Step 1

Spray a 9x13" baking pan with non-stick cooking spray. Cut cinnamon rolls into approximately 1-inch pieces: while still in the foil pan, run a knife through the rolls, making slices about 1/2-inch apart; rotate pan and repeat making slices perpendicular to the first slices. Place cinnamon roll pieces in the prepared baking pan, breaking up any large pieces with your fingers.

Step 2

Warm the icing packets that come in the cinnamon roll packages in the microwave for about 8 to 10 seconds. Drizzle/drip icing over the top of the cut cinnamon roll pieces.

Step 3

Combine beaten eggs, half-and-half, milk, maple syrup, vanilla, 1 teaspoon cinnamon, nutmeg, and salt; whisk until well combined. Pour evenly over cinnamon roll pieces.

Step 4

Combine chopped pecans, brown sugar, 1/2 teaspoon cinnamon, and butter in a small bowl. Cut with a pastry cutter, two knives, or your fingers until mixture resembles coarse crumbs. Sprinkle evenly over the top of the cinnamon rolls.

Step 5

Cover and refrigerate overnight {or at least 4 hours}.

Step 6

Bake, uncovered, at 350 degrees for 50-60 minutes until golden brown and set in the center. Serve with maple syrup to drizzle over the top.
