, pour reserved marinade into a small saucepan. Bring to a boil and cook 7 minutes, or until marinade is thick enough to coat the back of a spoon.

To assemble: Place the ramen noodles on dish and place fillet on top of the bed of ramen. Brush fish with glaze and garnish with sliced green onions.

Salmon with Blueberry Pan Sauce

Tbsp olive oil

shallots

Heat 1 tablespoon oil in large skillet over medium heat and sautÃ© shallots until softened, about 5 minutes. Add garlic, salt, thyme, and cloves. Stir about 30 seconds.

Add blueberries, water, vinegar, and lemon juice. Stir to blend. Mash berries to your desired texture and cook 3 to 4 minutes, stirring frequently, until sauce thickens.

Brush salmon on both sides with oil; sprinkle with salt and pepper.

Brush grill pan or rack on the BBQ with oil and heat to medium high.

Grill salmon until just opaque in center, 4 to 5 minutes per side.

Spoon sauce over salmon. Serve immediately.

Spicy Baked Whiting

Pacific whiting fillets2 Tbsp olive oil

Rub ingredients:

garlic powder

parsley

onion powder

tsp red pepper flakes

lime juice

salt

In a baking pan, coat fish with olive oil. Then coat the fish in the spice mixture.

Place the fish the oven and bake for 10-15 minutes until fish is flaky.

Fish Bites with Tartar Sauce

lb Pacific pollock, whiting,

Tartar Sauce:

Tbsp reduced fat mayo

Tbsp Honey Greek Yogurt (non-fat)

Â½ Tbsp of Dill relish

Preheat oven to 450Â°F. Line a baking sheet with aluminum foil.

Cut fish into bite size pieces (2×1-inch). Pat fish dry with paper towel.

Combine bread crumbs and creole seasoning in a small bowl.

In another small bowl melt butter, add olive oil and a dash of salt.

Put flour on a small plate or bowl. Start dipping fish pieces. First into flour, then into butter mix, and finally in breading (make sure they are completely coated).

Set onto baking sheet and repeat until all fish pieces are breaded.

Spray bites with cooking spray, this will help brown the outer edge.

Bake for 12-15 minutes or until fish starts to flake.

Boulettes de Poisson

For the fish:

lb Whiting, Cod

Onion, chopped

Chile peppers, chopped

Parsley, chopped

Bread crumbs

milk

Salt and pepper

Add onion, chiles and parsley to to a food processor or large mortar and process until smooth. Add fish and process until smooth. Transfer to a bowl.

Stir the bread crumbs and milk together in a small bowl, then stir into the fish mixture. Season with salt and pepper.

Using oiled hands, form the fish mixture into golf ball-sized spheres and put them on a tray.

Heat the oil in a deep fryer or around 2-inch deep in a large pot to 365Â°F. Add a few of the fish balls and deep fry, turning often, until golden brown on the outside. Let drain on a wire rack or paper towel-lined plate and repeat with the remaining balls.

For the sauce, heat the 3 tablespoons of oil in a saucepan over medium flame. Add the onion, chiles and garlic and saute until the onions are translucent. Stir in the tomatoes and tomato paste and simmer for 4 minutes. Stir in the water and season with salt and pepper. Simmer for another 5 minutes.

Stir the fish balls into the tomato sauce and simmer another minute.

Mixed Seafood Pasta

lb seafood mix

oz spaghetti or other long pasta

tomato sauce

Tbsp parsley, chopped

Cook the spaghetti in a large pot of salted water according to package directions.

Drain the pasta and combine with heated sauce in a large saucepan.

Add the seafood mix, toss to coat with the sauce, and heat on medium until the seafood is hot, about 5 minutes. If your seafood is frozen, cook for 10 minutes or until all seafood is heated through.
