Step 1
Line a large baking sheet with parchment paper and lay half of the ritz crackers out in a single layer.
Step 2
Spread about 1 to 1 1/2 tablespoons of peanut butter on each cracker. Make sure to keep it off of the edges. Top with remaining crackers, pressing down gently to keep tops on.
Step 3
Place in the refrigerator while you melt the almond bark. This will help the "cookies" stay together better when dipping.
Step 4
In a tall (preferably glass) microwave safe container melts the almond bark by following the instructions on the package.
Step 5
Using a fork, fully dip each "cookie" in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
Step 6
Take the remaining almond bark, separate and color green and red. Place in a piping bag and cut a tiny hole. Pipe the tree on fully set cookies and decorate with sprinkles. Use the red to make bows or just a drizzle.
Step 7
Rest 10 minutes on the counter or 6 minutes in the refrigerator. Enjoy!
