This easy hot and sour soup is light on the stomach, but big on flavor! The spicy and tangy broth is full of colorful vegetables and tender cubes of tofu.

Easy Hot and Sour Soup with Vegetables and Tofu

Tbsp canola oil (0.04)

Thinly slice the cabbage, mushrooms, and the green onions (both the green and white ends of the onions). Peel the carrots, then either slice them thinly, use a vegetable peeler to slice them into ribbons, or cut them into thin sticks (julienne).

Add the canola oil, grated ginger, and the sliced white ends of the green onion to a large pot. Sauté the ginger and onion over medium heat until soft (1-2 minutes). Add the vegetable broth to the pot, along with the soy sauce, vinegar, and chili garlic sauce. The amount of soy sauce, vinegar, and chili garlic sauce needed may be subjective and will depend on how much salt your vegetable broth contains. Start with a smaller amount of each, then add more to your taste. The final broth should be tangy and spicy. Heat the broth until piping hot.

Drain the tofu, then cut it into small cubes (small enough to fit on a spoon). Add the tofu to the hot broth, and allow it to heat through ( a few minutes).

Either add the sliced vegetables to the soup pot and cook until softened, or divide the vegetables into individual bowls for serving, then spoon the hot broth over top. Sprinkle the sliced green portion of the green onions over each bow. More chili garlic sauce can also be added to each bowl if desired.

Easy Beef Fried Rice

Heat 1 tablespoon of oil into a large skillet.

Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.

Add the remaining tablespoon of oil to the pan.

Add the steak and cook over high heat for 2-3 minutes, just until seared and caramelized on the outside. Remove from the pan and set aside.

Add carrots and broccoli to the pan and cook until tender, 3-4 minutes.

Stir in garlic and cook for an additional minute.

Add in the cold rice and sauté for 3-4 minutes. The rice should brown up a bit.

Add the eggs and the steak back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.

Serve immediately with sesame seeds for garnish, if desired.

Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.

Heat 1 tablespoon oil in a large skillet. Add in chicken and cook until golden brown and cooked through, 5-6 minutes. Remove from the pan and set aside on a plate.

Add remaining tablespoon of oil to the same skillet. Add cabbage and carrots and saute until golden brown and wilted, 2-3 minutes. Add garlic and ginger and cook for an additional minute.

Add in cooked noodles and sauce tossing to coat the noodles.Serve immediately with green onions and sesame seeds on top, if desired.

Cook the noodles according to package instructions. Drain and set aside.

In a small bowl combine soy sauce, hoisin sauce, sesame oil, brown sugar and rice wine vinegar, set aside.

Heat 1 tablespoon of oil in a large skillet or wok. Add chicken (I had to cook it in two batches) and cook until browned and cooked through, 4-5 minutes. Transfer the chicken to a plate and set aside.

Add the other tablespoon of olive oil to the wok then add the mixed vegetables, bell pepper and ginger. Sauté for 2-3 minutes or until tender.Add in the garlic and cook for an additional minute.

Add the sauce to the pan along with the cooked chicken and cooked noodles.

Toss everything together and serve immediately with sesame seeds for garnish, if desired.

Heat sesame oil and canola oil in a large skillet.Add in chicken and saute until fully cooked and browned.Add in garlic and ginger and saute for 1-2 minutes. (Add in more oil if needed)

In a medium bowl combine soy sauce, brown sugar, bourbon and rice wine vinegar.

Add sauce to the chicken and bring to a simmer. Cook for 2-3 minutes.

Meanwhile in a small bowl whisk together cornstarch and water.Slowly add the cornstarch mixture to the sauce and stir frequently until thickened, 2-3 minutes.If the sauce needs to thicken more add more cornstarch.

Serve immediately with sesame seeds and green onions for garnish, if desired.

I usually don't like leaving negative reviews, but I was so looking forward to good bourbon chicken and this wasn't it. Way too much soy (I used liquid aminos which are usually less strong than regular soy sauce) too sweet, and I couldn't even taste the bourbon. I will not use this recipe again.

Very good recipe. My wife and kids are a little picky when it comes to Asian cuisine, but they clean their plates when I make this recipe. I serve it with Fried Rice.

Flavor was wonderful and my family loved it! Unfortunately like the reviewer ahead of me the chicken was dry. I will make it again but once the chicken is cooked I will pull it out and continue with the sauce. When that is done I will toss the chicken back at the end. Sesame seeds were a nice finishing touch!

Made this for my family and my 2 boys loved it! I will definitely be adding it into our usual dinner recipe rotation.

Gave it a try, came out great. 
I did modify significantly. 3 lbs chicken, doubled most of the sauce things, then used 1/4 cup of bourbon. 1/4 tsp red pepper flakes also. And then added about 4 cups of standard stir fried veg at the end, which I just let cook in the heat remaining, rather than actually stir frying them. 

I see some folks commenting on the bourbon. The alcohol burns off almost immediately, you know! Alcohol has a very low boiling point. All about the taste in this recipe.... Alas, no buzz.

We really liked this recipe. Easy to make and delicious.

To me this is just ok. I think it would be better with chicken thighs and more ginger and maybe a little more brown sugar and some scallions. I expected it to be better🤷🏼‍♀️
