We cooked pork chops sous vide then breaded and finished them in the oven to get that crispy, crunchy crust using our faux fried technique.

Breaded Pork Chops Sous Vide

Salt (to taste)

Season pork chops with salt and pepper, then vacuum seal. Cook at 134 degrees for two to three hours. Remove pork chops. Pat dry. Individually, dunk each pork each in flour, then egg, then panko.

Preheat oven to 450°F. Use a roasting pan with a rack. Arrange pork chops on the rack. Spritz tops and sides with olive oil. (We use this Ideal Olive Oil Mister from The Fine Life.) Place pan in oven for a couple of minutes until tops turn golden brown. Remove pan. Flip pork chops. Spritz tops and sides with olive oil. Return to oven. Again, cook until tops become golden brown. Remember: the pork chop is already cooked. This exercise is all about developing the crispy, crunchy crust.

In a large pan or cast-iron Dutch oven, heat olive oil. Sauté onion, celery and garlic. When onion becomes translucent, mix in mushrooms. Cook for ten minutes, stirring frequently. Pour in chicken stock, red white vinegar and Worcestershire sauce. Place on lid, reduce heat to low and simmer for 20 minutes. Pour in cream of mushroom soup, and simmer until sauce reaches desired consistency—about 30 minutes.

Panko-crusted baked salmon! Salmon steaks or fillets coated in honey mustard, breaded with Japanese panko crumbs, and baked to perfection.

Panko-Crusted Baked Salmon

Preheat the oven to 400°F (convection or regular). Set the salmon on a foil-lined baking sheet skin side down. Sprinkle with salt and pepper.

In a small bowl, combine the honey mustard and 1 teaspoon of the thyme. In another small bowl, mix the panko with the remaining 1 teaspoon of thyme, 4 teaspoons of olive oil, parsley, and paprika. Add salt and pepper (a light sprinkle).

Using a small spoon, spread the mustard mixture on the salmon; top with the bread crumb mixture.

Roast the salmon for 12-14 minutes (test at 10) or until it is almost completely firm to the touch and flakes when poked with a fork. Serve at once.

A healthier choice, but one with an indulgent flavour, Baked Cauliflower Bites have crunch, heat, and spice.  They&#x27;re an appetizer everyone will devour!

Baked Cauliflower Bites

Preheat oven to 400 degrees.  Prepare a baking sheet by greasing it with a generous amount of cooking spray.  Set aside.

In a large mixing bowl, whisk the eggs.

Whisk in the buttermilk, sriracha, salt, and garlic powder.

Add the flour and cornstarch.  Whisk all together until a smooth batter is formed.

Add the cauliflower florets to the batter and toss well to coat.

Working with one floret at a time, remove it from the batter and gently tap off the excess batter.  Roll the floret into the panko and place on the prepared baking sheet.

Continue to do this until all of the florets have been coated.

Bake for 30 minutes.  Remove from oven, transfer to a serving plate and serve immediately.

Preheat oven to 350°. Heat oil in a large heavy ovenproof pot over medium. Cook garlic, stirring often, until golden, about 4 minutes. Add onion, anchovies (if using), and red pepper flakes and cook, stirring often, until onion is translucent, about 5 minutes. Stir in tomato paste and cook, stirring often, until slightly darkened, about 2 minutes. Add wine, bring to a boil, and cook until almost completely evaporated, about 1 minute. Add tomatoes, breaking up with your hands, and their juices; add basil and oregano and stir to combine. Swirl 1½ cups water into one tomato can, then the other, to rinse, and add to pot; season with salt. Transfer pot to oven; roast sauce, stirring halfway through, until thick and tomatoes are browned on top and around edges of pot, 2–2½ hours.

Let sauce cool slightly. Pass through the large holes of a food mill or process in a food processor until mostly smooth. Taste and season with salt.

Do Ahead: Sauce can be made 2 days ahead. Cover and chill.

Lightly season eggplant slices all over with salt; place in a single layer on several layers of paper towels inside a rimmed baking sheet. Top with another layer of paper towels and more slices; repeat as needed. Top with a final layer of paper towels, then another rimmed baking sheet; weigh down with a heavy pot. Let eggplant sit until it has released excess liquid, 45–60 minutes. This step gives the eggplant a creamy texture when baked.

Meanwhile, pulse panko, oregano, pepper, and ¾ cup Parmesan in a food processor until very finely ground. Transfer to a shallow bowl.

Preheat oven to 350°. Place flour in another shallow bowl and eggs in a third shallow bowl. Working one at a time, dredge eggplant slices in flour, then dip in egg, allowing excess to drip off. Coat in breadcrumbs, packing all around, then shaking off excess. Place on wire racks.

Heat ⅔ cup oil in a large skillet, preferably cast iron, over medium-high. Cook as many eggplant slices as will comfortably fit in pan, turning once, until deep golden, about 5 minutes. Transfer to paper towels and immediately press with more paper towel to absorb oil. Working in batches, repeat with remaining slices, adding remaining ⅔ cup oil and wiping out skillet as needed. Let cool. Taste and season with more salt if needed.

Toss chopped herbs, low-moisture mozzarella, and remaining ¾ cup Parmesan in a medium bowl. Spread 1 cup sauce over the bottom of a 13x9" baking pan; top with a layer of eggplant slices (trim as needed). Drizzle 1 cup sauce over and sprinkle with one-third of cheese mixture. Add another layer of eggplant, followed by 1 cup sauce and half of remaining cheese mixture. Repeat layers with remaining slices, sauce, and cheese mixture. Cover with foil and bake on a rimmed baking sheet until eggplant is custardy, 45–60 minutes.

Remove from oven and arrange fresh mozzarella over eggplant. Increase oven temperature to 425° and bake, uncovered, until cheese is bubbling and browned in spots, 15–20 minutes longer. Let rest 30 minutes. Top with basil leaves just before slicing.

Do Ahead: Eggplant Parmesan can be made 2 days ahead. Let cool; cover with foil and chill. Reheat in a 350° oven, uncovering halfway through, until bubbling gently at edges.

By placing whole, unwashed, plain and naked globe eggplants directly onto the stovetop burner grate and letting them burn until charred, hissing and collapsed, you bring a haunting smokiness and profound silkiness to the interior flesh that will have you hooked for the rest of your life. This way of cooking eggplant is a revelation in itself — easy, yet exciting and engaging — and requires nothing more of the home cook than a little seasoning at the end to be enjoyed, as is. But biting into a warm, crisp, golden fried croquette with that smoky, silken purée at its center is what restaurant-level complexity and satisfaction is all about. One key ingredient, but 11 steps to prepare it — that about sums up the difference between home cooking and restaurant excitement.

Smoky Eggplant Croquettes

large globe eggplants (about 2 1/2 pounds total)

Place the whole eggplants directly on the burner grids of the stovetop, and turn the flames to high. Let each eggplant start to blister, and steam, and char, turning each one a quarter turn every 3 or 4 minutes, until softened and hissing inside, the skins utterly blackened and cracked, and the flesh collapsing, 12 to 15 minutes. (You could also blister them under the broiler, set on an aluminum-foil-lined baking sheet a couple of inches from the heat and cook until charred all over.)

Remove the eggplants to a bowl. Cover with a lid or overturned bowl, and let them rest until cool enough to handle, about 30 minutes. Give this the time it takes; it will help with peeling them later and also lets them steep in their smoky juices. You can do this step ahead and let them cool in the refrigerator overnight as well, to be peeled the next day, which works beautifully.

Remove the scorched, carbonized skin from the soft, cooked-through eggplant. Discard all the black, bitter charred bits.

Strain the remaining eggplant, and save all the viscous smoky liquid that accumulates. I usually “rinse” the peeled eggplants in this strained liquid to remove any lingering flakes or chips of charred skin from the eggplant flesh. (Sometimes people are tempted to run the eggplant under the faucet for a second to remove the flecks, but using the liquid in the bowl is much better at retaining flavor.)

Chop the flesh to a fine dice, and place in a bowl. (I generally never remove the seeds unless I have bought an intensely loaded eggplant, in which case I’ll remove them if the seed sacs are pronounced and distracting.)

Stir in 3 tablespoons of the reserved smoky liquid, and the olive oil, then Microplane the garlic into the mixture. Season with salt, and stir well until the mixture is a bit creamy. Taste, and season to your palate by adding a few more drops of the smoky liquid or a few more of olive oil. I like mine rather smoky, rather salty, rather unctuous.

Spread the eggplant mixture into an 8-inch square, about 1/2-inch thick, on a quarter sheet pan lined with a quarter-cut Silpat mat. Most people will not have these two things, so alternatively you can form a neat square or rectangle on a cookie sheet, or spoon the mixture into generally quenelled shapes onto a cookie sheet. Freeze overnight.

Prepare the croquettes: Set up a standard breading procedure of three containers: flour, egg and water mixture, and the ground panko.

Cut the frozen block of smoky eggplant into 2-inch squares, or batons or planks if you prefer. Refreeze for a bit if needed after cutting; they tend to defrost rather quickly. Bread each piece with care, dipping in flour, egg mixture then panko, leaving no bald spots, and refreeze the finished, breaded croquettes. (These can live in your freezer for months.)

Add enough neutral oil to a deep-sided sauté pan to reach a depth of 1 1/2 to 2 inches, and heat over medium until shimmering, or when a thermometer reads 350 degrees. Working in batches, fry the frozen croquettes until golden on all sides and piping hot in the center, raising and lowering the heat under the oil accordingly. Adding frozen products to hot oil brings the temperature down, as does crowding, so it is up to the cook to control the temperature of the fry oil accordingly. Remove cooked croquettes with a slotted spoon, and drain on a baker’s rack to maintain crispness (rather than a paper towel or plate, which will encourage steaming and sogginess).

Sprinkle with a little salt while still very hot, and serve with a squeeze of lemon.

The best homemade Japanese deep fried pork cutlet (tonkatsu recipe) ever. Crispy on the outside and juicy on the inside, a family favorite!

Tonkatsu

pork loin chops (½ inch thick)

salt (I use Diamond Crystal; Use half for table salt)

Tbsp all-purpose flour (plain flour)

egg (50 g w/o shell)

½ Tbsp neutral-flavored oil (vegetable, canola, etc)

Panko (Japanese breadcrumbs) ((30 g;

neutral-flavored oil (vegetable, canola, etc) ((720 ml;

Tonkatsu Sauce ((See Notes for homemade recipe))

For Tonkatsu, I highly recommend to use fresh panko (we call it "Nama Panko"). It's fresh bread crumbs not dried one. You can use food processor to make fresh panko from white bread (use only soft part of bread). Or you can spray regular panko with water and leave for 15 minutes. Also, when you select panko, look for packages with bigger crumbs as they are suitable for Tonkatsu.

Remove the extra fat and make a couple of slits on the connective tissue between the meat and fat. The reason why you do this is that red meat and fat have different elasticity, and when they are cooked they will shrink and expand at different rates. This will allow Tonkatsu to stay nice and flat when deep frying and prevent it from curling up.

Pound the meat with a meat pounder, or if you don’t have one then just use the back of knife to pound. When using knife, crisscross by first pounding top to bottom then left to right.

Mold the extended meat back into original shape with your hands.

Season the meat with salt and pepper.

In a large bowl or plate, add ½ Tbsp. of oil for each egg you use and whisk them up. By adding oil, the meat and breaded coating won’t detach from each other while deep frying.

Dredge in flour and remove excess flour.

Dip in egg mixture.

Dredge in panko. After removing excess panko, press gently. While deep frying panko will “pop up” so at this moment they don’t have to be fluffy.

Heat oil in a wok over medium high heat and wait till oil gets 350F (180C). If you don’t have a thermometer, stick a chopstick in the oil and see if tiny bubbles start to appear around the tip of the chopstick. Alternatively, you can drop one piece of panko into the oil, and if it sinks down to the middle of oil and comes right up, then that’s around 350F (180C) as well. When the oil reaches to that temperature, gently lower Tonkatsu into the oil. Keep watching the oil’s temperature and make sure it doesn’t go over 350F (180C) or else it’ll look burnt.

Deep fry for 1 minute on one side and flip to cook the other side for 1 minute. If your pork chop is thinner than ¾ inch, then reduce to 45 seconds for each side.

Now take the Tonkatsu out and get rid of the oil by holding Tonkatsu vertically for a few seconds. Place on top of wire rack (if wire rack is not available, substitute with paper towel) and let it sit for 4 minutes. The hot oil on exterior is slowly cooking the meat as it sits. Please do not cut to check whether the inside is cooked or not. We need to keep it closed to retain the heat. While waiting, you can scoop up fried crumbs in the oil with mesh strainer.

After resting for 4 minutes, bring the oil back to 350F (180C) of oil again and deep fry Tonkatsu for 1 minute (about 30 seconds each side).

Poke the meat with a chopstick and if clear liquid comes out then it’s done. Drain the oil by holding the Tonkatsu vertically again for a few seconds. Then leave it on top of rack/paper towel for 2 minutes. If you have to use paper towel, try to keep Tonkatsu in a vertical position so it does not get soggy on one side.

Cut Tonkatsu into 3 large pieces (see below) by pressing the knife directly down instead of moving back and forth. This way the breading will not come off. Then cut again in between. Transfer to a plate and serve immediately.

You can store the leftover in an airtight container and freeze up to a month. To reheat, put the defrosted or frozen tonkatsu on a baking sheet lined with aluminum foil or parchment paper. Bake at 350 ºF (180 ºC) for 15-20 minutes for defrosted ones or 30-40 minutes for frozen ones. Check if the inside is warm before serving.

This approachable weeknight dinner takes its cue from Japanese grilled chicken meatballs (tsukune), and the glossy, sweet-and-sour sauce that comes with it.

Sheet-Pan Chicken Meatballs

Mix ketchup, Worcestershire sauce, wine (if using), honey, soy sauce, ginger, and pepper in a small saucepan. Measure out ¼ cup mixture into a small bowl; set aside for glazing meatballs later. Bring remaining mixture to a simmer over medium-high heat, stirring occasionally and reducing heat if needed, until sauce thickens, about 5 minutes. Transfer sauce to a small bowl.

Place a rack in upper third of oven; preheat to 450°. Line a rimmed baking sheet with foil. Trim broccoli stems and remove from crown. Peel off tough outer skin; slice crosswise into ½" pieces. Cut florets into 2" pieces. Toss on prepared baking sheet with 1 Tbsp. vegetable oil, 1 tsp. salt, and a few pinches of red pepper flakes (if using). Push to the edges of baking sheet to create a space for meatballs. Brush space with remaining 1 Tbsp. vegetable oil.

Mix chicken, egg, scallions, garlic, ginger, panko, sesame oil, pepper, remaining 1½ tsp. salt, and ¼ cup water in a medium bowl. Using wet hands, form into twelve 1½"-diameter meatballs. Arrange on baking sheet; brush with some of the reserved glazing mixture. Bake until meatballs are cooked through, 14–18 minutes. Remove from oven; heat broiler. Brush meatballs with remaining glazing mixture; broil until broccoli is charred and meatballs are browned in spots, about 5 minutes.

Spoon meatballs and broccoli over rice in bowl. Drizzle with sauce and sprinkle with sesame seeds.

These mildly spiced meatballs are the essence of winter comfort food, just the kind of thing you’ll want to come in from a blustery day to enjoy. Serve them with mashed potatoes and lingonberry jam, if you want something sweet.

In a medium bowl, soak bread crumbs in warm milk while you prepare the onions.

In a large skillet over medium heat, melt 1 tablespoon of butter. Stir in onions and a pinch of salt and cook until pale golden, about 3 to 4 minutes. Transfer half the onions to a large bowl and set aside.

Prepare sauce: Add brandy to skillet with onions and ignite with a long match or igniter (or if you’re using a gas stove, just swirl pan, brandy should catch fire). Let flame die down, then add the remaining butter, letting it melt. Sprinkle in flour. Sauté until flour browns, about 3 minutes. Whisk in broth, cream and 1/4 teaspoon salt. Simmer, whisking, until reduced to a sauce, about 5 minutes. Add mustard, if you like, and season with more salt, if needed.

To large bowl with onion, add remaining 1 3/4 teaspoons salt, soaked bread crumbs, beef, pork, eggs, garlic, pepper, allspice, ginger, nutmeg and cloves. Roll into 1-inch balls (about 2 tablespoons each), placing them on one or two rimmed baking sheets as you go.

Heat broiler. Drizzle meatballs with oil. Broil meatballs, switching pans' positions if using more than one so they both get close to the broiler, until well browned all over, 5 to 10 minutes. Serve with gravy, garnished with herbs.

These beef and pork meatballs are seasoned with a rich combination of ginger, allspice, cloves and nutmeg.
