Jammy Egg Toasts star the perfect kind of egg—not too runny, not too firm, but somewhere in-between. Spoon shallot vinaigrette on top for a little fancy flavor.

Jammy Egg Toasts

tbsp. white wine vinegar

shallot,

thyme, plus

Kosher salt and pepper

eggs

olive oil

whole-grain mustard

parsley, plus

Mayonnaise,

In small bowl, combine vinegar, shallot, thyme and 1/4 teaspoon each salt and pepper. Let sit, tossing occasionally, 10 minutes.

Meanwhile, heat medium saucepan of water to a boil and fill medium bowl with ice water. Reduce heat so water is at rapid simmer, gently add eggs and simmer 6 minutes. Immediately transfer eggs to ice water to stop cooking. Drain and peel eggs.

Stir oil, mustard and parsley into shallot mixture. Spread bread with mayo, then coarsely chop eggs and arrange on top of bread. Spoon shallot vinaigrette over top and sprinkle with more thyme, parsley and cracked pepper if desired.

I made this for a light/late dinner with farm fresh eggs after a huge holiday staff luncheon.  Our bread was too dried out, so I used English Muffins.  This made the jammy eggs a little crowded, but it was still, so, so good!  The shallot vinaigrette really cuts the richness of the yolk, but still allows the flavor to come though.

I steamed the eggs in ½ inch of boiling water (per Cooks Illustrated), but with fresh eggs, it’s hard to judge the timing as the size and shell thickness varies.  Therefore, one variety of egg was more runny (but still mostly jammy).
