For the ham mixture:

Put ham pieces into the food processor and process until the ham resembles ground meat size and looks like bacon bits in texture. Put in large mixing bowl.

Do the same thing with the two cheeses, cheeses can be processed together, depending on the size of your food processer. Work in batches if necessary.

Place the shredded cheeses into the bowl with ham and add all remaining ingredients into the bowl. Mix until fully incorporated and creamy. I like using my hands (with a glove) to work it together. A spoon will work too.

Depending on your ham, salt isn't always necessary. Add salt to taste once final mixture is complete.
Step 6
Refrigerate until ready to use. This can be made up to two days in advance and kept cold.

For the sandwiches:

Preheat oven to 350 F.

Spread a layer of butter on one side of each piece of bread.
Step 10
Add ham mixture, 1/2-inch-thick or so to one piece of bread on the unbuttered side, covering the entire piece of bread.

Top with other piece of bread, butter side out.
Step 12
Place in a cold pan and put over medium heat, and cook until golden brown, flip.

At this point pop it in the oven to allow the cheese to fully melt. Bake until cheese is melted, about 5 to 6 minutes or until done.
Step 14
Serve with a side of bread and butter pickles.
