Add all ingredients to a cocktail shaker with ice.

Shake hard to chill and combine ingredients.

Sweet Tea Oven-Fried Chicken Sliders w/ Jalapeno Cheddar Corn Slaw + Crispy Onions.

jalapeños (seeded + chopped)

lemon (juiced)

rice vinegar

salt and pepper

honey (warmed)

chipotle chili (minced)

Add the chicken to a large bowl and pour the buttermilk, sweet tea and salt over the chicken. Toss well, cover and refrigerate overnight.

The next day preheat the oven to 475 degrees F. Line a baking sheet with a silpat, foil or parchment paper and spray or brush with olive oil.

Add the corn flakes crumbs, flour, seasoned salt, cayenne and pepper to medium sized bowl. Stir to combine.

Remove each piece of chicken from the buttermilk, and dredge through the crumbs, pressing gently to adhere. Place on the prepared baking sheet. Repeat until all the chicken has been used. Make sure not to crowd your pan, if necessary use two baking sheets. Lightly spray the chicken with cooking spray or a mist of olive oil. Drizzle the 4 tablespoons melted butter over the chicken.

Bake for 10-12 minutes, then reduce the heat to 400 degrees F. Bake for 10-12 minutes more, then flip the chicken over and gently spray with olive oil. Place back in oven for another 15-20 minutes or until the chicken is cooked through and the juices run clean. Serve with the slaw, crispy onions and chipotle cheddar (all below).

Sliders

Add the sliced onions to a large bowl and pour the buttermilk over top. Use your hand to submerge the onions in the buttermilk. Allow the onions to sit in the buttermilk 30 minutes to 1 hour.

Meanwhile add the flour, salt, pinch of cayenne and pinch of pepper to a bowl and give it a good toss.

When ready to fry the onions heat a large pot of oil until it reaches 375 degrees F. or until a pinch of flour sizzles when sprinkled over the pot.

Remove a handful of onions from the buttermilk and place them into the flour mixture. Coat the onions in the flour mixture, and then tap them on the inside of the bowl to shake off the excess.

Carefully drop the onions into the hot oil. With a spoon, fiddle with them a bit just to break them up. Watch the onions closely as they cook quick! After about 1 or 2 minutes, they should be golden brown, remove from the oil and place on a paper towel-lined plate. Repeat with the remaining onion slices. Onions are best served right away, but can be reheated in a 300 degree oven for 5 minutes, watching them closely and making sure they do not burn.

Crispy Onions

In a bowl toss together the grilled corn, shredded cabbage, jalapeños, chopped parsley or cilantro, lemon juice, rice vinegar, salt and pepper. Cover and place in the fridge until ready to serve. Just before serving stir in the cheddar cheese.

Jalapeño Cheddar Corn Slaw

In a bowl mix together honey and chipotle pepper. Serve drizzled over the chicken.

Chipotle Honey

Place a piece of warm chicken on the bottom of each slider bun, drizzle with the chipotle honey. Top with slaw and crispy onions. SERVE!

Southern Iced Sweet Tea

Place one quart of water in a pan and bring to a boil. Add the tea bags.

Cover the pan, remove it from the heat and let it steep for 10-15 minutes.

Remove the tea bags and add the sugar.

Stir until completely dissolved.

Add the additional quart of cold water.

Stir well.

Southern Sweet Tea, a strong infusion of black tea that is sweetened and served over ice, is as essential to southern cuisine as fried chicken and collard greens. Depending on personal preference, it may also include a squeeze of lemon juice. And it’s never limited to warmer weather here, it appears on our tables every day of the year!

Crispy Cauliflower Fritter Bites + Savory Sautéed Collard Greens + Southern Style Sweet Tea

cauliflower

all purpose flour

tsp black pepper

of Spicewalla Smoked Paprika

tsp Spicewalla Garlic Powder

collard green leaves

Tbs unsalted butter

apple cider vinegar

Cook Cauliflower

Wash cauliflower and have kids break it into bite-sized florets. 

Crack eggs into a small bowl. Add 1 Tbs water and 1 tsp salt, whisk again. Set aside.

Measure and combine flour, ground black pepper, the other 1 tsp salt, paprika, and garlic powder in a gallon-sized plastic Ziploc bag. Seal shut and shake shake shake quickly to mix the seasonings into the flour.

Pour the egg mixture into a separate gallon-sized plastic Ziploc bag. Add the cauliflower florets. Seal the bag tightly and have kids shake the bag to coat the cauliflower in egg.

Use a big slotted spoon or tongs, scoop out the cauliflower florets from the egg Ziploc and transfer to the flour Ziploc. Seal the bag tightly and shake to coat the cauliflower in flour.

In a frying pan on your stovetop, heat enough oil to fry the cauliflower. Using tongs, place the cauliflower bites from the flour Ziploc into the frying pan. Be careful as oil may splatter! Fry until they are crispy on all sides about 5-10 minutes turning as necessary.

Once cauliflower bites are nice and crispy, transfer them to a plate and let cool before eating!

Cook Collards

Chop collard green leaves into small pieces. Heat butter in a skillet on your stovetop and swirl it around until it all melts.

Add chopped collards and vinegar to the butter and stir. Add 1/4 cup water and let the collards steam as the water evaporates.

Sauté on low heat and sprinkle with a pinch of sugar, salt, and a pinch of black pepper. Let collards soften and wilt for a few minutes and enjoy.

Make Iced Tea

Boil 4 cups water in a saucepot on your stovetop. When the water is boiling, add sugar and stir until sugar has dissolved, forming a simple syrup. Once the sugar has dissolved, turn off the heat.

Add the bags of decaf tea to the simple syrup, gently swirling them around as the tea begins to steep into the liquid. Let the tea steep for 5-10 minutes, then remove bags and carefully pour the tea into a pitcher.

Add 2 cups cold water and then serve over ice!

A simple brine makes this chicken extra unique and flavorful.

Sweet Tea Brined Chicken

dark brown sugar

garlic

lime

black peppercorns

Put 3 cups water into a saucepan, bring to a boil and remove from stove. Add tea bags and let steep for 10 minutes. Remove tea bags.

To the saucepan with the tea, add brown sugar and kosher salt. Stir until dissolved. Add garlic cloves, lime wedges, whole black peppercorns, and fresh thyme. Let this mixture come to room temperature (add a few ice cubes if needed).

Place chicken in a shallow dish or gallon size baggie. Pour the sweet tea brine over top of the chicken. Set in the fridge for at least 24 hours.

After the chicken has brined for 24 hours, remove from the brine and discard the brine. Pat chicken dry and place in a 9x13 dish or a baking sheet.

If desired, sprinkle with a small amount of season salt and pepper, or if you prefer, no seasoning at all. Bake at 425 degrees for 40-50 minutes (split chicken breasts may take 50 minutes, thighs or legs may only take 40 minutes).
