Roasted Beet Goat Cheese Salad

beets,

arugula

avocado, sliced

goat cheese, crumbled

c. chopped toasted walnuts

c. extra-virgin olive oil

c. balsamic vinegar

maple syrup

Dijon mustard

Kosher salt

black pepper

Great simple salad and perfect dressing for the beets. This recipe is a keeper!

This salad is really, really good. When I roast my beets, I brush them with olive  oil, then add some chopped fresh rosemary, salt and pepper, and close up the foil packet.  The dressing is really nice— it doesn’t separate.  It’s so thick that it’s better to serve alongside the salad rather than to add to the salad and toss.

This was delicious, definitely going to put in my favourite list of salads 
however my dressing was quite dark and it didn’t look like the picture,

Wonderful, easy salad to compliment steak.  I roasted beets, toasted walnuts and made vinaigrette day before so just had to toss together right before meal.  Easy and elegant!

This salad was a hit with everyone last night. This will be my go-to salad dressing from now on.

Strawberries, toasted walnuts, goat cheese and arugula make for an easy but delicious salad!

Strawberry Salad

strawberries (sliced)

oz goat cheese

walnuts (95 grams, toasted)

strawberry jam

shallot (medium, chopped)

extra virgin olive oil

kosher salt

champagne vinegar

lemon thyme

Preheat the oven to 350F.

Spread out the walnuts on a baking sheet. Roast for about 5 -10 min.

I wanted to do a quick candied walnut but I didn’t have the time, so I cheated! I dipped the toasted walnuts into a strawberry jam immediately as they came out of the oven. The heat cooked the jam onto the nuts! Let them cool down to room temperature.

Slice the strawberries. Break the goat cheese apart.

For the Salad:

Combine shallots, olive oil, salt, champagne vinegar and thyme in a small mason jar. Shake the mixture and let it sit for about 10 minutes so that the vinegar can pickle the shallots.

For Dressing:

Combine all of the salad ingredients in a large bowl.

Pour a desired amount of dressing onto the salad and toss.&nbsp;

For the Assembly:

A quick and super-tasty salad that seems too easy to be true! Kale, apple and walnut, a healthy match made in heaven!

Thermomix recipe: Kale, Apple and Walnut Salad

Grams walnuts, shelled

lemons, juice only (minimum 120 grams)

Grams maple syrup

Grams Cobram Estate Extra Virgin Olive Oil

Bunch kale,

sweet apples, (fuji, pink lady) cored, and thinly sliced

prosciutto

Place walnuts onto a lined tray and place into a cold oven set to 200°C. Toast 10 minutes, remove from oven and cool.

Place 30g of the walnuts into Thermomix bowl with lemon juice, maple syrup, EVOO and mustard.  Blend **10 sec/speed 10**.

Place 1/3 of the cut kale into the Thermomix bowl and chop **3-4 sec/speed 5**.  Remove from bowl into a large serving bowl and repeat until all the kale is chopped.

Add sliced apples and toss so that they are coated well with the dressing (to prevent discoloration).

Fry the prosciutto in a medium hot pan until crispy. Cool before crumbling over the top of the salad.

This salad has ﬂavors that speak eloquently of autumn —pears, walnuts, bitter greens and cranberries. You can substitute other dried fruit if you like.

Pear and Toasted Walnut Salad with Cranberry Vinaigrette

water

orange juice

tbsp balsamic vinegar

cranberries

olive oil

tbsp walnut halves

pears

pepper

Combine the water, orange juice, balsamic vinegar, mustard, half the cranberries, and the olive oil in a food processor. Process until smooth.

Place the greens in a mixing bowl. Pour half the dressing over the greens and toss. Arrange pears over greens and sprinkle walnuts and cranberries over pears.

Top with freshly ground pepper. Add remaining dressing if you like, or pass it around. Serve right away.

10-Minute Apple Walnut Salad

walnut halves (raw)

greens

apples

red onion (thinly sliced)

feta cheese

balsamic vinegar

garlic (minced)

oregano

sea salt (plus more to taste)

black pepper (plus more to taste)

olive oil (extra virgin)

Preheat the oven to 350&deg;F and add the walnuts to a baking sheet. Toast them for 5-10 minutes until lightly browned and fragrant. Let them cool while you prepare the rest of the salad.

In a large serving bowl, add the mixed greens followed by the apple slices, onion slices, feta, and dried cranberries. When the walnuts have cooled, add them as well.

In a mason jar or container, add the balsamic vinegar, maple syrup, Dijon, minced garlic, oregano, salt, and pepper. Slowly pour in the olive oil while whisking constantly until emulsified. If you&rsquo;re using a mason jar, shake it vigorously.

Drizzle your apple walnut salad with the balsamic vinaigrette and serve immediately. You can also serve the dressing on an individual basis. Happy eating!
