This delicious, light shrimp and tortellini salad can be served as a side or main dish, perfect for summer potlucks or pool parties, or anytime you need a pasta salad that isn't weighed down with heavy mayo.

Chilled Italian Shrimp and Tortellini Salad

8 1/2 oz Delallo Ricotta Spinach tortellini

lbs shrimp

red onion (sliced thin)

celery (sliced)

capers

black olives

parsley (chopped)

basil (chopped)

olive oil

garlic (minced)

tbsp red wine vinegar

lemon

tsp kosher salt

black pepper (to taste)

In a large pot of salted boiling water, cook tortellini according to package directions. Using a large mesh spoon, transfer the pasta to a colander and rinse under cold water.

Return water to a boil and add the shrimp, poach for 2 to 3 minutes, until they are just pink, rinse under cold water to stop them from cooking, drain and cut into large pieces.

In a small bowl whisk together the dressing ingredients.

In a large bowl, mix the onion, celery, capers and olives and pour the dressing over; mix well.

Add the shrimp, tortellini and remaining ingredients. Adjust salt and pepper to taste and chill before serving.

19 oz bag cheese tortellini

peas

bacon (cooked and crumbled)

Shredded parmesan

Tbs butter

Tbs flour

milk

Salt and pepper

Cook pasta according to package directions, throwing in peas the last few minutes of cooking.

Drain pasta and place into a medium to large bowl.

To make your sauce in medium saucepan heat your butter over medium heat until melted.

Add in your flour and stir for about 1 minute.

Slowly whisk in your milk until slightly thickened.

Stir in garlic, salt and pepper and cheese and let cook until cheese is melted and sauce has thickened.

Pour over your pasta and add your crumbled bacon.

Toss to coat.

Sprinkle with shredded parmesan if desired.

Delicious! My husband is on a sodium and animal-protein restricted diet plus had 6 teeth pulled a week ago and is still needing soft foods. This almost fit the bill so I cooked the broccoli longer than just blanching it and lessened the salt in the water. This turned out SO good. I let the broccoli go a little too long and it turned out almost like pesto after stirring it in. Happy accident! It made a large amount of food so I’ll cook a little more broccoli to add to the leftovers that is more than blanched but less than pesto. I plan to make that “mistake” again!

Very yummy! I used the blackened shrimp recipe from the Blackened Shrimp and Grits, so we could toss in some protein, but I did not get 14 cups.

This was very tasty. Followed everything exact including chill time, but I did cut servings down quite a bit and served with warm ham steak. Fun and tasty way to incorporate tortellini into something not including red sauce. Yum 😋  

confused? in the picture the dressing bring poured looks like more than oil and vinegar. there is a reference to ‘italian’  dressing? are there more ingredients than oil, vinegar , garlic, salt and pepper?
