Preheat the oven to 375°F.

Separate the egg whites and yolks into two separate bowls, placing the egg whites in the larger bowl.

Add the cream of tartar into the egg whites and whisk until sturdy peaks form when you remove the mixer from the bowl.*

Mix in the almond flour, salt, baking powder (and stevia, if using) until just combined.

Using a soft mixing spatula, gently fold the egg whites into the almond flour mixture in three to four separate batches, being careful not to over mix.**

Pour the mixture into the buttered bread pan, and bake on the middle rack for 30-35 minutes, until the top has browned and the mixture is set in the middle.
Step 9
Let cool and slice into individual bread slices for your use.
