The “flamenquin” is one of the most emblematic recipes from Andalucia. Even though it has its origin in Cordoba, it is well known in several regions of Andalucia and all over Spain. There is no bar in Córdoba that does not offer this dish in the menu. The dish was named after the golden color it gets after frying and long shape, which is similar to the legs of the flamingos, a bird that lives in the Guadalquivir River. This dish is offered in different butcher´s shops we recommend to prepare your own at home. Another typical recipe from Córdoba is the famous salmorejo.
Flamenquin is usually based on serrano ham slices covered by pork filet, which are then battered and fried in abundant olive oil. You can accompany then with salads, paprika, fries, etc. This is a really simple dish that you can make at home in few minutes. The secret is to achieve the best results and flavors is to buy high quality ingredients, a good ham slice can set the difference between a decent and an outrageous dish.
There are endless variations of this dish, you can add cheese, change the serrano ham for York ham or turkey and even innovate adding Roquefort cheese or changing the pork filet for chicken or beef.
You can also modify the external batter. Instead if grated bread you can batter with milled oats, dried fruits, tempura, etc. Anyway this is a really easy, versatile and cheap recipe that allows any type of accompaniments to be enjoyed (salad, gazpacho, potatoes purée…) and will improve any type of non-planned dinner.
