Classic Peach Pie Recipe - This Classic Peach Pie Recipe is a summer staple! Made with a lattice-topped double crust and filled with delicious peaches!

Preheat oven to 425ºF.

Prepare two pie crusts according to instructions in the recipe. Arrange one pie crust dough into a pie dish and freeze according to the instructions. Roll the second pie crust dough and cut into 1-inch thick strips, refrigerate until ready to top the peach pie.

Place the peaches, sugar, and flour in a large saucepan set over low heat. Stir well and simmer over low heat until a thick syrup has formed, about 10 minutes. Remove from heat and set aside and allow to cool slightly.

Remove pie plate from the freezer and the strips from the refrigerator. Pour peaches on top of the bottom dough. Arrange the strips on top of peaches in a lattice pattern. Brush with melted butter and sprinkle top of cobbler with 2 tablespoons sugar.

Place the pie into the oven and bake until the crust has browned, about 30 minutes. Remove from the oven and allow to rest about 5 minutes before serving.

Easy Mini Peach Pies

milk

vanilla ice cream, (for serving)

Preheat oven to 350 degrees F. Coat 4 muffin tin slots with nonstick cooking spray. Set aside.

In a small bowl, beat the egg with a little splash of milk to make an egg wash.

In a small bowl, mix the peaches, peach jam, brown sugar, cinnamon, and salt.

With your first crust, cut out 4, 5-inch rounds and gently press into each muffin cup, leaving a slight overhang.

Evenly distribute the peach mixture into each cup.

With the second crust, cut out 4, 3-inch rounds and place on top of each muffin cup, crimping the bottom and top crusts together.

Pierce the top crusts with a knife and brush with the egg wash. Sprinkle with a little granulated sugar.

Bake until golden and peaches are tender, about 35 minutes.

Let cool for a few minutes and enjoy with some vanilla ice cream!

Treat yourself to a slice of this homemade Brown Sugar Peach Crumble Pie! This recipe combines ripe, juicy yellow peaches with a brown sugar crumble that will melt in your mouth, and it's all baked in a buttery, flaky homemade pie crust. The best experience is serving it up warm with a scoop of ice cream!

Brown Sugar Peach Crumble Pie

All-Purpose Flour

Salt

tbsp Unsalted Butter

Vegetable Shortening

Light Brown Sugar (lightly packed)

Old Fashioned Oats

Sliced Fresh Peaches (approximately 5 medium-size peaches)

Sugar

Cornstarch

tsp Vanilla Extract

Lemon

In a large mixing bowl and using a pastry blender (or two forks), mix together the flour, salt, cold cubed butter, and cold vegetable shortening until you have small pea-size pieces. Some larger pea-size pieces are fine too! You can use a knife to clear out the pastry blender if it gets clogged as you mix everything together.

Add in the ice cold water 1 tablespoon at a time, and using a spatula or your hands, mix together until the pie dough can form a ball and it is no longer crumbly. If there are any crumbly bits, just add the tiniest bit of cold water so they blend in with the rest of the dough.

After forming the ball of pie dough, place it on a lightly-floured, clean surface and pat it into a 1"-1 1/2" thick disc. Then double wrap tightly in plastic wrap and place in the coldest part of your refrigerator (usually the back) for a minimum of 1 hour or overnight (preferred).

In a medium bowl and using a pastry cutter (or two forks), blend together the all-purpose flour, light brown sugar, old fashioned oats, and cold unsalted cubed butter until the crumble mixture forms. Set aside.

Adjust the oven rack to the 2nd level position and preheat the oven to 425ºF.

On a well-floured, clean surface, roll out the pie dough disc you made earlier (or unroll if using store-bought) and carefully place into the 10" skillet. Trim and/or fold in any excess pie dough, then place it back in the refrigerator as you make the peach pie pie filling.

In a large bowl, mix together the sliced peaches, light brown sugar, granulated sugar, corn starch, vanilla extract, lemon juice, and cubed pieces of butter until well coated. The mixture will start to become juicy—that's okay!

Take out the pie plate out from the refrigerator and carefully add in a layer of peach pie filling using a slotted spoon to drain the excess juices. Then top with a layer of the brown sugar crumble. Repeat again until you've used up both the pie filling and the crumble.

Optional step - using a pastry brush, lightly brush the egg white along the pie crust edges. You won't need to use all it—just a little coverage will be good.

Place the pie in the oven and bake for 15 minutes at 425ºF. Optionally, you can place a jelly roll pan on the oven rack below the pie to catch any possible run-off juices. 

After 15 minutes, decrease the oven temperature to 375ºF and bake for an additional 40-45 minutes. At this time, if you'd like to, you can add a pie crust shield to avoid burning your pie crust edges. You can use something like the one I just bought or you can simply use pieces of aluminum foil to place around the edges.

Once done, remove the skillet from oven and allow to cool completely.

Grandma's Peach Pie

store bought pie dough

oz canned peaches (drained)

white sugar

tsp cinnamon

lemon juice

tbsp vanilla extract

all purpose flour

unsalted butter

egg (beaten)

Preheat the oven to 350 F.

Grab a 9 inch pie pan, and add in one of the store bought pie crust . Set to the side.

In a large mixing bowl add in the peaches, sugar, vanilla, lemon juice, cinnamon, and nutmeg. Stir until well combined.

Now sprinkle in the all purpose flour, and fold the ingredients until everything is well incorporated.

Toss in the butter, and fold the ingredients.

Next, pour the peach mixture into the pie dish on top of the crust.

Top off with the remaining crust. You can leave the crust whole or do a lattice topping!

Brush the crust with the beaten egg.

Bake the pie in the oven for 50-55 minutes.

Serve with ice cream &amp; enjoy!

Honey Strawberry Peach Pie.

all-purpose flour (plus more for rolling)

(toasted pecans (see notes) (or more flour))

(2 sticks) chilled unsalted butter

buttermilk (plus more if needed)

peaches (about 5 peaches)

strawberries (hulled + halved)

honey

vanilla

bourbon (optional)

butter (sliced thinly)

coarse sugar (for sprinkling)

Place the all-purpose flour, finely ground pecans and salt in a large bowl. Add butter and use your fingers to break the butter into the flour until mixture resembles small peas. Whisk the egg yolk with 1/4 cup cold buttermilk in a small bowl and then add the egg mixture to the flour mixture. Mix with a wooden spoon, drizzle in more buttermilk as needed (no more than 1 tablespoon at a time), until dough just comes together (a few dry spots are ok). Gently knead the dough on a lightly floured surface until no dry spots remain, about 1 minute. Divide the dough in half. Shape each piece into a circular disk. At this point you can cover the dough and place it in the fridge for up to one week OR continue on with the recipe...yes, no chilling needed!

Crust

Grease an 8 or 9-inch pie plate.

In a large bowl toss together the peaches, strawberries, brown sugar, honey, flour, vanilla extract and bourbon. Toss well to coat, making sure everything is well mixed. Spoon the filling into the prepared pie plate. Make sure to scrape in all the good juices left in the bowl! Add the pats of butter over top of the fruit.

Grab the reserved pie round and cut into 1 inch thick strips. Weave the strips back and forth to create a lattice top: gently thread the strips over and under each other, pulling the strips back and forth as necessary to create the lattice. Push the edges of the top crust into the pie plate and then crimp the edges of the bottom crust together with the top crust. You can crimp fancy or crimp simple. Brush the top crust with the beaten egg and sprinkle the pie with course sugar.

Cover and chill pie until crust is firm, at least 1 hour or up to 2 days.

Preheat the oven to 350 degrees F. Place pie on a baking sheet and bake until juices are bubbling and crust is deep golden brown, about 1 hour. If the crust is getting too brown, tent with foil. Transfer to a wire rack and let cool before cutting. Serve with a scoop...or two of ice cream!

To make the pie

This has to be by far one of my favorite pies.  I am not a huge pie fan but this is an awesome recipe that I've used for awhile now.  Perfect to use up those in season peaches.  A scoop of vanilla ice cream is also yummy on top of this pie but just awesome without as well!

Mix all of the ingredients together (except for the bread and 1 stick butter) in a large bowl and mix until apples are fully covered with the mixture.

Butter two pieces of bread, both sides.

Place a piece of bread on the bottom of the pie cooker. Fill it with the apple mixture (pile it high) then place the other piece of bread on top and close the pie cooker

Hold over a fire, until each side is golden brown.

Preheat oven to 450 degrees.

Roll out refrigerated pie crust to make it large enough to fit in the bottom of a pie plate and leave a 2 inch overlap on top.  

Place pie crust in bottom of pie plate.

For a thicker filling, mix peach jam with 1 Tablespoon of cornstarch and spread jam on pie crust.

Thinly slice 6 fresh peaches in half moon shape.

Arrange slices in a circular pattern on top of jam. Start on the outside and press into jam as you go. Finish with another circular pattern in the middle.

Fold 2 inch overlap over peaches, leaving a large area open in the middle.

Brush pie crust with melted butter.  Dust with sugar if desired.

Bake at 450 degrees for 20 to 25 minutes until golden brown.

Cool pie completely before serving so it has time to set.

In a large bowl, combine the flour, sugar, salt, butter and shortening until the mixture resembles crumbs.

Add the water, about 2 tablespoons at a time, and combine after each addition until the dough starts to come together.

Turn the dough onto a floured surface and knead gently until smooth. Divide the dough in two, shape it into a disk and wrap it with plastic wrap. Chill for at least two hours.

Preheat the oven to 425°F. Whisk together the granulated sugar, flour, cinnamon, and nutmeg in a small bowl.

Peel and slice the peaches, then let drain the excess juices through a colander for 30 minutes. Place the peaches in a large dish and squeeze in a lemon for about 2 tablespoons.

Toss to make sure the pieces are covered with the flour-sugar mixture.

Roll out the first dough disk and place it in a 9-inch pie plate.

Pour the peach filling into the prepared pie plate.

Roll out the second disk, divide it into many strips and place them on top of the filling creating a lattice crust. Wet the edges of the bottom pastry to make sure the top pastry sticks to the bottom and pinch the bottom and top edges to seal them.

In a small bowl, whisk together the egg yolk with water to make an egg wash. Brush the egg wash across the top of the pie crust.

Sprinkle with a pinch of granulated sugar.

Make sure to coat well the top with sugar.

Bake the peach pie 15 minutes, reduce the heat to 375°F, and continue to bake for 30-35 minutes.
