Preheat the oven to 400 degrees F.

Lightly grease a 1-quart baking dish.

In a medium bowl, add the garlic, the salt, the pepper, the red pepper flakes, and the heavy cream and whisk to combine.

In a large bowl, add the mild cheddar, the extra sharp cheddar, the Gruyère, and the parmesan and stir to combine.
Step 5
Add two layers of the potato slices to the prepared baking dish and top with 1/2 of the cheese mixture.
Step 6
Repeat the layers until all the potatoes and all the cheese mixture have been used.

Pour the heavy cream mixture over the potato mixture.
Step 8
Bake the cheesy potatoes until the potatoes are fork tender and the top is golden, about 50 minutes-1 hour.
Step 9
Serve.
