Step 1
Heat oven to 350 degrees F.
Step 2
Grease a 9 x 13-inch baking pan.
Step 3
Add crushed pineapple, mandarin oranges and maraschino cherries to the baking pan.
Step 4
Prepare cake according to package directions.
Step 5
Add the ½ cup of the reserved pineapple juice in lieu of some of the water in the cake mix.
Step 6
Add the rum extract to the cake mix.
Step 7
Pour the cake mix over the fruit.
Step 8
Pour melted butter next.
Step 9
Sprinkle the coconut and pecans over all.
Step 10
Bake for 1 hour or until cake is done and golden on top.
