Prep the surface: Spread oil generously on the griddle. Don’t skimp—this keeps fries from sticking and promotes crispiness.

Arrange the fries: Grab them by the handful and scatter them in a single layer. Avoid dumping the entire bag at once, which can lead to uneven heating and potential damage to your griddle.

Cover if possible: If you have a lid or dome, go ahead and use it. Otherwise, no problem—just stick to the same process.
Step 5
Let them brown: Keep your spatula away until you see a solid golden crust on the bottom. Flip only when they’re browned to your liking, then repeat on the other sides until you reach the desired level of crisp.
Step 6
Season and serve: Once they’re all done, sprinkle with seasoning salt. You can add other spices too, like paprika or garlic powder, if you want extra flavor. Then plate up and dig in.
