These nuoc cham-inspired meatballs are perfect to fill lettuce cups topped with fresh basil or cilantro. (Add steamed rice for a more substantial meal.) The Ritz crackers here make for a juicier meatball, but feel free to substitute plain dry bread crumbs. To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup. For an easy dipping sauce, spike 1/4 cup mayonnaise with 2 teaspoons toasted sesame oil or soy sauce. And save any leftover meatballs: They're great simmered in chicken broth the next day. The ginger and garlic in them release their aromatics into the broth for a deeply flavorful soup base.

Heat oven to 425 degrees. In a large bowl, combine all the ingredients and use your hands to gently mix.

Shape the meat into 12 golf-ball-size rounds (about 2 inches in diameter) and arrange on a greased rimmed baking sheet.

Remove stems from mushrooms; set aside. Use melon baller to carefully scoop small amount of flesh from each mushroom cap. Finely chop removed mushroom flesh and stems. Place caps, hollowed sides up, on parchment-covered rimmed baking sheet.

Melt margarine in large skillet on medium heat. Add onions and chopped mushrooms; cook and stir 5 min. or until tender. Remove from heat. Stir in next 2 ingredients, and half &lt;u&gt;each&lt;/u&gt; of the cracker crumbs and parsley. Use melon baller to portion filling into caps; top with remaining crumbs.

Bake 25 min. or until heated through. Sprinkle with remaining parsley.

Cheesy Potato Au Gratin with Buttery Ritz Cracker Crumbs.

gruyere cheese (shredded)

brie (rind removed + diced)

sage (chopped)

cayenne pepper

Ritz crackers or other buttery crackers (crushed)

Preheat the oven to 375 degrees F.

In a saucepan, cook the butter and garlic until the garlic is fragrant and caramelized. Add the flour and whisk until combined. Slowly pour in the cream and cook until the cream is warm. Remove from the heat, stir in 3/4 of the Gruyere. Next add the brie, sage, cayenne and a pinch of salt + pepper. Stir until all the cheese has melted and the sauce smooth. If needed, place back over low heat until the cheese is fully melted. Remove the garlic cloves.

Butter a 9x13 inch casserole dish. Pour the cream sauce into a large bowl with the potato slices. Mix gently to coat the potatoes. Season the mix with a little bit of salt and pepper. Mix to gently incorporate. Spoon a little bit of the cream sauce into the bottom of the casserole dish. Then spoon the potatoes in. Try to get the potatoes in one even layer for even cooking. Pour any remaining cream at the bottom of the bowl over the top the potatoes. Top with the remaining Gruyere cheese. Cover the dish with aluminum foil, but pull back one corner for the steam to escape. Bake for 1 hour.

In a bowl, mix together the crackers and 2 tablespoons butter. After 1 hour of cooking, remove the foil and sprinkle the cracker mixture over the potatoes. Continue baking for 30-35 minutes or until the crackers are golden. Serve hot with fresh herbs if desired!!

Cheesy Broccoli Casserole

Heat the oven to 350 degrees and butter a deep 9-by-13-inch baking dish.

Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2 to 3 minutes, until bright green. Drain immediately and set aside.

In a large heavy-bottomed pot, melt the butter with 1 teaspoon red-pepper flakes over medium heat. When melted, add the scallions, 1 teaspoon salt and the black pepper, and cook until scallions have softened, 3 to 4 minutes. Add the flour and stir to combine. Stir constantly for 1 to 2 minutes, until the flour streaks are slightly golden in color, then add the milk in a slow stream, stirring continuously.

Continue to stir the milk until the mixture is thick and creamy, 6 to 8 minutes. Remove from heat and add 4 cups of the cheese, stirring vigorously to melt it down into a smooth sauce. Taste and season with salt.

Add the cooked rice and parboiled broccoli to the pot and stir until evenly coated with sauce.

Transfer the mixture to the prepared dish and sprinkle with remaining 1 cup grated cheese, Ritz crackers and remaining 1/2 teaspoon red-pepper flakes.

Bake for 25 to 30 minutes, until bubbling. For more color, cook under the broiler for 2 to 3 minutes, watching carefully. Serve warm.

How to Make Christmas Crack

This Chicken Divan has juicy bites of chicken that are smothered in a simple cream sauce with broccoli and topped with a buttery Ritz cracker topping. Make it from scratch or use can of cream of chicken soup!

Chicken Divan

Tablespoons butter

lbs. Boneless Skinless Chicken Breasts (see notes)

Salt/Pepper (to taste)

celery (diced)

broccoli florets (about ½ lb.)

olive oil

cream of chicken soup

sour cream

garlic powder

onion powder

mustard powder

cheddar cheese (shredded)

Ritz crackers (or panko breadcrumbs)

Preheat oven to 350 degrees.

Cut chicken into bite-sized pieces and sprinkle lightly with salt and pepper.

Melt butter in a dutch oven or large pot over medium heat. Add the chicken, onions, and celery and toss to coat. Sauté for 3 minutes, until chicken is about halfway done, then add the broccoli and 1 Tbsp olive oil.

Cook for 3-5 more minutes, until the chicken is cooked through. Remove from heat.

Add the cream of chicken soup, sour cream, milk, seasonings, and half of the cheese. Stir to combine.

Transfer to a lightly greased 9 x 13 casserole dish and top with remaining cheese.

Cover and bake for 20 minutes. Remove and increase heat to 400 degrees.

Combine the melted butter and Ritz crackers. Sprinkle over the casserole and bake for 8-10 minutes, until the top is golden brown. Remove and let it sit for 5 minutes prior to serving.

Serve over rice, biscuits, or mashed potatoes.
