Step 1
Pat dry pork chops with paper towels.
Step 2
Brush pork chops with olive oil; set aside.
Step 3
In a small mixing bowl, stir together brown sugar, salt, pepper, paprika, garlic powder and onion powder.
Step 4
Rub the dry mix all over the pork chops. Transfer pork chops to a resealable bag or mixing bowl; cover and refrigerate for 2 hours, and up to 24 hours.
Step 5
Preheat an outdoor grill to 400˚F - about medium to medium-high. Rub your grill grates with oil.
Step 6
Remove pork chops from bag. Spray with cooking spray or add a drizzle of olive oil.
Step 7
Transfer pork chops to grill; grill, covered, for 7 to 10 minutes per side, or until internal temperature reaches 145˚F. Do not overcook. Please use an instant read thermometer to check for doneness. Thicker pork chops will need longer to cook.
Step 8
Remove from grill; let stand 5 minutes.
Step 9
Serve.
