Step 1
Crack two eggs, after beating, toss in salt and black pepper, mix well and set aside.
Step 2
Heat 1 tablespoon of oil in a pan over medium-low heat, pan fry the potato for about 10 minutes until crisp and cooked through and remove from the pan.
Step 3
Add in another tablespoon of oil into the pan, and stir in the onion, stir fry for 8-10 minutes until browned and soft, set aside.
Step 4
Carefully lay the potato slices back onto the pan and sprinkle the cooked onion on top of the potato, keep the heat at medium-low, gently pour the egg mixture around the pan, wait for 3-4 minutes until the egg has became firm.
Step 5
Carefully flip the pancake (I used a big flat plate to help turn the pancake without breaking it) and cook for another 2-3 minutes.
Step 6
Dip with ketchup to serve.
