Step 1
Preheat oven to 200°C. Line a baking tray with baking paper. Place potatoes on the lined tray. Spray with olive oil spray. Season. Roast, turning occasionally, for 30 mins or until tender.

Meanwhile, melt the butter in a saucepan over medium heat. Add flour. Cook, stirring, for 1 min or until the mixture is grainy. Remove from heat. Add the milk and use a balloon whisk to whisk until well combined. Return to the heat. Cook, stirring, for 5 mins or until the sauce boils and thickens. Remove from heat. Add half the cheddar and stir to combine. Add mustard, paprika and chives. Stir to combine. Season.
Step 3
Use a small sharp knife to cut a small cross in the top of each potato. Cover with a clean tea towel and press down gently on each potato to open slightly. Spoon the sauce into the cuts. Sprinkle with remaining cheddar. Bake for 5-10 mins or until golden brown.
