How to make Korean style tuna cakes - &quot;Gochujang Mayo Tuna Patties&quot;. These are very easy to make and super delicious to eat. They have lots of savory flavor and crunchy texture!

Gochujang Mayo Tuna Patties

185 g canned tuna ((6.5 ounces), well-drained)

eggs (, beaten)

g green onion ((0.7 ounces), finely chopped)

45 g onion ((1.6 ounces), finely chopped)

red bell peppers

green bell peppers

tsp all purpose flour

tsp fine sea salt

mayonnaise ((I used Hellmann’s real mayonnaise))

tsp gochujang ((Korean chili paste))

A few sprinkles ground black pepper

panko ((Japanese breadcrumbs),

Some cooking oil ((I used rice bran oil))

mayonnaise

soy sauce (, regular (My go

water

Tbsp rice wine vinegar

tsp sugar

Make your choice(s) of dipping sauce by whisking all ingredients in a bowl(s). Set aside.

Whisk well mayonnaise (2 Tbsp) and gochujang (1 tsp) in a small bowl. Combine canned tuna, eggs, green onion, onion, bell peppers, flour, salt, gochujang mayo sauce from earlier, and a 1/2 cup of panko breadcrumbs in a mixing bowl. Mix them well.Place the remaining panko breadcrumbs in a wide bowl (e.g. pasta bowl). Shape the mixture into small balls. I use an ice cream scoop to make even sized patties. As you make small balls of mixture, gently place them on panko and roll around to coat. Gently flatten the balls into patties with your hands. Coat with more panko and set aside. Repeat this with the remaining tuna mixture.

Stove Top Method – Preheat a skillet over medium low heat. Once heated, add some cooking oil and spread well. Gently place the tuna patties into the skillet (without over crowding) and cover with the lid, cook for 5 mins. Add some oil over the tuna patties and flip them. Cook for a further 5 mins, covered. Flip once more and cook another 5 mins, or until golden brown.Air Fryer Method – Spray the fryer basket with cooking spray. Gently place the tuna patties in the basket (without over crowding).  Set the air fryer to 180 C / 356 F and cook for 8 to 10 minutes. Then flip the patties with tongs and cook for 8 to 10 minutes more, or until golden brown.Oven Method – Preheat oven at 200 C / 392 F. Line a large baking sheet with baking paper. Gently place the tuna patties and lightly spray with cooking oil. Bake for 10 mins. Remove the tray from the oven, flip the patties, and lightly spray with some cooking oil. Return to oven and bake for another 10 mins or until golden brown.

Serve warm with your choice of dipping sauce (e.g. gochujang mayo dipping sauce, ketchup, soy dipping sauce, aioli, or tartar sauce).

½ Cup Rolled Oats (40 grams)

Cans Tuna

½ Teaspoon Black Pepper

Tablespoons Canola Oil

Blend or process your Rolled Oats until they look like flour

Drain your Tuna, chop up your Red Onion, and combine all of your ingredients into a bowl aside from your Canola Oil

Mix everything together

Take out a stovetop pan, turn your burner on Medium Heat, add your Canola Oil in, and let that heat up

Shape your mix into pancakes (however big you want to make them)

Cook each side for around 2-3 minutes or until golden brown

Tuna Fish Cakes

potatoes to make mash (see notes)

Panko Breadcrumbs (see notes)

Egg,

Flour

Spring/Green Onions, finely diced

tbsp Butter

tsp Mayonnaise

tbsp finely diced Fresh Parsley

Dijon Mustard

Lemon

tsp Garlic Powder

Salt & Black Pepper,

Vegetable Oil, as needed (frying)

Oil Spray, as needed (baking)

Peel and dice 16oz/450g white potatoes and place in a pot of enough cold water to comfortably cover them. Add a hefty pinch of salt and bring to a boil until they are just about tender enough to slice. It&#039;s crucial you don&#039;t over boil the potatoes or they&#039;ll soak up too much water and the patties will be too sloppy to mould.

Drain in a colander and allow to steam completely dry. This is crucial to allow as much moisture to leave the potatoes as possible. If you have time cool them completely in the fridge, do that as well, but the main thing is allowing all the steam to escape. Mash until lump free.

If Making Mashed Potato

Combine your cold mash with butter, mustard and mayo. Add in tuna, spring onions, parsley, lemon zest, garlic powder and seasoning to taste. If you&#039;re using leftover mashed potato which was made with butter you won&#039;t need to add more. Also just take into consideration how much it was already seasoned.

Mould into equal burger-shapes, you should get 6-8 depending on size. I find scooping with a 1/3 measuring cup gives 6 equal patties. I highly recommend popping them in the freezer at this point for 10-15mins to firm up before dredging. Or at least while you set up your bowls.

Patties

Set up your stations: 1 bowl with flour and a pinch of salt and pepper, then 1 with your beaten egg and lastly breadcrumbs with a pinch of salt and pepper.

One by one, delicately (but still thoroughly) coat the patties in flour, then egg, then breadcrumbs. Again, if they feel at all flimsy at this point pop them in the freezer to firm up.

Dredging

Pour enough veg oil in a pan to comfortably cover the entire surface. Bring to a medium-high heat and when it sizzles when a crumb is dropped in, carefully place in 3 patties at a time. Allow to fry for 3-4mins (or until golden underneath) then flip and fry until golden on the other side. It&#039;s important that the oil is hot enough to &#039;sizzle&#039; when the patties hit the pan. If it&#039;s too low, the patties will merely soak up the oil, become soggy and fall apart.

Frying (option 1)

Place on a greased tray and liberally spray with oil. Bake at 390F/200C for 20-25mins, flipping once, or until golden and crispy all around (timings will vary depending on size of patties).

Roughly chop the parsley and green onions. Drain the canned tuna well.

Place the tuna, green onion, parsley, breadcrumbs, eggs, mayonnaise, seasoning salt, and lemon juice in a bowl. Mix the ingredients together just until evenly combined. Avoid over mixing.

Divide the mixture into four equal portions, then shape each portion into a patty.

Heat a large skillet over medium. Once hot, add the cooking oil and swirl to coat the surface of the skillet. Add the tuna patties and cook for about 5 minutes on each side, or until golden brown and slightly crisp.

Serve warm over a bed of greens or stuffed into a pita!

panko (plus an additional 2 tbsp)

Parmesan

celery seeds

tbsp vegetable oil (add more as needed)

Add all of the ingredients into a bowl and mix to combine.

Use a 1/4 measuring cup to scoop the mixture. Shape into Patties.

Add the 1/4 cup of panko to a shallow dish and lightly coast both sides with the panko. Add more panko if needed.

In a large skillet over medium high heat. Add 3 tbsp of oil. Add more if needed. Add about 4-5 patties to the skillet. With the spatula fatten cakes about 1/8 inch thick. Cook on both about 3-4 minutes or until golden brown flipping carefully. Drain on paper towel. Repeat with the second batch.
