Smoked Baked Beans

thick cut peppered bacon (halved)

Preheat your smoker to 250 degrees F using any mild or fruit wood. I really like pecan with this recipe.

Preheat a 12 inch cast iron skillet over medium high heat. Cook the bacon pieces for 2-3 minutes per side. Long enough to render fat, but not long enough to crisp thoroughly.&nbsp;

Remove the bacon pieces to a plate with a paper towel on top so they can drain. Leave the bacon grease in the pan and add the onions and jalapenos. Cook for 3-5 minutes, stirring frequently, until they have softened and the onions are slightly translucent.

Pour the cans of beans (liquid and all) into the pan. Add in the barbecue sauce, brown sugar, apple cider vinegar, Dijon mustard, and molasses. Stir to combine.

Place the slices of bacon on top of the beans and head out to the smoker.

Smoke, uncovered, for about 3 hours, or until nearly all of the fat has rendered from the bacon and the beans have thickened up nicely. Remove from the smoker and serve while warm.

INGREDIENTS

Preheat your pellet grill or smoker for 250 degrees F. Add your choice of wood.

Combine BBQ sauce, ketchup, molasses, Dr. pepper, brown sugar, and BBQ rub in a medium bowl. Set aside.

Heat olive oil in a 12-inch cast-iron skillet. Cook onions and garlic until translucent over medium heat.

Add baked beans to the pan, then pour barbecue mixture over the top. Add your meat, and stir through.

Place the entire pan into your smoker, close the lid, and let it cook for 2 hours.

Beans will thicken a bit and take on a darker color when done.

Remove pan from the smoker, and let it sit for 15 minutes before serving.

Store leftovers in an airtight container in the refrigerator for 4-5 days. Freeze for up to 3 months in vacuum-sealed bags.

27 Ounce Bush's Chili Beans With Mild Chili Sauce

Ounce Butter Beans

Ounce Hickory Brown Sugar Bush's Baked Beans

Pound Ground Beef

Bacon

Teaspoon Onion Powder

Tablespoon Minced Garlic

Cup Ketchup

Dijon Mustard

Cup Brown Sugar

Teaspoon White Vinegar

Start out by browning your hamburger and partially cooking your bacon. 

*I don&#039;t fully cook my bacon because I know it will cook some in the dutch oven so know how you like your bacon and prep it accordingly*

If you are using a cast iron dutch oven wipe it down with oil to help make sure that it is ready to cook without having stuff stick.

Open up your cans of beans and dump them into your dutch oven.  I did strain my butter beans but the other beans I kept all the sauce.

Add in your meat next you can drop in more bacon grease if you want to for extra flavoring.

Next, add in the rest of your ingredients and stir everything together.

Now I was already smoking a Brisket already that day I knew the side I would have the dutch oven would be on the hotter side of my smoker so I shortened my cook time for them.

Fire up your smoker. I set my Pit Boss Pro 1100 to a P setting of 7 at 200 with my brisket and use Mesquite pellets when I smoked these baked beans.

Set the full dutch oven on your smoke once your rolling smoke, without a lid so the smoke can saturate the beans.

Stir the beans every 30 minutes.

Allow to slow cook for 3 hours at least, longer if you are on the "not as hot" part of your smoker.

*if cooking at a low temp on the cooler side of the smoker be sure to allow the beans to smoke for about 4 to 6 hours with the stirring.
