Recipe video above. Tandoori chicken - baked in the oven! For everyone who doesn't have a tandoor sitting in the middle of their kitchen. :) The flavour infusion and the lovely crust from the marinade is sensational. Easy sub for Kashmiri Chilli, the only ingredient that is not sold at supermarkets.

Baked Tandoori Chicken

plain yoghurt ((full fat best))

tbsp oil ((any))

lemon juice

tsp ginger (, grated)

garlic (, minced)

tsp garam masala spice mix ((Note 1))

1.5 tbsp kashmiri chilli powder ((Note 2 subs))

turmeric powder

tsp cumin

coriander powder

salt

Oil spray

plain yoghurt

mint leaves, packed

Salt and pepper

Olive oil

Basmati rice (OR Saffron rice (see note))

Mix Marinade ingredients in a large bowl. Add chicken, cover and marinate 12 to 24 hours (Note 5)

Preheat oven to 180C/350F. Line a tray with foil and place a rack on the tray.

Remove chicken from the Marinade, shaking off excess (reserve Marinade), and place on the rack. Bake for 20 minutes, then slather Marinade generously on both sides.

Bake for a further 10 minutes, brush/dab top with Marinade.

Bake further 10 minutes, do a final baste with Marinade then spray with oil.

Increase heat to 220C/450F. Bake for a further 10 to 15 minutes until you get some nice charred spots. Serve with Minted Yogurt and Saffron Rice (below) or plain Basmati Rice.

Combine ingredients in a food processor and blitz until mint is very finely chopped.&nbsp;

Minted Yoghurt:

Preheat BBQ with closed lid to medium, brush grills lightly with oil. Place bone-in skin-on chicken skin side down on grills, cook 5 min until surface is just caramelised - no more.

Baste, then flip. Baste, then close lid. Cook for 20 minutes or until internal temperature is&nbsp;175F/80C (bone in thighs and drumsticks), basting once or twice more.

Add all ingredients to a gallon-sized ziptop bag, seal, and squish the chicken around to coat it well and evenly. Place bag in the fridge and marinate for at least 30 minutes (if you can plan ahead and marinate overnight, even better).

Preheat grill to medium-high. Remove chicken from the bag using tongs and place it on the grill; discard the bag and extra marinade. Grill chicken on each side for about 4 to 5 minutes or until done. Because I used breast tenders, they cook very quickly, in about 8 minutes total. Large breasts will take longer to grill. After chicken is done, set aside to rest. Optionally garnish the chicken with cilantro before serving it with the dipping sauce on the side. Chicken is best fresh but will keep airtight in the fridge for up to 5 days; dipping sauce will keep airtight for up to 1 week in the fridge.

Tandoori chicken is a popular Indian appetizer made with chicken, spices, yogurt and herbs. This recipe shows you to replicate the restaurant version at home easily.

Tandoori chicken recipe

½ kg chicken ((500 to 700 grams))

½ cup greek yogurt ((hung curd))

ginger garlic paste

tsp garam masala

tsp red chilli powder ((kashmiri

¼ tsp black pepper

coriander powder ((daniya powder))

¼ tsp salt ((taste marinade & add more))

¼ tsp Turmeric ((haldi))

tsp kasuri methi ((dried fenugreek leaves))

oil mustard

tbsp oil

tsp red chili powder

To a mixing bowl, add greek yogurt or hung curd (thick curd). If you do not have it make your own following the notes below.

Next add in ginger garlic paste, garam masala, red chili powder, salt, turmeric, kasuri methi, pepper powder and coriander powder.

Pour oil and lemon juice as well.

Mix everything well. The marinade has to be thick and not of dripping consistency. Taste it and add more salt and chili powder if needed.

Make deep gashes over the chicken and add it to the bowl.

Marinate the chicken well into the gashes.

Cover and set aside for at least 6 hours. If you reduce the marination time, chicken will not turn soft and juicy. It may not get cooked well if making on tawa.

Marinade for tandoori chicken

Preheat the oven to the highest for atleast 15 to 20 mins. In my oven it is 470 F or 240 C. For the stove method, please follow the step by step instructions above the recipe card.

Place a foil on a oven tray to collect the drippings.

Then keep a greased wired rack on the tray.

Place the chicken pieces over the wire rack.

Grill the chicken for about 15 mins.

For spicy version mix together 1 tsp red chili powder with 1 tbsp oil.

After 15 mins of grillling, baste the red chili oil over the chicken. You can also baste the left over marinade over the chicken.

Turn the chicken to the other side and baste the red chili oil or marinade.

Grill for another 6 to 10 mins or until the chicken is cooked through. You will need to adjust the timing as it depends on size of the chicken pieces.

The last 5 mins, set to broil mode. Alternately you can move the entire tray with wire rack to the top most rack for the last 5 mins. This gives the charred effect.

Brush the drippings all over the chicken. This keeps the chicken moist. You can also burn a char coal piece and place it in a small cup. Bring out the chicken tray from the oven and place the cup of char coal in the tray. Cover with a large bowl or foil. Allow it to smoke for 5 to 7 mins.

Restaurant style tandoori chicken is ready. Serve with onion and lemon wedges.&nbsp;

Tandoori chicken recipe - Learn to make delicious tandoori chicken at home all without even a oven.

This recipe uses thick curd or hung curd. If you use normal curd then the marinade will turn runny.  While roasting the chicken you will end up with lot of moisture in the pan. All the masala will come off to the pan.

So use hung curd. Here are steps to make it.
Line a muslin cloth over a bowl. Pour 1 cup curd  to it. Wring the cloth and make a knot. Squeeze gently to remove all the dripping water. 

Hang the cloth to a hook.  Leave it for 45 mins. you will get thick curd. Use it in the recipe. Alternately you can use greek yogurt.

Sous Vide Tandoori Chicken

Chicken Thighs

Lemon

tsp Garam Masala

tsp Kashmiri Chili Powder

Salt (to taste)

tbsp Plain Yogurt

tsp Minced Garlic

tsp Minced Ginger

tsp Tumeric Powder

tsp Cumin Powder

tsp Kasoori Methi

Oil (well coated)

Set the sous vide to 155F (68C).

For the chicken, you can choose to remove the skin so the flavor penetrates better. If not it’s totally fine as well.

In a bowl, mix together the chicken thighs, lemon juice, garam masala, kashmiri chili powder, and salt. Rub the spice on both sides of the chicken. (Tip: wear gloves so your fingers don’t turn red!)

Place into a vacuum bag and sous vide for 1.5 - 2 hours.

Place finished chicken in an ice bath to cool down. Remove from bag.

Add the rest of the marinade on the chicken and coat it well.

You can either finish these on the grill or in the oven. Cook until a nice char forms. Serve with raw onions, cilantro and lemon.

A wonderful, easy dinner of bone-in chicken, chickpeas, sweet potato, and cauliflower - all in a fragrant Indian sauce of yogurt and spices.

Sheet Pan Tandoori Chicken

¾ pounds bone-in, skin-on chicken parts

yogurt

garlic, (minced)

chili powder

(15 ounces) reduced sodium chickpeas or garbanzo beans

small-medium

½ tablespoons extra virgin olive oil

lemon, (halved)

chopped cilantro

Nonfat plain yogurt

Prepare the chicken: Remove the skin from the chicken by pulling it with your fingers, then cutting away any stubborn pieces with a knife.

If using bone-in chicken breasts, with a very sharp knife, cut them in half crosswise, placing the knife on top of the breast and cutting straight down through the bone.

For each breast, you should be left with 2 pieces of chicken that are roughly the same size (this will help the pieces all cook in the same amount of time). For thighs and drumsticks, remove the skin but leave them whole.

In a large ziptop bag, add the yogurt, garlic, ginger, cumin, chili powder, and salt. Seal the bag, removing any air. Mix the ingredients around until they are evenly combined.

Open the bag, add the chicken pieces, reseal, then gently turn the bag to coat the pieces evenly with the yogurt mixture. Refrigerate for 30 minutes, and up to 24 hours. The longer it marinates, the better it will taste.

When ready to make the chicken, place a rack in the center of the oven and preheat the oven to 425˚F.

Line a large rimmed baking sheet with aluminum foil or parchment paper and coat generously with nonstick spray.

Remove the chicken from the refrigerator and set on the counter.

In the meantime, rinse and drain the chickpeas, then spread them onto a double layer of paper towels. Place more paper towels on top and pat them as dry as you can. Remove any chickpea skins that come loose.

Place chickpeas in a large mixing bowl.

To the bowl, add the cauliflower and sweet potato.

Drizzle the vegetables and chickpeas with the oil and sprinkle with chili powder, turmeric, and salt. Toss to evenly coat, then spread into a single layer on the prepared baking sheet.

Remove the chicken from the marinade, shaking off any excess, then arrange the chicken pieces on top of the vegetables and chickpeas.

Bake for 15 minutes, remove the pan from the oven, and with a spatula or large spoon, gently turn any vegetables and chickpeas that are visible and not covered by the chicken.

Return the baking sheet to the oven and continue to cook for an additional 20 to 30 minutes, or until the chicken reaches an internal temperature of 165˚F at the thickest part, and the juices run clear when sliced. Please use an Instant Read Thermometer to check for doneness.

If some of the chicken pieces finish earlier than others, remove the done pieces to a plate and cover to keep warm, then return the pan to the oven and continue baking until the remaining chicken is cooked through.

Remove from oven when done.

Return any chicken pieces you removed earlier back to the baking sheet, then squeeze the lemon over the top.

Sprinkle with cilantro. Serve hot with naan or brown rice, and yogurt as desired.

Coat the Chicken: Pat dry the wings using a kitchen towel. Combine all the ingredients in a bowl along with the Chicken Wings. Cover and refrigerate for 1 hour or overnight.

Cook in Air Fryer

Cook in Air Fryer: Place the Chicken Wings in the Air Fryer basket. If your Air Fryer needs to be preheated, then Preheat it at 180C or 350F. Cook Chicken Wings in Air Fryer for 20-25 minutes at 180C or 350F, tossing midway

Cook in the Oven

Cook in the Oven: Preheat the oven to 400F or 230C. Place the Chicken Wings on a grilling rack. Place this rack on a lined baking dish. Bake for 20-25 minutes. Flip midway.

Roast in Oven

Make Cilantro Chili Chutney

In a high-speed blender, (do not use a food processor), blend together, Fresh Cilantro with garlic cloves, Serrano Pepper, Tomatoes, and Salt until smooth and resembles a dip. Add a little bit of water if the chutney is too thick. Blend on high speed. Take it out in a bowl and serve with the Tandoori Chicken Wings
