An easy chicken salad, perfect for work lunches throughout the week or a snack.

Easy Chicken Salad

lbs Rotisserie Chicken (*Grocery store rotisserie chicken works

Cups Mayo (I used Duke's Mayo)

Dijon Mustard

Cup Chopped Celery

Cup Chopped Red Onion

Cup Chopped Green Onion

Cup Shredded Carrots

Garlic Cloves

tbsp Basil Paste

Pepper (Season to taste)

Herbs de Provence Seasoning (Season to taste)

Shred rotisserie chicken = in to small pieces using knife and/or fork.  Use all pieces of the chicken including wings and drumsticks.  Add the chicken skin as well if you would like.

Add mayo, dijon mustard, basil, carrots, celery, red onion, green onion, garlic, pepper and herbs de provence seasoning to the chicken.  Stir until completely combined and taste.  Add more mayo, mustard or seasoning as needed.

Serve room temperature or cold.  Store in the fridge.

I don’t usually leave comments on recipes, but I like to go through them to see what others have done and tried and thought. So in the spirit of that - I thought I’d share my opinion because something happened that never usually happened. I made the recipe as suggested, but with substitutions from the poster.  I used beef instead of chicken (used extra stew beef I had and cut into little pieces. Marinated the beef as per the poster’s beef and broccoli recipe); I didn’t use cabbage but mushrooms and sweet peppers instead - everything else was done as per the recipe. My husband and I loved it! My husband generally likes me cooking, but he LOVED this. By the time I put our daughter to bed, he was sitting with a second bowl AND had packed a lunch. He NEVER packs lunch - he effectively called dibs on this dish. I’d made enough for 6 servings and all that’s left is enough for lunch for me tomorrow. I’ve tried many Asian dishes before and this is by far the most delicious! Thanks you for sharing and keep up the good work. I’ll be doing the beef and broccoli next!

Added extra ginger and garlic but still seemed kind of bland to me. I might try adding some onion the next time for more flavor and more veggies.

Add the sweet potatoes to a baking sheet with a drizzle of olive oil, the paprika, garlic powder, salt, and pepper. Toss until well coated.

Bake for 20 minutes, flipping halfway through, until the sweet potato is tender.

Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. Add the jalapeño, garlic, chili powder, cumin, and cayenne pepper and cook for 2-3 minutes, until the spices are fragrant. Add the black beans and corn, season with salt and pepper, and cook until warmed through, 3-4 more minutes.

To assemble a burrito, add ⅓ of the bean and corn mixture, ⅓ of the roasted sweet potatoes, some lettuce, tomatoes, vegan cheese, and guacamole to the center of a tortilla. Fold in the sides and roll up, keeping the filling tucked in place. Repeat with the remaining ingredients. Cut in half and serve.

This quick and easy tuna Niçoise pasta recipe is also budget friendly.

Tuna Niçoise pasta

pappardelle or pasta shapes

green beans,

olive oil

shallots, finely sliced

anchovy fillets, chopped

capers

black olives

cherry tomatoes, halved

Juice of ½ lemon.

Garnish with hard-boiled eggs (optional), peeled and halved

Cook pappardelle or pasta shapes of your choice in a saucepan of boiling salted water according to pack instructions. When the pasta has a few minutes left, add the green beans and cook until both are al dente.

Drain, reserving 2 tbsp of the cooking water. In a bowl, mix the pasta and beans with 2 tbsp extra-virgin olive oil and the cooking water.

Meanwhile, heat 3 tbsp olive oil in a small frying pan over a medium heat and gently fry the shallots, for 5 minutes.

Add the anchovy, capers, rinsed, black olives, halved, and the cherry tomatoes, halved. Warm for 3-4 minutes, then remove from the heat and stir in the lemon juice.

Drain the canned tuna, flake and stir into the pasta with the sauce and a handful chopped fresh parsley. Divide between bowls and garnish with hard-boiled eggs (optional), peeled and halved.

Roast the sunflower seeds in a pan without any oil/fat until golden brown.

Peel and grate the carrots. Wash and dice the the bell pepper (get rid of the seeds and white bits).

Peel the onion and cut in thin rings. Wash and drain the spinach. Wash the bean sprouts with cold water and let them dry.

For the wrap:

Peel the ginger and grate it into a bowl. Add the cottage cheese, sour cream (or your vegan substitute), lemon zest and mustard and mix it well.

Spread the dressing mixture onto the wraps, stopping about 1cm from the edge. Lay out the spinach leaves on top.

Put the carrots, bell pepper, onions and bean sprouts in a wide line down the middle and sprinkle the roasted sunflower seeds on top.

Season with a dash of salt and pepper and fold the wraps a little on both sides, then at the bottom and roll it as tightly as possible (without squishing the insides out!).

Cut the wraps into halves and serve. Enjoy!

These lemon and black pepper chickpeas are the perfect lunch - they&#039;re incredibly tasty, full of goodness, and take just minutes to make!

Lemon and Black Pepper Chickpeas

Heat a splash of olive oil in a frying pan, and add the spring onions, garlic, and drained chickpeas. Cook over a medium heat for a few minutes, until hot and fragrant. Add the lemon juice and salt and pepper, and cook for 2 more minutes. Finally, stir through the fresh parsley, and remove from the heat. Serve hot or cold.

A stellar sandwich that can be ready in 10 minutes.

Baking spray, a spritz

Ground bison, 180 g

Salt, a sprinkle

MSG, a sprinkle

Garlic Powder, a sprinkle

Onion Powder, a sprinkle

Low-fat American cheese, 2 slices

Sear the ground meat

Set a pan on medium-high heat and add a spritz of baking spray.

Once hot, add the ground bison to the pan and press down so it starts searing. Sprinkle over some salt, a pinch of MSG, some garlic powder, chili powder, smoked paprika, and a bit of onion powder then chop everything up with a spatula to let it cook through.

Finish the meat mixture

Once the beef is cooked through, taste it and adjust with salt and seasonings as needed.

Pile it together in roughly the shape of the hoagie, then throw the sliced hot peppers and pepperoncini over the top followed by two slices of American cheese.

If the lean meat mixture is a bit dry, drizzle some of the pickled pepper juice over everything to add some moisture. 

Steam the bread

Place the bread on top of the meat and cheese mound to let the bread steam, the cheese melt, and the meat crisp up for one more minute.

Then, using a spatula to keep everything contained, flip the sandwich over so that the roll is on the bottom and the meat and cheese are on top. This will finish toasting and warming the bread.

Finish & serve

To finish, top the beef and cheese mixture with some shredded lettuce. Then, add a few slices of seasoned tomatoes on top.

Transfer the roll to a sheet of aluminum foil and parchment paper and wrap everything up tightly. This will steam a bit and transform it into a true bodega experience.

Slice open the sandwich and enjoy.
