Step 1

Preheat the oven to 350 degrees F.

Step 2

Coat a 15x10-inch baking dish with nonstick cooking spray.

Step 3

Spread 1/4 cup of the pesto evenly over the chicken halves.

Step 4

Coarsely chop 1/2 of the sliced mushrooms and set them aside. Scatter the remaining sliced mushrooms into the bottom of the prepared baking dish.

Step 5

Top each of the chicken halves with 1/4 of the reserved chopped mushrooms and 1 of the cheese slice halves.

Step 6

Roll up each of the chicken halves, starting with the short side, and secure them with toothpicks.

Step 7

Place the rolled chicken halves seam-side down on top of the sliced mushrooms in the baking dish.

Step 8

Cover the baking dish with foil and bake the chicken halves until they reach an internal temperature of 165 degrees F, about 25-30 minutes.

Step 9

Switch the oven to the broil setting.

Step 10

Discard the foil and top the chicken halves evenly with the remaining pesto and the remaining cheese slice halves.

Step 11

Broil the chicken halves until the cheese has melted and is golden-brown, about 3-5 minutes.

Step 12

Remove and discard the toothpicks.

Step 13

Serve.
