In a food processor, combine the pine nuts, lemon juice, garlic, salt, pepper, and pulse until well chopped.

With the food processor running, drizzle in the olive oil and pulse until combined. Add the parmesan cheese, if using, and pulse to briefly combine. For a smoother pesto, add more olive oil.

(60 grams/2 ounces) fresh basil leaves, packed (Note 1)

tbsp extra virgin olive oil (, best quality)

Preheat small skillet over medium high heat (no oil). Add pine nuts and toast until light brown. Immediately remove and let cool slightly.

Place all ingredients except olive oil in a food processor or blender.

Blitz until finely chopped.

With the motor running, slowly pour the oil in. Blitz until smooth (or to desired consistency), adding a touch of extra oil (or water) if required to help it blitz.

Handheld blender: Place all ingredients (including oil) in a bowl. Blitz with hand held blender until smooth.

Store in a super airtight container in the fridge for up to 3 days, or freezer for 3 months. If it's not a super airtight container, smooth the surface and cover with a thin layer of olive oil - basil goes brown when in contact with air.

Storage and Use:

This sauce is rich and creamy and so yum. Throw in some grilled chicken, shrimp or broccoli to change it up.

This Arugula Pesto recipe with walnuts and basil combines the peppery flavor of arugula with sweet basil, garlic, walnuts and olive oil to make a twist on traditional pesto sauce.

Easy Homemade Pesto Without Pine Nuts

Bring a deep pot of water to a boil. Get a deep bowl of ice water ready.

While the water is coming to a boil, pull the tender leaves of basil from their stems and set aside.

Once the water comes to a boil blanch the leaves for no more than 15 seconds in the water by submerging them with the wire strainer.

Remove them with the wire spider/strainer and shock them in the ice water to stop them from cooking.

Press the water out of the leaves by placing them in a potato ricer and squeeze. You may have to do this in several batches. If you don&#039;t have a ricer put in-between paper towels and press to remove the water.

Combine the basil, garlic, nuts, and lemon in a food processor or blender until finely chopped.

Add the Parmesan cheese and begin to stream in 1/2 cup of the olive oil and process until fully incorporated and smooth.

Season with salt and pepper. Taste and add more salt, garlic, nuts, cheese, or oil as needed.

Place in jar and pour a bit of the saved olive oil on top and refrigerate. When ready to use stir in the oil and get creative with the delicious pesto.

This Basil Pesto with Almonds comes together in minutes and only requires a few common ingredients. &nbsp;It's a fantastic condiment that can be used in a variety of ways.

In a food processor or blender, add the basil, almonds, parmesan, garlic, salt, and pepper. Turn on the processor for about 15 seconds to break down the ingredients. Scrape down the sides of the processor.

Pesto Genovese is an uncooked cold sauce made only with 7 ingredients: Genovese basil DOP, extra virgin olive oil (Possibly of the Ligurian Riviera), Parmigiano Reggiano (or Grana Padano), Pecorino cheese (Fiore Sardo), pine nuts, garlic and salt. It was born in Liguria, a beautiful region situated in northern Italy. It's one of the sauces most used in our country and nowadays it's famous all over the world.

Pesto Genovese | Authentic Italian Basil Pesto

g of small basil leaves (about 60/65 leaves)

70 g (½ cup) of Parmigiano Reggiano or Grana Padano

g (2 tablespoons) of Pecorino Fiore Sardo

Blend the ingredients

Wash and dry the basil leaves very well on a kitchen towel. Place them in a food processor with garlic, pine nuts and grated Parmigiano. Chop coarsely for a few seconds then add salt and Pecorino Fiore Sardo cheese cut into small pieces. Blend all the ingredients for about 1 minute.

Add extra virgin olive oil

Add extra virgin olive oil. Blend for about 5 minutes, until you’ll get a creamy green pesto sauce. Pesto must not heat up, so be careful to work quickly, using the food processor at minimum speed and at intervals, that is, blend a few seconds, stop and start again.

Add some cooking water

Before seasoning your pasta dish, if the basil pesto is too thick, add 1 or 2 tablespoons of the cooking water; this way you’ll have a warm homogeneous soft pesto sauce.

Set out a food processor. Place the basil leaves, pine nuts, pecorino cheese, garlic clove, and lemon zest in the food processor. Cover and pulse until finely ground.

Then add in the olive oil, ½ teaspoon salt, and ¼ teaspoon ground pepper. Pulse again until a smooth, thick pesto sauce is formed.

Add 3/4 cup heavy cream. Pulse just a few times to incorporate the cream. Add an additional 1/4 cup of heavy cream if needed. However, if the sauce is too thick, you can thin it out with a little water.

Taste, then salt and pepper as needed. Refrigerate until ready to use.
