Peanut Butter Protein Cookies

Preheat oven to 350 degrees.

Line a baking sheet with parchment paper and set aside.

Combine the peanut butter, coconut sugar, eggs, and vanilla protein powder in a large bowl and mix together until the consistency resembles cookie dough. (Some peanut butters can be creamier than others - so if your mixture looks a little too liquidy, you can add a little more protein powder or, if it looks too dry and crumbly, you can add a little more peanut butter.)

Scoop out about 2 tablespoons of the batter and roll it into a ball using your hands. You may need to wet your hands with a few drops of water to keep the batter from sticking.

Flatten the ball between your palms and then place on the prepared cookie sheet.

Repeat with the remaining dough, leaving space in between the cookies on the baking sheet.

Using a fork, press down gently on each cookie to create criss-cross marks. If the fork sticks, you can dip it in water as necessary.

Transfer the cookie sheet into the oven and bake for 10-12 minutes, or until the edges of the cookies just slightly start to turn brown.

Remove from the oven and let sit for a couple minutes to set before moving to a cooling rack to cool completely.

Preheat oven to 350 degrees F.

Use a food processor to finely grind 1 cup of the oats into a flour.

Combine ground and whole oats, protein powder, baking soda, and salt in a small bowl. Set aside.

In a large mixing bowl, cream together the softened butter and sugar.

Add egg and vanilla to the mixing bowl, mix until combined.

Slowly incorporate the dry ingredients into the mixing bowl.

Stir in the chocolate chips by hand.

Scoop cookies into balls onto a cookie sheet lined with parchment paper or a baking mat.

Slightly pat the cookies down with your hand, as they don't spread too much on their own.

Bake for 8-10 minutes, until the bottoms are just lightly starting to brown.

Preheat oven to 350 degrees F. Line 2 sheet pans with parchment or silicon baking mats. 

Move oven racks to the second from top and second from bottom slots.

In a medium bowl, mash the bananas. 

Add the oats, protein powder, egg, cinnamon, salt, vanilla, and peanut butter and chocolate chips and mix with a fork until combined.

Scoop ¼ cup of mixture and place on a baking sheet, flatten the top slightly with the back of the measuring cup.  Repeat with remaining mixture, adding 4 cookies to each sheet.

Bake for 16 to 20 minutes, rotating pans ½ through bake time to allow for even browning.

Allow to cool 5 minutes on the pan then transfer to a wire rack to cool completely.

Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper.

In a medium mixing bowl, add the peanut butter, maple syrup and vanilla, and mix well. Use a fork or silicone spatula to ensure the ingredients are well combined.

In a separate, small bowl, whisk together the almond flour, baking soda and the salt. Then add the dry ingredients to the bowl of wet. Mix well. The batter will be sticky and thick, but just keep mixing until incorporated.

Divide the mixture into 16 balls of dough and place on your tray. Then using a slightly wet fork, press down on each ball to form a crisscross pattern on top of each cookie.

Bake for 10 minutes, then remove from the oven and let cool for 10 minutes and do not touch the cookies during this time. After the 10 minute rest, transfer the cookies to a cooling rack for another 5-10 minutes. This cooling off period is crucial for the cookies to completely set and for the edges to get nice and crunchy.

Perfect Protein Cookies (protein powder recipe)

1.7 oz butter ((room temperature))

almond milk ((up to 4 tbsp depending on the protein powder))

In a bowl add the room temp. butter, sugar and vanilla extract. Whip the butter with a hand mixer or a whisk until the butter is creamy, fluffy and pale. About 3-4 minutes.

Add the egg and mix until you have a completely incorporated creamy mix, about 2 minutes (if this begins to look slightly curdled, don’t worry).

Add the almond milk, flour, protein powder and salt. If you are using a stand mixer, use the flat beater. If you are using a hand mixer, remove the whisks and use a rubber spatula. Either way, mix just until the solids are evenly incorporated into the cookie dough (30 seconds up to a minute). It’s very important not to overmix, otherwise the cookies will be tough.

Once the dough is ready, add the chopped cranberries and evenly spread them into the dough.

Cover and allow to rest in the fridge for at least 30 minutes up to 2 days.
