Step 1
Melt butter in small stock pot or large saucepan. Sautee onions in melted butter until translucent.
Step 2
Sprinkle flour in and stir. Let cook over medium heat for 2 minutes.
Step 3
Gradually whisk in the half & half, a little at a time. Allow to thicken slightly before adding more. Whisk constantly.
Step 4
Stir in chicken broth.
Step 5
Add broccoli and carrots. Cook over low heat for 25 minutes, stirring regularly.
Step 6
Add salt and pepper.
Step 7
Remove 1 cup of mixture from pot and blend (with standard or immersion blender). Then return to pot.
Step 8
Add cheese and cook for 5 more minutes, stirring frequently.
Step 9
Stir in nutmeg.
Step 10
Serve.
