Step 1

Bring a large pot of water to a boil over high heat and season to taste with salt.

Step 2

In a large (12-inch) nonstick skillet over medium-high heat, heat the oil until shimmering. Add the garlic and ginger, and stir-fry until aromatic, about 1 minute. Add the pork and, using a spatula to break it up, cook, stirring occasionally, until the meat loses its raw look, about 5 minutes.

Step 3

While the pork is cooking, in a liquid measuring cup, whisk together the soy sauce, vinegar, cornstarch and sugar until well combined. Stir into the pork and cook for 1 minute, then add the scallions and serrano. Reduce the heat to medium-low and cook, until the sauce thickens slightly, 1 to 2 minutes.

Step 4

Drop the wonton pieces into the boiling water, separating them as needed as you work, and cook until tender, 1 to 2 minutes. When the wonton strips are done, they will float to the surface. Use a Chinese skimmer, spider or wide slotted spoon to transfer them to the skillet with the pork mixture, shaking and draining them first. Toss gently to combine.

Step 5

Divide among wide, shallow bowls and serve hot, with the lime wedges for squeezing over.
