This rich, creamy, and totally dreamy Cauliflower Alfredo Sauce recipe is 100% dairy-free. You'll be amazed at how delicious vegan can be!

Dreamy Vegan Cauliflower Alfredo

olive oil

white onion, chopped

garlic cloves, crushed

cauliflower

vegetable stock

nutritional yeast (see notes)

lemon juice

sea salt (I

soy sauce (sub coco aminos for paleo)

butter

Heat the oil in a medium-sized pot over medium-high heat. Add the onion and let it cook for 3-4 minutes, or until it is soft and translucent. Add the garlic and cook for 30 seconds. Add the cauliflower and the vegetable stock or water to the pot, cover with a lid and let the cauliflower steam for 5 minutes, or until it is soft.

Transfer the cauliflower to a blender (I love my Vitamix, but any blender will work) and blend on high until smooth. Add the remaining ingredients (starting with 1 tablespoon of nutritional yeast and 1 teaspoon of sea salt) and blend again. Taste and add more nutritional yeast and sea salt, if you&#8217;d like. If you are using the optional butter add it now and blend once more.

Either use the Dreamy Vegan Cauliflower Alfredo right away or pour it into a pan to keep warm until you are ready to use it.

This is my go-to creamy white sauce now that I’m doing my best to eat WFPB (whole food plant based). Now that I have the basic recipe down pat, I’ve been adding different flavors and experimenting. It’s amazing. Tonight I added roasted red peppers and had it with pasta and diced veggies. I made a white vegetable lasagna with it for my daughter-in-law’s birthday last week and it was a big hit as well. Good stuff. Make it ASAP (you won’t regret it). Oh and my omnivore hubs laps it up every time I serve it. That should tell you how good it is!   

Loved this recipe! I've made my fair share of cauliflower Alfredo sauces and this one is my favourite by far! I followed the recipe exactly, only adding in 1 tbsp of the nutritional yeast. I'll definitely be making this again!

I made the sauce  few minutes ago but it was so good that I just kept eating it out of the blender.  Hardly any left to use at  dinner.  One substitution I made was add 1 1/2 Tbls. of Mocha Mix (non-dairy creamer) instead of water to thin the sauce down a little.  That made the sauce even creamier and luscious. 

I might have to make a little more sauce for dessert.  ;-)

I really don't like cauliflower, I have tried it in a myriad of ways bc as a vegan I like to keep my options as open as possible. Cut to making this recipe and it was AMAZING. I finally found a way to not only eat it but LOVE IT.

I do have a question! How well does this recipe freeze? I'd like to premix a huge batch and freeze it for later, but I also didn't want to go in blind in case it doesn't go well :) thanks!

This sauce was very tasty.  Although it slightly resembled cheese sauce it was still a great tasting sauce.  I had it on steamed broccoli and it was delicious.  I ended up adding  3 tbsp of nutritional  yeast

We followed the directions as written. I doubled the recipe for a bunch of hungry young adults. Everyone enjoyed it and most went back for seconds. They agreed that it was yummy but not really an alfredo. I wonder if I did something wrong. They loved the texture but thought it could use some more flavor. I'm planning on roasting some garlic to add to the leftover sauce to see if they think that puts it over the top.  Thanks for the inspiration. These kids are tough to please and they devoured it.

I've been looking for a non-dairy sub for white sauce and omg I was so surprised at how good this turned out!  The only sub I made was that I used chicken stock instead of vegetable. It was so good! I could just eat a whole bowl of this.

Okay, I don't think I have ever reviewed a recipe before, but I HAD to review this one. This was amazing. I in no way expected this to taste anything like alfredo sauce. My expectations were for a rich cauliflower sauce that tasted good, but only slightly resembled alfredo sauce. But this sauce was so good and tasted so much like alfredo sauce!!! I think the soy sauce/coconut aminos were just as important as the nutritional yeast. I would not skip it.  Thanks for sharing. ♥️♥️♥️

This sauce was so easy to make and really delicious. I skipped the oil and optional butter and it was still so good. I used the 2 tsp of salt as suggested and was a little worried when I tasted the sauce on its own that it might be too salty but when I put over pasta and veggies it was seasoned perfectly. I didn’t have to add any additional seasoning to my plate. Thank you for such a great recipe. 

Good, though I'd not mistake it for either alfredo or bechamel sauce. Maybe some miso  instead lemon juice, to sub for parmesan?

I had two heads of cauliflower. One, for this recipe. The other I had intended to roast in the oven for later. But this sauce turned out SO amazing that I immediately used the other cauliflower to make a second batch. Lunch tomorrow is going to be such a treat!

Vegan Zucchini Noodles with Alfredo Sauce

zucchinis (spiralized)

TB Vegan Parmesan ((optional))

raw cashews (soaked

TB lemon juice

TB nutritional yeast

tsp white miso ((can sub tamari, soy sauce, or coconut aminos))

onion powder

garlic powder

water

Spiralize zucchini noodles and pat dry.

Add all alfredo ingredients to a high-speed blender (starting with 1/4 cup of water) and blend until smooth. If your sauce is too thick, add more water a tablespoon at a time until you get the consistency you're looking for.&nbsp;

Leave the zucchini raw or heat them in a pan with a little olive oil for 2-3 minutes. NOTE: Do not overcook because the zoodles will get soggy.

Top zucchini noodles with alfredo sauce and if you'd like, some vegan parm.&nbsp;

Vegan Alfredo Sauce

fettuccine

raw cashews

olive oil water

sweet onion, chopped

garlic,

almond milk (cashew/soy/coconut also fine)

yeast

salt,

Bring a large pot of water to a boil, then add the pasta and cook according to package instructions. Drain, then add it back to the pot and cover until the sauce is done.

Bring 4 cups of water to a boil. Pour the hot water over the cashews and let soak for 5 minutes.

Meanwhile, heat the olive oil (or water) in a small pan over medium heat. Once hot, add the chopped onion and garlic and saute for 5 minutes, until fragrant and the onion is translucent.

Drain the cashews and discard the soaking water. Add them to a blender along with onions/garlic, unsweetened almond milk, nutritional yeast, lemon juice and salt. Blend until very smooth.

Pour the sauce over the pasta and stir. If the noodles are still hot, you may not need to cook it any more. If you want, heat the pasta with the alfredo sauce on low heat until warm. Serve immediately.

Vegan Alfredo Sauce with Coconut Milk

(13.5 oz)can coconut milk ((full fat))

tapioca starch (aka tapioca flour)

garlic powder (or 2 cloves minced garlic)

liquid smoke ((optional

16 oz. fettuccine noodles

Cook pasta of choice according to package directions.

While the pasta is cooking, pour a can of full-fat coconut milk into a saucepan and add water, salt, nutritional yeast, garlic, and tapioca starch to the milk and give it all a stir.

After the ingredients are mixed, turn on the heat to medium-low and heat the sauce while stirring frequently until it starts to boil and thicken.

Allow it to boil for about 30 seconds and then turn off the heat.

Once the pasta has been cooked, drained and rinsed, pour the Alfredo sauce over it. Mix well and serve hot.

Rich and creamy vegan Alfredo sauce made with canned coconut milk.

This vegan Alfredo sauce is the perfect comfort food! It's so incredibly creamy and rich without being packed with butter and cream like traditional Alfredo sauce. And it's super easy to make. 25 minutes is all you need!

cashews ((unsalted and not roasted))

apple cider vinegar

unsweetened soy or almond milk

nutmeg

pepper

parsley

Cut the cauliflower into florets. Place them in a sauce pan together with the cashews, the garlic, and the almond milk.&nbsp;Add the nutritional yeast. Stir everything with a wooden spoon until well combined.

Cover with a lid and cook for 20 minutes. There won't be much liquid left. Transfer everything into a high speed blender. Add the lemon juice, a pinch of nutmeg, apple cider vinegar, and 1/2 cup more unsweetened almond or soy milk as well as salt and pepper.

Process until smooth. This should take about 30-60 seconds.

Cook the fettuccine according to the instructions on the package. Set aside.

Pour the blended sauce into a pan and cook for a minute.&nbsp;Then add the cooked fettuccine and stir until well combined. Season with salt and pepper again if you want.

Serve immediately and sprinkle with freshly chopped parsley. Enjoy!

Cook Pasta

Set salted water to boil in a large pot and cook pasta according to directions. If using fresh or frozen peas, feel free to add to the pasta water, during the last minute of cooking.

Make Alfredo Sauce

Heat oil over med low heat,  and saute onion and garlic until tender and golden. Place it in a blender along with cashews, veggie broth, nutritional yeast, miso, salt, nutmeg.  Blend until creamy and smooth.

Saute or smoke the mushrooms

. If sauteeing, heat olive oil in a skillet over medium heat. Add mushrooms and saute 6-7 minutes,  until golden and tender, seasoniong with salt.

Combine

Drain the pasta, add to a large pan along with the alfredo sauce, toss, and gently warm over low heat. Add the mushrooms and toss to coat (leaving a few for the top for garnish if you like).

Divide

Garnish

with lemon zest, pepper, chili flakes and chopped parsley.

I was not convinced that this would taste like an alfredo sauce (how could it, really, without butter and cream and with hemp hearts instead???) We were soooo impressed. We had a scrumptious dinner, and we could not get over the fact that it was vegan. I just had no idea. Even though I wasn't opposed to eating vegan meals, as a foodie, I thought that eating vegan would mean eating substitutes that were just ok ("Meh. It's good...for vegan food..."). THIS. IS. THE. BEST. 

My husband and I started eating completely plant-based at home in March of this year, for health purposes. But when we are out to eat or having dinner at someone's house, we still eat whatever, which means I haven't forgotten the taste of delicious, creamy dairy alfredo sauce. HOWEVER, I'm going to forget it by choice after this recipe, because *why* would I ever choose any other alfredo sauce but this one?? My husband immediately said "I like this way better than regular alfredo sauce" and I concur. It's incredible - earthy, rich... I can't stop thinking about it. 

As neither of us love the texture of mushrooms, I roughly blended them into the sauce after it was nice and creamy. I also can't stand peas, so I subbed steamed broccoli instead. Other than that, we made this as written!

My next step is to try and turn this into a broccoli alfredo soup to serve in bread bowls for an upcoming party. Mmmm.

Easy Homemade Vegan Shrimp Alfredo Sauce With Cashews (Gluten-Free &amp; Dairy-Free) Olive Garden Inspired

Raw Cashews (- soaked, drained & rinsed (in 2 cups of water))

Plant-based Milk (- we prefer Almond or Oat Milk)

Garlic (- peeled)

Lemon Juice

Onion

Jalapeño

Nutritional Yeast

Salt

Rosemary

Konjac Root Shrimp

Gluten-Free Pasta

Black Pepper

Place cashews in heat proof bowl. Bring 2 cups of water to boil. Cover with boiling water. Soak for 2 hours. Drain cashews (Could soak overnight too, but heat helps break down cashews to get a smoother sauce)

Prepare Cashews

Preheat oven to 350 degree

Place shrimp on a parchment lined sheet pan, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine and spread out in a single layer.

Roast for 10 minutes then flip konjac vegan shrimp and cook for another 10 minutes.

Prepare gluten-free pasta according to package directions about 10 - 12 minutes

Prepping For Cooking Shrimp And Pasta

Add drained cashews, garlic, jalapeño, lemon juice, onion, nutritional yeast, rosemary, salt, pepper and plant-based milk to a food processor or high-powered blender and blend until smooth about 10-12 minutes

Prepare Vegan Gluten-Free Alfredo Sauce

Add sauce to small microwave bowl and heat for few minutes until warm

Add gluten-free pasta to bowl, cover with sauce, add plant-based shrimp and enjoy
