Our take on Crock Pot Funeral Potatoes couldn&rsquo;t be easier&mdash;you simply make it and walk away for a few hours. It&rsquo;s a classic, rib-sticking, cheesy sour cream potato dish that sure to please, or at least satisfy, a crowd. If you&rsquo;re feeling adventurous, you could any condensed &ldquo;Cream Of&rdquo; soup, as well as any 12-ounce combination of melting cheeses. We used Ore Ida potatoes and Campbell&rsquo;s soup, but you can adjust to incorporate your preferred brands. These potatoes make a great side for a heartier meat dish, like roast beef or ham. Wash them down with iced tea.

Crockpot Funeral Potatoes

(32-oz.) pkg. frozen, diced hash brown potatoes

pre-shredded Cheddar cheese (about 1 cup)

pre-shredded low-moisture part-skim mozzarella (about 1 cup)

pre-shredded Monterey Jack cheese (about 1 cup)

sour cream

chicken broth

condensed cream of mushroom soup

salt

potato chips

Stir together potatoes, cheeses, sour cream, broth, soup, and salt in a 6-quart slow cooker. Cover and cook on LOW 3 1/2 hours Uncover and stir well. Cover and cook until thoroughly heated, about 30 minutes. Top with potato chips, and serve immediately.


Made this recipe many times!  I substituted crushed Ritz crackers instead of potato chips.  Outstanding the occasion is happy because they are served any time not at a funeral!

outstanding!  Did not put chips on at the end to cut down on sodium.

This is a quick and easy recipe ... and delicious!  I used the shredded hash brown potatoes instead of the diced ones because it was what I had.  We loved 'em. I'd make them this way again!
