Watermelon Agua Fresca as seen on Valerie's Home Cooking, Season 9.

Add the sugar and 1/2 cup water to a small saucepan. Stir and bring to a simmer over medium heat until the sugar is melted, then turn off the heat and let cool.

Add the watermelon, lime zest and juice and 3 tablespoons of the cooled simple syrup to a blender. Blend until smooth. Pour into 4 small glasses.

Easy fresh and delicious! I made this for a luncheon I had this summer. I used watermelon that was left over from a Backyard BBQ. I didn’t have fresh limes so used a few drops of lime essential oil Everyone loved it! Thanks for sharing.

Watermelon With Watercress and Feta

(4-ounce) block feta cheese,

watercress or arugula

lemon,

olive oil

salt

black pepper

In a salad bowl, combine the watermelon, feta cheese, watercress, lemon zest, lemon juice, olive oil, salt, and pepper. Gently toss until all the ingredients are combined. Serve immediately.

I made this the first time for a bbq. Everyone loved it. The lemon and watermelon had such a fresh and bright taste. I had problems finding watercress so I used a spinach and arugula combination. I also added some sliced mint leaves.  I received so many requests for the recipe. Thank you!

I actually made this recipe from her cookbook, "Weeknights with Giada," and she took a slightly different spin on the recipe.  All the ingredients here were doubled, and she also said arugula could be substituted for the watercress (which I did).  In addition, she prepared a cup (uncooked) of pearled (Israeli) couscous which was added in ~ 15 minutes after it finished cooking.  It was so yummy with the couscous and added a nice starch component to my meal, but without going overboard.  The flavors were amazing.  I can't wait for the leftovers for dinner tonight!  Thanks, Giada!  You never, ever disappoint.

Love this recipe!  I have made it many times, and took it to a BBQ recently and everyone went nuts over it.  I like Greek feta, it doesn't crumble easily.

I didn't care for the feta but the rest was great!  It is very light and refreshing and easy.  I am the only one that will eat this in my family and it was easy to adapt down to one person.

This was a great summer salad.  I used arugula/spinach mix and sliced an avocado and placed on top of the salad.  And just before serving I sprinkled some chili lime tortilla strips made by Texas Toast on top.  The tortilla strips added a little crunch.  The salad is fast and easy and not a lot of prep.  Enjoy

Was sceptical esp watermelon and feta but boy was it goooood. Used greek sheep feta and cut it smaller than 1/2in cube(it can be salty and I used watercress mixed w/argula.Everything fr lemon zest to greens to watermelon just compliment each other. A def for a hot summery day.The water melon can make the salad very wet, so put it in right before serving.

How refreshing!  My husband thought the watermelon was tomato and when he took a bite he couldn't stop laughing because he was so surprised.  Very light and refreshing salad!  Will make again!

This was fantastic. Was a bit skeptical at first. The watercress tasted a little bitter/strong by itself but with the watermelon, feta, lemon zest/juice, olive oil and pepper, it was outstanding and very refreshing. The ingredients went so well together. Delicious, light and especially good and appreciated on a hot day (90 degrees here today and....it's easy to make. Nice! Will be making this one lots.

Watermelon Feta Salad

Arugula, Watermelon and Feta Salad

orange juice

lemon juice (2 lemons)

shallots (1 large)

honey

baby arugula, washed and spun dry

watermelon,

good feta cheese, 1/2-inch diced

(4 ounces) whole fresh mint leaves, julienned

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.

Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

I made this last night and followed the recipe completely minus the lemon. I cut the lemon in half preferring the cheese flavor.<br />Ina your recipes are so good. My husband is a terribly picky eater preferring meat and potatoes, but this recipe excited me when he liked it! Thank you!

A favorite salad of mine. Love the sweetness of watermelon against the brininess of the feta and peppery arugula. The dressing is light and doesn’t take over the salad.  

The peppery taste of the baby arugula overpowered the flavor of the watermelon.  I would recommend a milder type of lettuce.

Combine all ingredients in a food processor. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups.

So easy and delightful and pretty! For added twist, I made a mint simple syrup! Try it! 

Love this recipe! We used lime instead of lemon and added a little fresh mint for extra zing.. 

I made this recipe into Popsicles, my children love it! 

Thanks to another poster for the suggestion of mint! I used less sugar, mostly lime juice instead of lemon (had to use some lemon because I ran out of lime), and picked some mint (out of all the herbs I've planted, I'm enjoying the mint the most!) to add. I pulsed this all up in my Ninja (out of all the small kitchen appliances I've purchased, I'm enjoying my Ninja the most LOL), and stuck it in the freezer. It came out delicious, and I do think the mint was a great addition.

Great recipe.  A friend of mine makes this almost everytime we're there for dinner and she adds freshly chopped mint leaf to it and it makes a WORLD of difference.  It's the same mint leaf that Persians use in tea ans is often referred to as nanna.  You can always try adding a little afterwards in case you don't like it but trust me just adds that perfect kick of freshness to a very sweet dessert.

THis recipe turned out great. I did not use sugar bc I thought it would make it too sweet. The watermelon was already sweet. One thing I should have done was strain the watermelon puree to remove the white seeds--makes a better presentation.  It was good! 

I've never commented before but I use a few websites for recipes and depend on the comments of people who have tried the recipes---the comments on this one were all over the place. One said it was easy and great, one said it was terrible...one said it was a good drink???!!!!   I am the chef/owner of a small cafe that is two years old but my training is in archaeology...I'm not so confident yet!<br /><br />I followed the recipe but substituted the lemon juice for lime and added 1/2 cup of water---I think lemon would shout over the watermelon.  it was extremely easy, it was delicious, and it froze up perfectly.  I've made much more complicated granita recipes with the identical end result.  I'll use this recipe with other fruits anytime I ever want to make granita again.

Not classic but some different variation of watermelon sorbet recipe without using blender and ice cream maker

Watermelon Sorbet without Blender or Ice Cream Maker

Watermelon chunks (frozen)

Black salt

lime juice

mint leaves

tsp Maple syrup

Orange

cut and freeze watermelon

Cut watermelon into chunks. Place it on a tray and keep it in the freezer for 4-5 hours. (You can also use frozen watermelon chunks.)

Freezing Watermelon

rest for 5 minutes

Take out frozen chunks 5 minutes before making the recipe.

sprinkle salt

Sprinkle a pinch of black rock salt to it.

add lime juice and mint leaves

Add 5-6 drops of lime juice and 2-3 sprigs of mint leaves.

add maple syrup

Drizzle 1/2 tsp of maple syrup. (You can adjust this as per the sweetness of the watermelon.)

crush it

Crush everything well with the help of mortar or blend in a blender or food processor.

Add it in glass

pour juice

Fill half of the glass with orange juice.

Refreshing Watermelon Sorbet without Ice Cream Maker or Blender

Watermelon Mojito

watermelon flesh, pits removed

mint leaves,

white rum

agave syrup

In a blender, puree watermelon, fresh lime juice and mint in batches until smooth. Strain into a pitcher. Mix in rum and syrup. Serve in glasses filled with ice and garnish with mint leaves.

I followed this recipe to a the letter except for the agave syrup. I added simple syrup instead. Very tasty. It was a big hit at my house party!

Delicious!  I followed the recipe exactly-great balance of flavors<br /><br />We were celebrating my daughter's graduation from grad school, I made several pitchers as per this recipe and several pitchers N/A.  These Mojitos were one of the highlights of the party!   Thanks Sunny!

Love this recipe!  My husband does not usually like what he calls "girly" drinks, which is anything with a little sweetness, but even he agreed this is soooooooooo good. I can't wait to make these at our next party!

Can't seem to find just plain old mint leaves!<br />Anybody try this with fresh spearmint instead?<br />I'll just sit here and sip my rum on the rocks until I hear back from<br />somebody or until I pass out. I've tried this three ways- With the rum, without the rum, and blend with ice and no rum. I loved it all ways. My four year old niece made it with me when i blended it with ice and she loved it too. I'll be trying it next time blended with rum! 

Take advantage of the sweet ripe watermelons and make this Watermelon Salsa recipe that is perfect served at your next bbq. Fruit salsas are a refreshing snack on a hot summer day.

Watermelon Salsa

Place all the diced or minced ingredients into a large bowl.

Zest

Zest and juice both limes and add to the bowl.

Sweeten

Refrigerate

Cover and refrigerate at least 2 hours before serving with chips of choice.

Tuna Tataki Salad

rice wine vinegar

ginger

lemongrass,

wasabi powder

water

soy sauce

lemon juice

mirin

1-ounce rice vinegar

white vinegar

yuzu juice

canola oil

fresh ahi tuna, sashimi quality, 4 (3-ounce) portions

togarashi

mesclun greens

pepper

daikon sprouts

jicama

wasabi peas

Lemon Wasabi Dressing

Grilled Watermelon

For the Grilled Watermelon: In a saucepan, add rice wine vinegar, ginger, lemongrass and sugar, and bring to a boil. Turn it off and let it cool down. Marinate watermelon in this syrup for 2 hours. You must rotate the watermelon every half an hour so all sides get equally marinated. In a hot grill sear each slice of watermelon for 2 minutes on both sides. Remove from grill, take the skin off, cut in large dice and set aside.

For the Dressing: In a saute pan on low heat, add 1 tablespoon of oil and slowly caramelize the shallots. In a small bowl dissolve the wasabi powder in the water to create a thick paste. Add all the ingredients except the canola oil into a blender and mix until smooth. With the blender running, add the canola oil in a steady stream to create an emulsion. Store in refrigerator up to 3 days.

Season the tuna portions with togarashi, salt and ground pepper. Sear the tuna in canola oil on all sides and cut each into 5 even slices, set aside. Meanwhile, place the mesclun in a mixing bowl and season with salt and pepper. Add daikon sprouts, jicama, wasabi peas and Lemon Wasabi Dressing, and toss it. Slice 16 thin avocado slices. Distribute the salad in equal amounts on 4 serving plates. Top with each 4 avocado slices, and arrange slices of tuna on top. Garnish the plate with the diced watermelon around the salad.

The tuna (prep and serving style) and the dressing...TERRIFIC!  Have also used the dressing on shrimp.  I encourage people to try this one...the dressing for flavors and then seafood for textures!  Annie , Fremont , CA

Expect guests to do a double take when they see your watermelon with a tap attached -- and to come back for seconds after sampling the spiked punch concealed within.

Watermelon Punch Keg

Cut a thin slice from the bottom of the watermelon rind (but not into the flesh) so the watermelon will sit upright. With a sharp knife, carve out a circle in the top of the watermelon to make a lid, as you would when carving a jack-o'-lantern.

To prepare with an immersion blender: Set the watermelon in the sink (to avoid splashes). Remove the lid and insert an immersion blender into the flesh. Gently push and move the immersion blender down and around in the watermelon to puree the center. As more of the watermelon becomes pureed, move the blender to the sides to puree almost all of the flesh, leaving a thin wall of flesh lining the rind. Pour the pureed juice out of the watermelon; you should have between 6 and 7 cups.

To prepare with a drill: Fasten one beater from an electric hand mixer to the tip of a drill and tighten the chuck. Set the watermelon in the sink (to avoid splashes) and push the beater into the flesh. Gently push and move the beater down and around in the watermelon to puree the center. As more of the watermelon becomes pureed, move the beater to the sides to puree almost all of the flesh, leaving a thin wall of flesh lining the rind. Pour the pureed juice out of the watermelon, and strain, discarding any pulp and seeds; you should have between 6 and 7 cups of strained juice.

Insert a tap in the empty watermelon according to the package directions. Pour the watermelon juice, wine and vodka into the watermelon and top with the lid. Refrigerate until the watermelon and punch inside are well chilled, at least 2 hours.

I used an immersion blender and had no mess to speak of. I did this right on the counter top. I can see how using a beater might be messier, but this went pretty quick and easy with the immersion blender. Oh, and it tasted great.

I've made this before, but I'll have to try it with the orange vodka next time. Using the watermelon like this is WAY too much trouble and makes a big mess, even in your sink. I just cut off one end of the watermelon enough to get your hand in to scrape away the fruit, then blend it with the wine in a food processor. But I use a sweet red wine in a BOX! Remove the bag from the box and pour the wine into another container. Use a flat-blade screwdriver to pry off the bag spout. Refill the bag with your punch and push the spout back into the bag. Cut a hole large enough in the opposite end of the melon to push the spigot through, and place the bag inside the melon. Cut a few bamboo skewers in half sticking them in both edges of the cut off watermelon, pushing the end cap back on.*You can make up several bags of the punch and simply replace it in the melon when it gets empty.

Watermelon and Halloumi

Kosher salt

red wine vinegar

extra-virgin olive oil

almonds,

halloumi cheese,

Place the shallot and garlic in a mixing bowl and add a pinch of salt. Add the vinegar and honey and whisk. Slowly whisk in 1/2 cup olive oil, then add the almonds and mint.

Place the watermelon in a shallow dish. Pour the dressing on top, cover and let marinate 1 hour in the refrigerator.

Heat a large skillet over medium heat and add the remaining 1 tablespoon olive oil. Sear the halloumi 1 minute per side, then remove from the pan; top each with a piece of marinated watermelon.

Very yummy. I poured a good quality balsamic vinegar over the watermelon.

Delicious!!  Couldn't find halloumi so used firm feta instead.  

This is brilliant, flavorful and so easy to fix!

Watermelon Slushy

Simple Syrup, recipe follows

Tequila or bourbon, for serving, optional

mint leaves, for garnish, optional

Lime wedges, for serving, optional

The Kitchen hosts makes a Watermelon Slushy Bar, as seen on The Kitchen, Season 17.

Put the watermelon cubes on a baking sheet lined with parchment. Freeze until frozen.

Add the frozen watermelon to a food processor. Add the Simple Syrup and 1/2 cup water and blend. Scrape down the sides and continue to blend until smooth.

Serve as is, or add tequila or bourbon and garnish with fresh mint leaves if desired. Or wet the rim of the glasses with the lime wedges and dip in salt if desired. Or add a squeeze of lime juice.

Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.

Made these for a BBQ party and it was a real hit with both the kids and adults! I crushed some mint leaves and sliced up wedges of lime, giving our guests the option of adding what they wanted to their slushy. Even without the addition of mint and lime, the slushy is refreshing and delicious.  I made an extra batch and added Tito’s Vodka instead of the tequila used on the show. I highly recommend trying it with vodka. Some tips:<div><br /><div>*Make sure the watermelon is cubed before you freeze it. I made the mistake of freezing larger chunks and it made blending a much more difficult process, even with a Vitamix. Smaller cubes make for a better slush consistency in a shorter amount of time </div><div><br /></div><div>*Start with 1/2 cup of the simple syrup instead of the 3/4 recommended. I found using 3/4 to be much too sweet and had to add more watermelon and water to lessen the sweetness</div></div>

It’s important to freeze the watermelon in individual cubes.  It makes it easier to blend.<br />Our kids added some lime juice to it and makes it super refreshing.  <br />Very easy and delicious recipe to make with your kids. <br />Love it!!

Looking for a way to enjoy sweet watermelon flavor with everything this summer? This no-heat needed Watermelon Syrup is easy to make and lets you add watermelon flavor to drinks, ice cream, oatmeal, yogurt, and so much more!

Watermelon Syrup

Place cubed watermelon in a blender and process until completely liquified.

Place a fine mesh sieve over a bowl and pour the watermelon juice through it. Let juice strain through and leave pulp behind. You should have about 1 cup of juice.

Pour juice into a mason jar and add sugar. If your watermelon is sweet, you&#39;ll only need 1/2 cup sugar. If it&#39;s not a sweet watermelon, use more. Close jar tightly and shake vigorously  for about 2 minutes. Let rest and then repeat for another 2 minutes.

Put watermelon syrup in fridge to chill for at least 20 minutes before using. You&#39;ll need to shake jar again before using as ingredients will settle.

Watermelon Cooler

Spread out the watermelon chunks on a cookie sheet and freeze it. Place the watermelon, sherbet and lemon juice in a blender and blend until smooth.
