Simple Roasted Radishes

radishes (greens and ends removed)

olive oil

Salt & pepper (to taste)

parsley (to taste (optional))

Preheat oven to 400F. Move the rack to the middle position.

Cut the radishes into equal-sized pieces. If they're particularly large radishes, cut them into quarters. Otherwise, cut them into halves. 

Add the radishes to a baking dish and toss them with the olive oil and salt &amp; pepper. Roast them face down if you want them to brown nicely.

If the radishes are small, roast them for 15 minutes and check to see if they're done to your liking. If they're larger, it may take up to 35-40 minutes to get them tender. Mine took about 30 minutes to get tender-crisp.

Toss with freshly chopped parsley if desired.

Preheat oven to 425°F.

Halve the radishes or quarter any that are larger than a half dollar.

Cut the onions or shallots into wedges the size of the radish pieces.

Pile onto a rimmed cookie sheet or cast-iron skillet.

Drizzle the oil over the vegetables, sprinkle the salt and black pepper over the top and toss to coat, spreading the radishes and onions out into a single layer.

Roast for 10 minutes, lower the heat to 350°F, stir the vegetables, and roast for 20 to 30 more minutes, stirring every 10 minutes, or until the vegetables are deeply caramelized on the outside and tender on the inside.

Adjust salt as needed.

Remove them from the air fryer and toss with the minced garlic. Return and bake for an additional 8-10 minutes until golden brown.

Spread the radishes on a sheet pan, and season them with Italian seasoning, salt, and pepper. Toss with olive oil, and make sure that the radishes are well coated.

Pre-heat oven to 425 degrees F.  Cut the greens off the radishes, wash well and cut in half, or if they&#8217;re really large cut in quarters.

On a large Sheetpan, toss together the radishes, olive oil, salt, pepper, garlic and thyme.  Bake until radishes are caramelized and fork tender, about 30 minutes.  Garnish with fresh herbs before serving, if desired.

I am on day 3 of Whole30 and made these as a side last night! They were really tasty and did have a similar consistency to potatoes. Radishes are one of my favorite salad toppings, but I loved finding a new way to be able to incorporate them into my meals (especially as a healthier, lower-carb alternative). Unfortunately, I didn't save the greens, but I'll definitely have to next time I make these!!
