Step 1
Start by creating noodles out of your veggies.
Step 2
Bring the water for your pasta to a boil and add the pasta. Cook until it is al dente. Drain.
Step 3
At the same time, cook your veggies for your pasta. I like to do this by placing an inch of water in the bottom of a pan and adding in the vegetable noodles. Place the lid on the saucepan and steam for a few minutes until the noodles are softened but not soggy. With zucchini, I cook them just until they've reached a nice shade of bright green (about 3 minutes). Remove them from the stove and drain.
Step 4
Heat up your jar of pasta sauce on the stovetop. You can use store-bought if you have some or use home-canned for the best flavor.
Step 5
Toss your veggies noodles with your regular noodles. Mix the noodle mixture with the pasta sauce. Serve warm and enjoy!
