These BBQ Salmon Nachos will be your go-to summer appetizer and snack recipe! Shredded salmon is mixed with tangy BBQ sauce and piled on top of crispy tortilla chips with cheese and more BBQ sauce. It&#039;s seriously good!

BBQ Salmon Nachos

Atlantic salmon (farm-raised

olive oil (extra virgin)

BBQ seasoning (store-bought

garlic powder

black pepper

cayenne pepper

BBQ sauce (homemade

cheddar cheese

jalapenos

green onions (for garnish)

Heat 2 tablespoons of extra virgin olive oil in a medium skillet over medium high heat. Season both sides of your salmon pieces with BBQ seasoning, garlic powder, cracked black pepper, and cayenne pepper.

Cook salmon in preheated skillet for 4-5 minutes per side, until salmon is just about cooked through and flakes easily with a fork. You may to need to flip the salmon a few times to keep it from charring.

Break salmon apart with a spatula or wooden spoon and add BBQ sauce to pan with salmon. Continue to cook salmon for 2-3 minutes longer, while continuing to break apart until shredded and well mixed with BBQ sauce. Remove pan from heat.

Preheat oven broiler while you assemble the nachos.

Spread tortilla chips out on a 9x13 baking sheet. Try to spread them out into an even layer. Some chips will overlap - this is fine. Use tongs or a large spoon to spread BBQ salmon evenly over top of tortilla chips.

Top nachos evenly with shredded cheddar cheese and drizzle remaining BBQ sauce over top. Add pickled jalapeno slices. Transfer pan to oven and cook under the broiler for 2-3 minutes, until cheese is melted and bubbly.

Garnish nachos with sliced green onions and enjoy!

Mango Peach Salsa

Prepare the fruit and vegetables first by rinsing and scrubbing under cold water.

Chop

Finely chop the jalapeno, garlic, red onion, and cilantro in a small food processor.

Dice

Cut the flash of the peach from the pit and dice.

Recipe Prep

Chop the jalapeno, red onion,  garlic cloves, and fresh cilantro finely in a small food processor, pour into a medium-size bowl mixing bowl.

Cut the flesh of the mango away from the pit. Cut the flesh of the mango away from the skin and dice the fruit and add to the bowl.

Cut the flesh of the peach away from the pit. Dice the cut pieces of peach and add to the bowl.

Season

Add the salt, sugar, and zest and juice of the lime.

Refrigerate

Refrigerator the salsa at least one day before you plan on serving it.

Start by adding elements that anchor the board like the small dishes and the cheeses. Make sure cheeses are cut into small bite-sized slices or pieces.

Add fruit, veggies, and meats around the cheeses. I created little pockets of sliced peaches along with cherries and grapes removed from the vines and arranged the sliced meat in little stacks.

Fill in with your crackers, arranging them so they are easy for guests to grab.

Add spreads or dips to your containers.

Fill in any gaps with fresh herbs and/or loose fruit pieces. I used fresh rosemary, thyme, and sage along with loose cherries as fillers.

Add small utensils, such as mini forks, spoons, tongs, and spreaders for cheeses, meats, and spreads or dips.

These Burrata Bruschetta Toasts are the epitome of summer. They're incredibly simple, light, and taste and look so impressive. They allow sweet summer tomatoes to shine!

Burrata Bruschetta Toasts

cherry or grape tomatoes, halved

garlic clove, grated or very finely minced

olive oil

balsamic vinegar

basil

crusty bread

Combine all the ingredients in a large bowl and toss well to combine. Taste and adjust seasoning, as needed.

I like to do this at least 15 minutes before serving so the flavors have some time to meld.

For the Bruschetta Topping:

Preheat the oven to 400°F and spread the sliced bread out in an even layer on a baking sheet. Drizzle each bread slice with a little olive oil and sprinkle with salt and pepper.

Bake for 10-12 minutes, or until the edges of the toasts are golden and crisp.

Remove the bread from the oven and carefully rub the garlic clove all over the surface while they are still hot.

Allow to cool slightly before topping with the bruschetta mixture.

Gently tear the burrata balls into large chunks and add them to the toasts. Garnish with additional salt, pepper, balsamic glaze, and basil leaves.

Fun fact - bruschetta refers to the toasted or grilled bread that you put the toppings on.  Toasted breads with a little olive and salt are the bruschetta, the tomatoes and cheeses are just toppings we choose to put on it  Most people think the tomato is what makes it bruschetta but it's not.

This simple buffalo chicken rolls recipe is a perfect appetizer. You can make it ahead of time, and it's plenty to share. This is a great potluck dish for a football party.
