Grilled Greek Fish

lemon juice

olive oil

In a shallow dish, combine the first seven ingredients. Add the tilapia, turn to coat; cover. Refrigerate for 30 minutes. Drain and discard marinade.

Place tilapia on greased grill rack. Cook, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until fish flakes easily with a fork.

I really likes this recipe, although the husband thought it had too much lemon juice.

I forgot to get the fish marinating in time for dinner so I was only able to marinate it for about 15 mins.  It was all right, but not much flavor.  I will make it again and marinate it longer to see if it has a better flavor.  I also cooked it in a pan for about 2 mins per side.

I really enjoyed this easy, quick and delicious recipe. One of those uncomplicated dinners perfect for busy weekdays. I think the lemon added an extra zing. So good especially served with a quinoa salad!

This recipe was a great jumping off point for a deliciously light spring dinner! I used the zest and juice of a lime, dried oregano, and dried mint, as those were what I had on hand. While the fish came up to temperature in its marinade, I got the coals started in the grill, then pulled together a cucumber salad: a diced English cucumber, a jar of marinated artichoke hearts, some oil cured olives, oregano, mint, parsley, and a splash of olive oil and bottled lemon juice. Arrange the coals to have a direct- and indirect-heat side to the grill, and heat the grill grate(s), then brush them clean and oil them. Gently transfer the filets to the grate, directly over the heat until they start to shrink and loosen from the grate, then flip. Once the second side also loosens, move the fish to the indirect heat area to finish cooking. Meanwhile, grill halved pita rounds over the direct-heat side, just until warm and flexible. Transfer fish and pita to a serving platter. Break fish into chunks, and serve fish and salad in pita pockets.
