Brush pizzelle iron lightly with oil then turn on.

Whisk together flour, baking powder and salt.

In a large bowl beat eggs and sugar on high for 3-4 minutes or until thicker and light yellow.

Mix in the melted butter, vanilla, and anise if using.

Add the dry ingredients to the wet and mix until just combined.

Add a heaping tablespoon for each pizzella into our hot iron. Place the batter just behind the center closer to the hinge then cook for 60-90 seconds or until golden.

Italian Pizzelle Cookies are light and crisp, made lighter with less butter and sugar for a tasty holiday treat.

In a large bowl, beat egg, egg white and sugar until thick.

Stir in the melted butter, milk and vanilla.

Sift together the flour and baking powder, and blend into the batter until smooth.

Heat the pizzelle iron. Lightly spray iron with oil.

Drop about one level tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron.

Bake about 45 to 50 seconds, or until steam is no longer coming out of the iron.

Carefully remove cookies from the iron and transfer to a cooling rack.

Repeat with spray and batter.

Cool completely before storing in an airtight container.

To serve, top with powdered sugar.

The Very Best Pizzelle Cookie Recipe

Pizzelles are classic Italian cookies flavored with anise and made in a pizzelle maker.

Classic Italian Pizzelle: My Family recipe

Whisk together your eggs, sugar, vanilla and anise (see how to measure anise above) in a medium bowl.

Now add your flour, salt and baking powder and mix it well until there are no lumps and it looks smooth.

Now add your melted butter and mix that in to your mixture.

Pre-heat your pizzelle maker. They are all a little different so follow the manufacturers instructions for this.

Once it is heated, add a heaping tablespoon of your thick dough to the middle of each of your pizzelle areas on the iron. Close and cook for about 30-45 seconds until it is a light golden color. If the pizzelle is too light in color you can just close the pizzelle maker and cook the pizzelle for a few more seconds.

Once they are cooked, remove the pizzelles from the iron (they will still be soft and pliable at this point) and place on a cooling rack where they will cool and get nice and crispy. Keep doing this until all the dough is used up!

Once all of your pizzelles are fully cooked and cooled, you can go ahead and clean them up if you would like by lightly breaking off any parts of the pizzelle that went beyond the design edge. I find this to be relaxing but it is not necessary :)

Stack them up or fan them out on a plate and eat them as is or with a light dusting of powdered sugar. Serve with tea or Italian coffee and Enjoy!

Preheat pizzelle iron according to manufacture&#39;s instructions.

In a medium bowl lightly whisk together eggs, sugar, olive oil and lemon zest until combined. Stir in flour and salt.

The batter should be a thick cake batter consistency which falls easily from a spoon. It shouldn&#39;t be thin enough to pour off a spoon. If necessary, incorporate a little more flour.

Heat your pizzelle iron. Mine took almost 10 minutes, so get this started while you are making the batter.

Mix flours, baking powder, and salt in a small bowl and set aside.

Zest your lemons.

Beat eggs until light and fluffy. Add sugar, lemon zest, and vanilla, and continue to beat. Next is the melted butter. Last up is the flour mixture. flour this in carefully to not over mix.

Let the batter sit for an hour to hydrate the ingredients.

If the iron is heated, drop by the tablespoon onto the griddle.  Close and let cook. Check it occasionally to see if it is cooked to the desired color.

It will take about 20 seconds to 1 minute, depending on your iron.

You can eat these just like they are, or dusted with flour. They are also good with lemon curd, berries, ice cream, whip cream, etc.

In a high powered blender or food processor, combine the eggs, sweetener, and extract of choice. Blend a few seconds to combine. Through the whole in the lid, slowly drizzle in the butter with the blender on low speed.

Once all of the butter is comined, add the almond flour, baking powder, and salt and blend 30 seconds to combine. Let rest to thicken while heating the pizzelle maker.

Preheat the oven to 200F and line several cookie sheets with wire cooling racks.

Heat pizzelle press according to manufacturer&#039;s directions. Grease very lightly (if you have a non-stick press, you may only need to grease once at the beginning).

Use one slightly heaping tablespoon for each pizzelle, and place just behind the center of the the flower or waffle pattern (this helps when you close the press because the batter gets pushed forward). It may take you a few tries to get the amount of batter and the placement just right.

Close the lid slowly to allow the batter to spread, then lock the lid in place. Cook until just barely golden brown, about 30 to 60 seconds. You can peek at them and see if they are cooked yet and then reclose the lid.

Use a rubber spatula to remove the pizzelle from press and place in a single layer on the cooling racks. At this point they will be very soft. You cut off any of the edges that went outside of the pizzelle pattern, before they get crisp.

Place the cookie sheets in the oven and let the pizzelle stay inside for 15 to 20 minutes to crisp up.

Repeat with the remaining batter.

Spread 1 keto pizzelle with about 1 1/2 tbsp of keto caramel sauce. Top with another pizzelle. Repeat with remaining cookies and caramel sauce.

These are best served when freshly made, as the caramel sauce can cause the cookies to soften.
