Pan Seared Scallops with Lemon Garlic Sauce

salt

water

ice cubes

scallops

olive oil

unsalted butter

black pepper (as needed for seasoning)

Brine the Scallops

Combine salt and hot water in a medium bowl, stir until the salt is mostly dissolved. Add ice cubes, once the water is cold add scallops. Brine scallops for 10 minutes.

Rinse and Dry

Drain and rinse the scallops under cold water. Transfer to a sheet pan lined with paper towels. Place another sheet of paper towel on top of scallops, gently pressing until each piece is dry. The drier the scallops, the better the sear.

Season with Salt

Allow scallops to sit for 10 minutes at room temperature before cooking. Right before cooking, lightly season both sides with salt.

Brine

Start Cooking

Heat a large 12-inch pan over medium-high heat. Add olive oil. Once hot, add scallops to the pan in a single layer. Gently press on them with a spatula so they make direct contact with the pan. Pan sear until golden brown on the surface, not moving them, about 3 minutes.

Baste the Scallops

Add butter to the pan and allow it to melt. Flip scallops over, use a spoon to baste with butter, tilting the pan as needed. Cook until firm but tender, about 1 to 2 minutes. Turn off the heat and transfer to a clean plate.

Make a Pan Sauce

Using the same pan to cook the scallops, turn the heat up to medium. Add in garlic and saute until fragrant, 30 seconds. Add in lemon juice and lemon zest, scrape the pan to remove any browned bits and stir into the sauce, cook for about 1 minute. Turn off the heat and whisk in Dijon mustard and heavy cream. If needed, add in some water to the sauce if you want a thinner consistency. Taste and season with salt and pepper as desired.

Garnish and Serve

Add scallops back to the pan, and warm over low heat, 2 minutes. Garnish with chopped dill and black pepper, serve warm.

Preheat a cast iron skillet over medium high heat.

In the meantime, pat the scallops very dry with a paper towel. Sprinkle the sea scallops with salt and pepper, to season.

When the pan is hot, add the grapeseed oil, then drop in your scallops, giving them enough room in between so they don’t steam each other. The scallops should make a sizzling noise when you put them in the pan.

Cook the scallops for 2 minutes, making sure not to move them or touch them at all.

Flip the scallops over with a pair of tongs, and add the butter to the pan. Let the scallops cook for 1 more minute, basting the scallops with the butter.

Remove the scallops from the pan and serve!

Garlic Butter Scallops

salt and fresh ground pepper, (to taste)

unsalted butter, (divided)

garlic cloves, (minced)

parsley

lemon slices, (for garnish)

Thoroughly pat dry the scallops with paper towels.

Remove any attached side-muscle on the scallop by pinching and tearing it away from the scallop.

Season scallops on all sides with salt, pepper, and paprika.

Set a large skillet over high heat and add 2 tablespoons butter; cook until sizzling.

Add the scallops in one layer without over crowding the pan. Cook in batches if the scallops do not fit in the pan all at once.

Cook scallops for 2 minutes, or until browned. Do not move them around.

Flip over the scallops, lower heat to medium-high, and continue to cook for 1 1/2 to 2 minutes, or until bottom is golden brown.

Remove scallops from pan and set aside.

Melt remaining butter in the skillet, scraping up any browned bits left on the bottom of the pan.

Stir in garlic; cook for 1 minute, stirring frequently. Do not burn the garlic.

Add wine and cook for 2 minutes.

Squeeze lemon juice into the skillet; stir, and taste sauce for seasonings. Adjust accordingly.

Return scallops to the pan and spoon sauce over scallops.

Garnish with parsley and lemon slices.

Serve.

Easy to make and the garlic was a good recommendation.

It was delicious with a bit of olive oil and A tad  of butter with lemon pepper and fresh squeezed lemon! Sauté Jasmine Rice!

loved it with salt and pepper - everything plus a squeeze of lemon jouce.

I don’t do the sauce at the end and just top this with fresh rosemary or fresh Parsley Tastes great as is. No sauce needed. I usually serve over roasted veggies.

Used garlic rosemary salt, just a little butter and olive oil with a little fresh lemon juice at the end. They were soooooo good!!!! The best part was the scrapings from the pan.

Loved it! Added a little garlic with oil and butter  before adding scallops.  3 min each side cooked perfectly!

Pan Seared Scallops

Salt and pepper

Clean the scallops by removing the loose flap or "foot" on the side. (It will turn tough once cooked.) Then place the scallops on a paper towel to dry. Pat the tops with another paper towel.

Heat a large skillet to medium-high heat. Drizzle a scant amount of oil in the skillet and brush it over the surface of the pan. You just want the pan to be lightly coated, not pooling with oil.

Once the pan is smoking-hot, place the scallops in the skillet flat-side-down. Sprinkle with salt and pepper and allow them to sear for 1-2 minutes. You'll know the scallops are ready to flip when they pull away from the skillet easily, and are caramelized. If they hold tight to the skillet, give them a little longer.

Flip the scallops, salt and pepper again, and sear for 1 minute. Then add the butter and garlic to the skillet. Sear another minute, turn off the heat. Add the lemon juice, one pinch of lemon zest, and the parsley. Toss to coat and serve immediately.

Prepare the scallops.

Pat the scallops dry with a paper towel and season with salt and pepper.

Cook the scallops.

Heat a large non-stick pan with 1/2 tbsp of olive oil and 2 tbsp of butter on high heat. When the pan is hot, add the scallops and cook for 3-4 minutes undisturbed. When the scallops are mostly opaque, flip them and add the remaining 1 tbsp of butter, and cook for 1 minute undisturbed until they are completely opaque. Remove the scallops from the pan and transfer to a large plate tented with foil to keep them warm.

Make the parsley butter.

Reduce the heat to low and melt 3 tbsps of butter with 1.5 tbsps of chopped parsley. Spoon the parsley butter over the scallops and serve hot.

Remove the small side muscle, rinse with cold water and thoroughly pat dry.

Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. Each one should have a 1/4-inch golden crust on both sides while still being translucent in the center. Serve immediately.

Here are the tricks to how to cook pan seared scallops and get that perfect brown crust! Follow these simple tips for a fast and easy dinner.

Pan Seared Scallops (Tips &amp; Tricks!)

Thaw the scallops, if frozen (see above).

Brine the scallops: In a shallow dish, mix together 4 cups room temperature water and 2 tablespoons kosher salt. Place the scallops in the water and wait for 10 minutes.

Remove the scallops and dry thoroughly. Lightly season with a several pinches kosher salt.

Heat the oil in a large skillet over high heat. If using a medium skillet, cook the scallops in two batches. Once the oil is hot, add the scallops and cook without turning for 2 to 3 minutes,  until an even brown crust clearly forms on bottom.

Flip scallops with tongs. Cook additional 2 to 3 minutes on the other side, until a crust just forms on bottom and the center of the scallop is almost opaque.

Turn off the heat and add the butter. When it melts, spoon the melted butter over the scallops and serve with a squeeze of lemon. Or, go to Lemon Herb Scallop Sauce to make a 2 minute pan sauce.

I made this dish with sea scallops that had been frozen and it was wonderful!!!  I followed the advice and brined them for 10 minutes.  The brining step is important (especially if you bought wet scallops).  I read and re-read the "tips" portion of this blog and was really glad I did.  After brining in kosher salt (also really important that you use kosher and not table salt), make sure to thoroughly blot the scallops with paper towels to remove the water.  You are right that you want to be sure to remove water from the scallops, but blotting them well with the paper towels does the trick.  I think you may not have read the full blog, which states:  (Brining) "freshens up the flavor of wet scallops. If you buy wet scallops, it evens out the flavor and removes the chemical taste. You can also add a little lemon juice to really get the flavor to pop.
It helps season the inside of the scallop. If you just season before cooking, sometimes only the outside retains flavor.

Pat the scallops dry with a paper towel (the scallops need to be very dry to get that perfect sear). Season with salt and pepper.

Add oil in a cast-iron skillet and heat over medium-high heat for 3 minutes, until the oil starts to sizzle and shimmer. To get those beautiful brown sear marks, make sure the scallops are very dry and the oil is sizzling hot.

Once the pan is hot, use tongs to place the scallops one by one into the skillet. The scallops should sizzle as soon as they hit the pan. Cook the scallops for 2 minutes. DO NOT move around or turn the scallops during cooking.

Turn the scallops over with tongs and add butter and garlic to the pan. Sprinkle Italian seasoning on top (optional). Cook the scallops for another 2 minutes and baste the scallops with butter by repeatedly pouring the melted butter over on top of the scallops.

Transfer the scallops onto a plate with tongs and sprinkle chopped parsley on top. Serve with lemon wedges on the side.

What a perfect recipe for summer time. We have delicious local sea scallops here at the Jersey  shore ~ this will be a great recipe to use them in.

The secret to perfect sea scallops are quickly searing them in a blazing hot cast iron pan and basting with butter. Dinner is ready in 15 minutes!

Perfect Pan Seared Scallops

1.5 lbs jumbo scallops, (wet or dry-packed)

salt and pepper,

tsp Italian parsley, chopped, optional garnish

Prepare scallops by removing side muscle, rinsing and patting dry. Resting for 15 minutes on paper towels. Once dry, sprinkle with salt and pepper.

Heat a heavy bottom pan and add olive oil. Heat until very hot but not smoking.

Carefully add dry scallops in a single layer and do not crowd.

Sear undisturbed for 1½-2 minutes, until golden brown. Scallops should release easily from the pan. If not, let them cook a little longer.

Turn each scallop over with metal tongs or spatula. Reduce heat to medium and add butter.

Using a large spoon baste the scallops with the melted butter and cook for about 60-90 seconds further. The center side of the scallops should be opaque.

Remove scallops from the pan and set aside. Add lemon slices and sear on each side for about 30-45 seconds.

Add lemon to plate as a garnish. If desired, drizzle the butter from the pan and top of scallops and sprinkle with chopped parsley. Serve.

Wash the sea scallops under cold water.

Thoroughly dry them with paper towel.

Pour Honey Dijon Dressing over dried scallops.

Toss to coat the scallops evenly. Let it marinate for 30 minutes.

Meanwhile, make the avocado sauce. In a small bowl, mash the avocado with a fork.

Add honey dijon dressing and mix well. Salt to taste.

Cover the sauce with plastic wrap, so that it touches the avocado sauce to prevent browning. Set aside.

To cook the scallops, heat butter and olive oil in 12-inch pan (don’t use non-stick pan) over medium-high heat.

Remove the scallops from a marinade and salt and pepper them.

Add the scallops into sizzling hot pan, making sure the scallops don’t touch each other.

Sear the scallops for about 2 minutes without disruption until golden crust forms. If the scallops are stuck to the pan, that means they are not ready to be flipped. Don’t force it.

Using a tong, flip the scallops and cook the other side for another 2 minutes. The center of the scallops should be slightly translucent. Overcooking will result in chewy, rubbery scallops that no one would care for.

Transfer the cooked scallops onto a plate and top with avocado sauce. Serve immediately.
