Step 1
First let's wash and soak masoori rice or raw rice, idli rice, urad dal, fenugreek seeds together and sago separately. We need to soak this for a minimum of 3 hours.
Step 2
Grind all the ingredients together into a fine paste. Add salt and mix it well.
Step 3
You can ferment the batter naturally to make this appe or use the instant pot to ferment the rice appe or kuzhi paniyaram batter.
Step 4
Once the appe batter is fermented we need to do seasoning to make the appe paniyaram even tastier.
Step 5
Take a pan and add around 1 tbsp of oil and add the mustard seeds to crackle. Add the urad dal, curry leaves, green chili, onion, coriander leaves and saute until the raw smell of onion goes off.
Step 6
Add the seasoning into the fermented appe batter. Make sure the batter is of dosa consistency.
Step 7
If the batter becomes too watery add little rice flour.
Step 8
Heat the appe pan with few drops of oil in each mold. Once the pan turns hot add the batter to three fourth of the mold.
Step 9
Cover and cook with the lid for a few minutes.Once the batter is cooked on one side turn the batter with the appe stick to the other side. Wait for few minutes for both sides to be cooked.
Step 10
Serve the paniyaram with onion tomato chutney.

We will use yogurt mode to ferment the appe batter sooner.
Step 12
Turn on the instant pot and add around 1 cup of water to the inner pot
Step 13
Place the appe batter bowl to the inner pot and close the lid
Step 14
Turn on the instant pot yogurt mode and set it to 8 hours

After 6-8 hours, your batter will be fermented and ready to make appe
